I have modified some of the directions to be more concise and to be in a more recipezaar format.          &amp;quot;I'm 34 and have been making this since I could stand up on the stool in my Yia Yia's kitchen (my grandmother who is now 80 yrs. old). This recipe will make a perfectly balanced salty, rich, filling, comforting soup.  I sometimes add more than juice of 3 lemons, as the sourness is the best part of the taste! You should taste lemon, richness of eggs, salt of chicken, and starch of rice, in that order and you've made it perfectly. You can also add thin pieces of shredded chicken meat (pull off bone in strips), although classic recipes don't include chicken, vegetables, garlic or any of the ingredients many reviewers added to &amp;quot;fix&amp;quot; this recipe. 			<description>So good! I made for supper the other night and we both loved it. Used regular nonfat yogurt instead of the Greek yogurt/sour cream, but I strained it so that it was good and thick like the Greek kind. Also, I just use cooking spray instead of the olive oil, and Cavender's Greek seasoning is awesome on the chicken, peppers, and onions. Dill is great in the tzaziki sauce, too.

			<title>Healthy Greek Style Chicken Tacos</title>

			<description>Idea I came up with for something quick and healthy that can be mostly prepared in advance. I used a large cooked chicken breast cut-up but would also be a good use for leftover roast chicken. Makes 4 large tacos so I think would be a complete meal for two or a light snack / lunch for four, if using the smaller shells you'll probably be able to fill six of them. I listed a gherkin because that's what I used but you could also use a small handful of diced cucumber. Because it's served slightly chilled I think this would make a nice and quick summer meal at the end of a hot day. You could also use a low-fat Greek yoghurt and/or omit the feta. I like this served over basmati rice: the fragrant rice compliments the lemon and oregano and makes a nice meal. And the rice cooks in the time it takes to make this entree, so everything is ready at the same time. 
A note on the use of arrowroot instead of cornstarch: Arrowroot is a good thickener for an acidic liquid (Cornstarch loses potency in acids.) It is also a good choice if your sauce is mildly flavored. The meat is tender, flavorful, and pretty darn close to what you get at a very good Greek restaurant.  I usually use lamb necks, which are very economical... but it does take some work to get the meat off the bones, and the yield is only about 50%. You need a good food processor and a grill to make this recipe!!  Please note that you need to start at least two days before serving.. and three days is better. Halloumi cheese is a semi-firm white cheese that is native to Cyprus and can be purchased at most supermarkets. It doesn't melt but browns up nicely. The oil and lemon dressing is simple but complements the cheese perfectly. I love leeks, but often find them overpowered in dishes where they aren't the main attraction.  This recipe really showcases the leeks in all their subtle glory by caramelizing them and then adding just a few ingredients to complement the leek itself.  In fact, the recipe features 3 of my favorite ingredients: leeks, feta cheese and Kalamata olives.  Can't go wrong with that combination.  To prepare leeks, trim off the tough dark green bits and the roots.  Cut in half lengthwise then swish in a bowl of clean water to remove the sand and sediment that gets trapped between the rings of the leek. 			<description>Yummy, a whole different way to eat meatballs.  No Italian sauce, but a creamy Feta sauce and lemon couscous to serve everything over versus pasta.  It really is great and honestly doesn't take long.  Couscous as you know takes 5 minutes. I make the dressing ahead and you are only left with the meatballs which you can actually make ahead, refrigerate or freeze and then make later.  A salad on the side with a lemon vinaigrette and fresh tomatoes and dinner. Can't get much easier.
