Dan Dan Noodles With Pickled Mustard Greens

These aromatic dan dan noodles in a spicy soy-based sauce are wildly popular at South Beauty. A small bowl of them will customarily arrive at the end of a meal—especially in the summer when, paradoxically, eating chile-laden foods is thought to help you feel cooler. Choose noodles that have a firm, chewy texture. This wonderful recipe is from Susanna Foo. -- posted by NcMysteryShopper

Japanese-Style Marinated Mushroom Salad

A Japanese-style salad which can be served as a side dish with any grilled or BBQd meat dish. I found this recipe in the October 2005 issue of the Australian magazine 'Super Food Ideas', and I have posted it for the 2005 Zaar World Tour.
Crunchy Stir Fried Sesame Greens

This is a nice accompaniment to steamed rice & fish & a good way to use any greens in your fridge.

I used tamari in this recipe instead of regular soy sauce, which is good if you are not eating wheat.

You can also use canola oil if you do not like using peanut oil.

Baby Bok Choy Saute

If you can buy baby bok choy, please do give a try. We much prefer the flavor of baby bok choy to standard boy choy which to our palates at least is quite bitter and too strong tasting. Omit the Thai pepper and replace with milder chile or freshly ground black pepper for less spicy version.
Bok Choy Salad

This recipe has won more praise than any other dish. I think it is because it is so different than the standard salad fair. It is definitely the sugar/candy ramen noodles and the dressing that makes this dish very unique.
Filipino Beef Stew (Sinigang Na Carne)

Sinigang is a famous Filipino dish, typically sour, that can be made with chicken, beef, pork, shrimp or fish. Usually prepared with tamarind or less commonly with guava or mango. This one is a mix of beef & pork and gets it's sourness from lemon juice, making it quite different from most other sinigang recipes I've seen. -- posted by littleturtle

Kung Pao Tofu Rice Salad

This is a surprisingly satisfying vegetarian salad. I got the recipe from Leanne Ely's "Saving Dinner" e-mail service. I have since stopped using the service, but this recipe remains a family favourite. We are meat-eaters but enjoy this anyway! Cooking time is time to cook rice. If you plan ahead and use your rice cooker, this is a very quick meal to throw together! I *think* this is vegan but it might depend on the brands of soy and hoisin sauces you use. -- posted by Gingernut

Chicory-Endive Roquefort and Walnut Salad

We often eat this simple salad for lunch, only accompanied by crusty French baguette and a glass of wine! Feel free to substitute the Roquefort for a blue cheese that is readily available where you live; it is also superb with Stilton & Shropshire Blue cheese. I have served this as a dinner party starter & also in place of a "just" cheese course as well! If you cannot obtain walnut oil, any other nut oil will be fine, or a good olive oil.
Weight Watchers Stir Fried Chinese Vegetables

This homemade version of the Chinese restaurant classic, Buddha's Delight, is a nutrient powerhouse. Serve it over brown rice (3/4 cup cooked brown rice = 3 points) and you'll boost the fiber content. If you're really hungry, have 2 servings (only 1 point per serving) over brown rice = 5 total points and soooooo good! I've had this 3 times this week! Mix things up, if you like a little heat, sprinkle some red pepper flakes in the sauce before cooking; add chopped onion if you like, etc. I omitted the ginger, only because of personal preference. -- posted by xpnsve

Zippy Stir-Fried Baby Bok Choy

Easy to make, this side dish adds a colorful green vegetable to a meal and is a bit spicy and tangy. My DH loves it. If you choose to substitute fresh garlic and/or gingerroot, cook them in the hot oil before adding the cabbage. This side dish goes well with most Asian-spiced meats and poulty. Fried garlic (in jars) can be found at most Asian grocers, and imparts a bit of a roasted flavor to this dish. -- posted by artistclogger

Thai Steak and Pasta With Peanut--Pepper Dressing

I decided to enter into the dark, scary unknown! Thai food! I have seen pictures, smelled the aroma, read, or tried to read some of the recipes. Didn't work! It's still scary unknown.I bought the ingredients, prepared them, rolled up my sleeves, and went to it! Then a funny thing happened, YES! it was delicious! Now, I wondered why didn't try this before? Now, I'm going to get my feet wet in another scary unknown! Enjoy! You might want to add the red pepper flakes slowly, and taste before you add more. The pepper flakes will even be hotter the next day, so be careful. If you have trouble finding the lemongrass, ask your produce man to stock it. Asian markets will have it also. There are lot of steps here, but so well worth it. Times don't include time for marinating. -- posted by FLUFFSTER

This is from the Feb 2007 issue of Vegetarian times. They say "Tatsoi cabbage has small, heart-shaped, green leaves that are beautiful in salads. Mizuna, another Japanese green called for in this main-dish salad, has feathery leaves and a peppery flavor. Both are worth seeking out, but if you don’t come across them, simply substitute napa cabbage and watercress." -- posted by dicentra

Chicken and Bok Choy Soup

I make this with Shanghai Bok Choy, a smaller Bok Choy than the regular one with light green ribs rather than the white ribs. If you have Bok Choy in a Chinese restaurant, they tend to slice it lengthways and cook the whole thing at once. I decided to cook the ribs and leaves separately and accidentally came up with this recipe because I was distracted after adding the ribs. I found that by overcooking the ribs slightly, they take on an almost buttery flavour, a nice contrast to the freshness of the leaves.
I make this with Easy Prep Vegetable Stock (Recipe #247153).
One serving of this soup contains quite a lot of protein and is suitable for South Beach or Sure Slim weight loss programmes. -- posted by RonaNZ

Spicy Beef With Shrimp and Bok Choy

In my search for recipes using bok choy, I ran across this recipe on Yahoo.com I am trying to introduce my family to new ingedients and they have never eaten bok choy. This sounds like a delish recipe and preparation should be simple. Cook and prep times noted are estimates as I have not yet prepared this stir fry. This would be good served over rice noodles or brown basmati rice. If you try it before I do, please share your thoughts in the review process. NOTE: Shao Hsing (or Shaoxing) is a seasoned rice wine. It is available in most Asian specialty markets and some larger supermarkets in the Asian section. If unavailable, dry sherry is an acceptable substitute. -- posted by Happy Hippie

The flavor of this was much different than I had expected. You really taste the dijon mustard. I didn't chop up my bok choy just left it in whole leaves and poured the sauce over. I got this on the web and I have only had it warm, but it could be served as a cold side as well. -- posted by cookiedog

Kohlrabi for the Novice

This recipe is from the Sept. 16, 2008 edition of the "Living" section of our local newspaper, "The Democrat & Chronicle" (adapted from "In Praise of Pecans by June Jackson" ). I have never tried kohlrabi, but it has been described as a member of the cabbage family but more mild than its broccoli and cauliflower cousins. The article states "pecans and honey accentuate the vegetable's sweet side". I have not cooked this yet but am eager to try it. -- posted by MarthaStewartWanabe

Baby Bok Choy in the Wok

This is a fast and easy recipe for cooking bok choy or baby bok choy. You can adjust the amount of flavor by adding more or less sake/soy sauce mixture (use equal amounts). We've found that adding the sesame oil at the end gives it more sesame flavor, but you could also just cook the bok choy in a mixture of vegetable and sesame oil. When in doubt, it's best to slightly undercook the bok choy. -- posted by Chef #910147

Mongolian Hot Pot

I am posting this recipe because it was in a cookbook I received from NE Lady in the cookbook swap March 2009. I was intrigued by the picture in the cookbook; however, mine didn't turn out looking like the picture! I had way too many noodles and too little broth. The cookbook, "Soups for Any Body" states that it is a mix between a soup and a stew. Mine was pretty thick, so I would add more beef stock to the recipe. I'd also serve more soy sauce with each serving, and allow each diner to add their hot pepper oil. If you let your meat marinate while you chop the vegetables, it gets on the table pretty quickly! I did change it a little...I increased the meat by 4 oz. -- posted by breezermom
