Insalate Caprese

Bibb Salad With Basil Green Goddess Dressing

Green goddess dressing was invented in the 1920's at San Francisco's Palace Hotel as a tribute to William Archer's hit play, The Green Goddess. It gets it's bright green color from lots of fresh green herbs. This dressing was originally made with tarragon, but has been updated with basil, which actually has more flavor! Delicious on green salad, but also great served with vegetables like asparagus and broccoli. Adapted from the Barefoot Contessa at Home cookbook. -- posted by Sharon123

I wanted something simple and fresh for dinner and I threw this together with what I had on hand. If you don't have pre-cooked chicken on hand just throw a couple of breasts in a baking and sprinkle with Rotisserie Seasoning.
Veggie Sandwiches A.k.a. Veggimiches

I used to make these all the time in southern Cali for my BF. Now that I've relocated to the far North, certain fresh ingredients are harder to come by, so I haven't been able to make this sandwich in ages. I'm not sure where the "m" stems from in "veggiemich," that's just what we ended up calling it. :) The reason for mixing the mustard and dressing prior to spreading on the bread is to avoid uneven spreading while keeping the calorie count down. Everything can of course be omitted or replaced to your taste; you can even make it Atkins-friendly by making a lettuce pocket and omitting the bread, hehe! We loved using a lot of pepper for a nice kick. You can make it a more filling meal with other additions, too! ^_^ -- posted by FuzzyKiwi

Red, White, and Blue (Berry) Green Salad

This recipe is more about assembly than actual cooking. (I mostly wanted to post my pics, which are pretty!) I had store-bought Romaine and Aerogarden -grown mixed greens, as well as strawberries and blueberries, needing to be eaten, so I made this salad (a variation of the usual strawberry-feta salads). I also put Recipe#49956 on it, but any bottled raspberry vinegrette will work. Also, it would be good with sliced chicken, avocado, onion, etc on top, or made with spinach. Feel free to enjoy it on the 4th, or any day! -- posted by Belinda in Austin, TX

Spring Greens With Herb and Lemon Goat Cheese Crostini

Another great recipe from Martha Holmberg printed in The Oregonian. Without the salad, the crostini make a lovely appetizer to serve with a glass of sauvignon blanc.
Chilled Summer Lettuce, Lovage and Garden Pea Soup

A delightful and refreshing chilled soup for summer - this savoury soup takes its flavour from freshly chopped lovage leaves, which impart a savoury, lemony and celery-like taste. I like to serve this pale green soup in clear glass bowls for maximum impact, with a few chopped leaves sprinkled on top and a swirl of cream. This soup makes an elegant starter for any summer event or a light luncheon dish. Do not be tempted to add more lovage then is suggested, it is a very strong flavoured herb and can be overpowering if used with a heavy hand! -- posted by French Tart

Mixed Herb Salad With Borage : La Salade De Plusieurs Herbes

A delightful old French salad recipe, which uses fresh aromatic herbs with fresh lettuce leaves and a simple dressing. Serve this with poached salmon or cold chicken for an elegant dinner party dish. Adapted from a 16th century French translation of a book originally written in Latin in 1474. NB: Borage is an excellent culinary herb and can be used in a variety of ways. Borage is far better used fresh, as the flavour and colour deteriorate when dried and some essential oils lost. Traditional recipes recommend borage leaves and seeds, together with fennel in salads for increasing the milk supply in nursing mothers. The leaves and flowers are still added for flavour and garnish to wine cups, Pimms and gin-based summer cocktails and the flowers are still candied for confectionary as cake and ice cream decorations. -- posted by French Tart

Korean Beef Salad

I got this from a Sunset magazine about 15 years ago and having lost it and found it several times, I'm finally putting it in here for sanity's sake! The recipe calls for sliced deli roast beef, but I've used leftover steak or roast and it's great. The veggies can be played with too--cucumbers, sliced bell peppers, halved cherry tomatoes, bean sprouts have all worked well. It's very refreshing and no cooking! Prep time doesn't include the marinating time. (I've marinated it for about an hour, and that's still enough time) -- posted by DeeCooks

This is a classic salad which was inspired by some posts this week which reminded me of mine. But this is my favorite way, still classic flavors but a bit different, with a warm blue cheese or gorgonzola sauce as well as diced marinated vegetables and roasted tomatoes make this a great salad - upgraded. -- posted by SarasotaCook

Sarasota's Light Version of Pasta Caesar Salad With Chicken

This originally came from a cookbook which I sold. I think Cooking Light or Prevention Magazine, but I just copied the recipe on a index card so this is all I have. Besides I think I changed a few things along the way.
Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. I love the extra flavor of the breaded chicken to the salad. -- posted by SarasotaCook

Toasted goat's cheese on toast that has been spread with garlic paste.......and then served on mixed salad leaves - brilliant! I am hooked on Nigel Slater's new programme, "Simple Suppers", where he prepares and cooks food just the way I like it...........fresh, seasonal, unpretentious, flexible and hearty. This is one of Nigel's "Inspirational" recipes that was shown on his first programme. In the absence of ciabatta bread, I would be inclined to use any rustic bread........with lots of body!
Spanish Green Salad With Roasted Red Peppers and Preserved Lemon

I was attending a dinner party where the theme was Spanish food, and I was responsible for bringing a salad. The funny thing about Spain is that their salads are either super plain (e.g. a couple of tomatoes and some greens) OR contain meat, in the form of fish or cured ham of some kind. I looked at several different recipes and made up this one. -- posted by bmann

My Favorite Steak Salad (With French Fries!!!)

Sometimes, I just don't want to separately make a meat, a vegetable and a starch. This is an awesome all in one salad that my family and I enjoy often. The salad and the french fries in the salad are inspired by a restaurant called "The Decade" in Pittsburgh, which is sadly no longer in existence.
Seafood Cobb Salad With a Florida Twist

This is classic Cobb salad flavors, but a definite twist. Smokey turkey bacon, mango, seafood (crab, lobster and or shrimp) and a fresh citrus vinaigrette, but just as good. Now for expense reasons, I love shrimp and crab, but by all means, use lobster for the ultimate if you want. I try to use some good crab (canned is fine) as well as some great shrimp from your local grocer. You can even use some grilled salmon which is just as fine for this.

I love this elegant salad. You can vary the greens if you want some fresh spring greens, arugula or even watercress, but I happen to like romaine for my salad. Also I like to use the classic flavors of egg, bacon, tomatoes, but I love to add some onions to the salad base and then the fruit gives it a nice twist with the seafood and the citrus vinaigrette is a nice change. I still top with gorgonzola for the bleu cheese lovers for some of that basic flavor and then top with with fine chopped walnuts for some crunch. But have fun, use your favorites... nothing wrong with changing it up a bit.

Yes lots of ingredients, but nothing hard, just some chopping involved, but it makes a great hearty salad. Fun for entertaining. Serve a nice bowl of fresh soup to start and then some homemade bread with the salad ... that is a very hearty dinner and a nice change from heavy pastas, sauces and casseroles. But I'm a big salad person, so I love it and it is always a crowd pleaser. This makes 4-6 nice full size salads or 8 smaller salads for an starter. -- posted by SarasotaCook

El Torito Restaurant's Caesar salad has been a popular favorite for decades; I obtained the recipe in 1994 when it was published in the Los Angeles Times and have made it many times since. The recipe contains some Mexican ingredients such as pepitas, which are roasted pumpkin seeds, avilable at Trader Joes, as well as at Mexican markets. The cotija cheese ia a Mexican grating cheese.
Grilled Fig & Arugula Salad With Gorgonzola Toasts

From Cooking Light's special on Monticello-inspired recipes. This looks like it's too fancy and complicated for me to make, but looks delicious if someone else would make it for me! ;) Or if you have an actual grill; I live in the ghetto and could put a holey trash can lid over the stove. I don't know what "peasant bread" is but I assume it'd be a small baguette type of bread. I'm not a fan of balsamic vinegar, I'd probably use red wine vinegar or a different kind of dressing, but posting as is for those who like it. BTW, you'll need at least 6 grilling skewers for this. Probably strong 8" metal ones that could pierce figs. I wonder if I could make this work with a portable George Foreman grill! -- posted by the80srule

Holubsti--Ukranian Cabbage Rolls

I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints. While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked. This recipe comes from me combining elements of two or three different recipes that I found. The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well. If I want to do a homemade sauce, I usually do it a day or so in advance.,

By omitting the meat, this can be a vegetarian dish. By also omitting the sour cream and using margarine instead of butter, it can be vegan. -- posted by CorianneW

Mexican Salad in a Tortilla (Ww 6 Pts)

This is a delicious recipe from Weight Watchers New Complete Cookbook.
The crunchy tortilla cups soak up the yummy dressing and become a treat on their own.
To make the tortilla cups use my Recipe #381215
The Weight Watchers cookbook calculates the calories to be 307. Zaars calculation is lower which would make the points value lower as well. I think the cooking spray might be counted in the calorie count by WW. -- posted by Dreamer in Ontario

Karen's Caesar Salad

This is the result of many years of trial and error...as well as the generous base recipe donated by a girlfriend about 27 years ago when we went on a girls' weekend to Mendocino and tried to out-cook each other. Her salad was a huge hit and eventually evolved to this recipe, which has been a family favorite ever since. The croutons are boxed/purchased but made special by sauteeing them in butter just before adding them to the salad. The dressing is mixed up in a blender in a matter of just a few minutes. Enjoy! -- posted by Epi Curious

My mom always made this salad for BUNCO nights and I've been searching for the recipe for a long time. Mom is no longer around and her recipes are unavailable. I finally found it in a cookbook I have here at home. This is my all time favorite salad and dressing combo and I think this recipe I found finally got it right. Keep the salad, dressing, and bread separate until ready to serve or it gets all mushy.
