Brown Rice Salade Nicoise

From: "Whole Grains Every Day, Every Way" by Lorna Sass. "Chewy, easy-to-love short-grain brown rice makes an appealing grain base for a salad containing many of the elements of a traditional salade nicoise. The tuna and its soaking oil become a major part of the dressing, coating each grain with the savor of the sea." *Time does not include time to cook rice and green beans. -- posted by Engrossed

Asian-Style Three Bean Salad

By Ellie Krieger, as featured in her book "The Food You Crave" and also in Fitness Magazine. Three-bean salad gets an exciting Asian twist, made with a trio of legumes all commonly used in the Far East: green beans, edamame and black beans. The dressing is sweet and tangy just as in the traditional recipe, but this one, inspired by Chinese duck sauce, gets its sweetness from apricot preserves and has a zingy hint of fresh ginger. -- posted by ~Jen~

Healthy, Delicious, Salad... What More Could You Want?

MMM... egg. MMM... salad. VERY simple ingredients and deliciousily easy to make. It'll only take a minute but will stay with your stomach for hours... quenching bad snacking habits. The carmelized onions and balsamic vingrette makes this dish extremely yum. The French pairs the balsamic, egg, and onion in this dish in a way that is almost magical as they embrace each other in your mouth. (okay... maybe a little too descriptive) The dish is so very colorful and cuisine. Its a go for any appetizer or main meal. Reduce the eggs and lettuce by a fourth if simply for one person. Also reduce the bell pepper by one.

I promise you, I could eat this everyday and not grow tired of it.

The basis for this recipe is a recipe in the July 2005 issue of Sunset Magazine. I've modified the dressing to use bottled dressing to make it even simpler. Great for picnics and potlucks. ***Great presentation when layered unmixed in a large glass bowl.*** Can be made vegetarian depending on dressing. -- posted by Obag

Kimberly's Summertime Veggie Salad

I got this from a parenting bb. It's an easy marinated salad which will keep for days. It tastes great & uses mostly canned drained veggies. I use it all summer & get rave reviews from all who try it. Very different from the 'normal' marinated salads. It is a nice addition to any meal & great for potlucks/BBQs. Use your imagination with the ingredients; almost any canned veggie will work. -- posted by KristinB

Green Bean and New Potato Salad

Got green beans? Toss 'em in here! In this classic salad you'll find potatoes, green beans and fresh herbs in a homemade vinaigrette. Easy to make, light and yummy. I used some smallish red potatoes and steamed them but I think cooking in water would be fine. Also I just cooked the green beans in a skillet with some water and olive oil. Red OR white wine vinegar may be used. I'll bet some black olives would be tasty in here too. Serve at cool room temperature.
Runner Bean Vinaigrette

On the way home from a recent trip to England, I picked up in the airport bookstore a copy of BBC Good Food Magazine. This publication has some beautiful recipes in it. This is one of them. I guessed from the picture of the recipe that runner beans are the same as our green beans, so that is what I used. The recipe also calls for anchovies, of which I am not a fan. I substituted bacon bits. -- posted by Irmgard

Green Bean Salad

This is a simple and easy salad that my Italian family always makes when we are not in the mood for lettuce. We eat some type of salad with almost all our meals. My grandmother would always bring Mentuccia (wild mint) back from her trips to Italy but here we just use fresh or dried mint. Some times I use lemon juice instead of vinegar. Your choice.
Black Bean and Corn Salad - Spicy Mexican Salad/Side Dish

A spicy, crisp, fresh vegetable salad. This salad should be made several hours before it is served....to marinate the vegetables and blend the flavors. I personally don't cook the corn I cut from the cobb, just a personal preference. If corn isn't in season a good quality frozen corn is a perfect substitution - I don't even defrost it! The produce you use should be top quality for a superior result. -- posted by Jb Tyler, TX

Croatian Simple French Beans Salad

This is very simple salad where you use cooked French beans. You can use flat or round bean or green or yellow one, the procedure is the same. I do not use olive oil and only vinegar (not acceto balsamico). I also use honey vinegar (I have a friend who is in bee-honey business and he produces that honey vinegar. It is extremely healthy and excellent taste; you can drink it with water alone.) -- posted by nitko
