I have changed the recipe from the original description that it made 2 servings; as I and both other reviewers at this time found that it really makes 1 serving. It can, however, be doubled very easily. 			<description>The best source that I know of for most of the ingredients in this recipe is Whole Foods Market, but you should be able to find them in other health food stores or better supermarkets. You can be fairly flexible about the amount of nuts and dried fruits, but remember, they provide most of the good flavor; the more fruits and nuts you include, the better it tastes, the more rolled oat, the cheaper it is to make. This recipe makes a real big batch, but it can be halved if desired. It keeps well. This can be a very expensive recipe, but I still think it is worth it !!! 			<description>I don't remember where I found this, but it's a staple around our house now. It's chewy, kind of nutty, and very filling. It's also very easy (as long as I think about it at least an hour before I need it!) It's an easy side dish as is, upgrades easily to a pilaf (see directions below), works well under meats and sauces, leftovers go great in soup, and it is even good with a little sugar, cinnamon, and cream over it for breakfast or dessert! 			<description>I read that a millet porridge with sweet potatoes (and sometimes chestnuts) was a traditional dish in Northern China, and pulled together the proportions, method, and seasonings from a variety of sources. Have for breakfast or as a side dish. Congee is by definition mushy and bland, so be sure you are prepared for that if you make this. Everything in this is very good for you. 			<description>Last summer when I was in Ecuador it was always a treat to have this drink for breakfast. Breakfast carts on the street and roadside stands keep this hot on the stove and serve it up in tall glasses all morning. It tastes like rice pudding and is a filling alternative to cereal. You drink all the milk and then eat the morocho at the bottom of the glass (I suggest checking to see if your glass is heat safe, otherwise serve it in a mug). Morocho is dried cracked corn kernals. Goya distributes it in plastic bags that you can find with the beans in the &amp;quot;ethnic&amp;quot; food aisle or at a Spanish bodega.

This recipe says to use a pressure cooker, but if you don't have one just boil the corn and expect the morocho to take longer to get soft.

Since Im only a college student whos barely beginning to enjoy the pleasures of cooking I dont exactly know my way around the kitchen just yet. This was actually my first attempt at making something else other than eggs. I didnt even know how much rice is in one cup. Luckily, good old mom was there and she taught me how to make congee. It was an awful Christmas but slaving over the stove with her was the happiest moment I had all day and the greatest gift I couldve received. Even though this recipe is extremely bland it tasted better knowing I made this with my mother. Happy Holidays, mom. 			<description>It's hard to get the kids out of the carb rut for breakfast.  This is a filling, protein &amp;amp; fiber rich oatmeal that keeps them full until lunch.  Leftovers are even great cold, or make up a big pot the night before and place in individual bowls for a quick breakfast in the morning!  I created this myself and have made numerous variations of it, and this is the one my kids ask for over and over!  

For the sake of good health, it's not a real sweet oatmeal.  If you or your kids require a sweeter taste, add more maple syrup or top with brown sugar at the table.  

You could top each serving with sliced almonds instead of stirring in the chopped walnuts.  In fact, I prefer it that way, but I have one daughter who won't eat the protein rich nuts unless they're hidden!

I recently made this for guests with only one medium apple (that's all we had in the house), and this fed two children and 3 adults a good hearty breakfast.  The kids had seconds, so I estimate the recipe to be about 6 servings.
