Budwig - Original Dr. Kousmine Recipe

A delicious, super-healthy way to start the day. Dr. Kousmine (http://en.wikipedia.org/wiki/Catherine_Kousmine) was perhaps a little ahead of her time in terms of nutrition, espousing the benefits of unprocessed foods and a holistic approach to diseases and ailments; but whatever you think of the politics of it all, this breakfast is yummy and will keep you sustained for many hours more than a bowl of "normal" cereal! ;-) -- posted by Seznam

Basic Breakfast Granola Cereal

Simple, tasty basic granola recipe. I like this just as it is, but you can also mix up the ingredients. Some ideas: Substitute nuts for dried fruit or berries; use half almonds and half broken pecans; use half pecans and half dried cherries; omit the coconut and replace with the same amount of oats. You get the idea. This makes more than the recipe lets on, so you may have to use two cookie sheets. Enjoy! -- posted by BIG_CHIEF

Chocolate Oat Bran

There are lots of recipes for chocolate oatmeal, but very few for any type of oat bran... so I decided to create one just to see what happened, and it didn't turn out so bad!! I did use a half-cup measuring cup, but it wasn't completely full so it may have been more like 1/3 cup. -- posted by brokenburner

Megan's Granola

Here is a recipe that was featured in an email this morning from the www.allrecipes.com website. It has gotten very high reviews. "My daughter and I came up with this recipe and it is absolutely wonderful. Several of my children who typically don't care for granola, loved it. I've tried many granola recipes and this tops them all. Enjoy!" Submitted by: annie9 -- posted by senseicheryl

Poached Cherry Risotto

I really like risotto. The trouble is that I am the only one in the house that likes it, until now. Everything is better when it is sweet. also, you cannot live near Door County without having a few cherry recipes on here. I used Recipe #229437 #229437 by the lovely and talented Chef #58104 for the cherries called for in this recipe. Yes, I still add the vanilla because my DH loves vanilla. You can skip this step if you use Rita's cherry, since it already is flavored. -- posted by Jess4Freedom

Hot Rice Breakfast Cereal

Whenever we make rice for dinner we make a HUGE pot and use the rest for breakfast... this is one of the ways we use it! This recipe comes from hillbillyhousewife.com and I am posting it for the January TOTM. I am posting it in normal proportions but we make 8-10 times this amount to feed our brood! Prep/cooking time does not include cooking of the rice. -- posted by mumof9

Chewy, Loaded, Oatmeal, Peanut Butter Bar "cookies"

I came up with these last night, and am so pleasantly surprised at the result!
I wasn't in the mood (or didn't have time) to do the cookie thing, so I decided to make a bar cookie, but had a hard time finding a recipe that had the ingredients that I had in mind, so I came up with my own. These are also good for breakfast and have wholesome ingredients, although admittedly not low in fat. You can vary this to your own personal taste by adding any kind of chopped dried fruit and/or nuts, and of course you could add chocolate pieces as well. These were easy to make, and didn't take a lot of time. ** See peanut allergy note below! -- posted by Yrhaven (aka Condiment Queen)

Bedtime Oatmeal

This isn't really a recipe, it's more an idea which worked really well. I find it hard to get to sleep, but don't like having a hot drink before I go to bed because I end up waking up a couple of hours later then can't get back to sleep. I love the taste of Horlicks (malted milk) though, and find it really relaxing, and oats are meant to help you sleep so I tried adding it to a bowl of oatmeal and it tasted really yummy! It's a lot cheaper than buying flavoured oatmeal too, and you can add any type of malted milk/hot chocolate powders to it, or even flavoured milkshake (my brother likes banana Nesquik with cinnamon). Have fun trying it out! -- posted by Rainbow*Bubbles

Best Ever Granola

This recipe is so good because it produces a granola with lots of clusters (due to the ground oats) and light, crisp flakes (from the quick oats). The recipe is from, Melissa Kronenthal of The Traveler's Lunchbox. She calls it "Seven-Year Granola" as it took her 7 years to develop this perfect recipe. If you want, you can substitute the ground oats with ready-made oat flour, or flax seed meal. -- posted by blucoat

Overnight Refrigerated Oatmeal

This is a great make-ahead breakfast. I'm not sure what the site will say the calorie count is, but I have counted it myself to be 315 calories. (I actually use unsweetened vanilla Almond Breeze almond milk, and it brings the count down to 290.) It's a delicious and efficient way to eat breakfast.
Cream of Wheat Pudding

From The Kitchn blog at http://tinyurl.com/deaj2w Best served piping hot. Author note: "You can use the whole egg in this. However, I find that it's difficult to keep the egg white from curdling at least a little bit when added into the hot cereal, so you may find soft little nubs of egg white throughout. If this won't bother you, add the whole egg. Using just the egg yolk seems to keep it a little smoother." -- posted by DrGaellon

Scottish Cream Crowdie With Raspberries

This is a name that isn't really known on these shores, although there may be a small group or two of people of Scottish descent who use it. It is an Anglicized version of an old Gaelic (Scottish) word for curd. A crowdie was a porridge (or pudding) and was usually eaten for breakfast. This version is one that was used on special occasions at harvest time. Although a crowdie doesn't traditionally include fruit, it, like any breakfast cereal, is certainly lifted to another level when it is included. Adapted from King Arthur flour. -- posted by Sharon123

Nif's Grandpa's Baked Granola

When I was a little girl, my Grandma would make batches of this for my Grandpa. It filled her house with a wonderful aroma and tasted terrific. She would store it in large glass Mason jars when it cooled. This is a half batch of what she used to make and my Sister makes this amount fresh every week. You can eat this as regular granola with milk or sprinkle on yogourt or ice cream. Thanks Grandma!
Lower Fat Cinnamon Granola

This recipe will probably not rate as "low fat" because of all the nuts, but they're a healthy source of fat. In an effort to reduce the unhealthy fat, there is a minimal amount of butter in the entire recipe. It makes for a dry granola which is especially good for topping yogurt or as the topping for a fruit "cobbler". Feel free to swap out different fruits and nuts to suit your tastes.
Creamy Grits (Rice Cooker)

I first tasted grits as an adult and was underwhelmed. But I really started to enjoy them with added ingredients, so I started thinking of how to improve them for breakfast. I realized that I had also disliked oatmeal made with water, so taking a cue from my mother, I prepared them with milk. I really liked the results, but not the cooking of them. So I threw everything into the rice cooker - yummy grits with no fuss.
Malt-O-Meal Cake

This is an adaptation of "Semolina cake soaked with lemon syrup" from "A Baker's Tour" cookbook. The semolina cake was originally from Greece & called "Revani". When I saw you could substitute the semolina for cream of wheat, I figured my malt-o-meal would work just as well. I had maple brown sugar malt-o-meal & we loved it so much, I don't think I will ever be able to make it any other way. If you don't have that kind of malt-o-meal, I would imagine you can incorporate those flavors in the syrup that is drizzled on top. This cake was gone in 2 hours. We really liked it & I hope you will too. -- posted by Feej

My Pumpkin Pie Oatmeal

You know that extra can of pumpkin pie filling you buy every fall 'cause it's on sale for a great price? The one that sits in your cabinet til next Thanksgiving, when you start the whole vicious cycle again? This is a great recipe to use it up! I save the rest of the pumpkin pie filling to use in this recipe again or to make muffins. This makes two very generous servings. I keep the other serving in the fridge, wrapped, and just reheat in the microwave. -- posted by Amanda Beth

Costco Clone Granola

I tried Costco's granola the other day, and is it EVER good! Now, I'm not saying this recipe is an exact clone of Costco's, but it's the best I found. Add or subtract ingredients according to your taste - you can use less sugar if you like, increase the amount of wheat germ, add flax seeds, sesame seeds, pumpkin seeds, other dried fruit or nuts - it's perfect for experimenting.

Healthy Pumpkin Oatmeal (For One)

This is a tasty concoction I came up one morning. I can't tolerate too much oatmeal, so the pumpkin, flaxseed, pumpkin seed kernels, and nuts really fill out this dish. Substitute other nuts as you wish. Feel free to top with vanilla yogurt--I just like plain because of the flavor contrast. Also, you can use other spreads, but I've found that there's something truly delicious about the combination of pumpkin and apricot. Enjoy! -- posted by Jainene

Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy

Apricot-Walnut Oatmeal

My husband and I eat this every morning M-F. The oatmeal is low sodium, low sugar, high fiber. The apricots are high Vit A (beta carotene), the walnuts are high Vit E. Without honey, it's quite bland.
