Dry Oatmeal Mix

This recipe came from the February/March 2003 issue of Taste of Home's Light and Tasty. I really have enjoyed this recipe and the ease of preparation. Also, very economical to have on hand. Those small packets of pre-flavored oatmeal do get pricey. 3 points per serving. -- posted by Amber of AZ

Tea-Infused Hot Cereal

Technically, this is NOT a recipe - more of a CONCEPT or as a new venture and just a way to add more variety (and flavor and color in some delicious cases) to plain ole hot cereal. Feel free to use with oatmeal, farina (cream of wheat), cream of rice (which could use that extra punch), grits, or cornmeal mush (maybe even porridge) -- posted by nomnom

Cocoa Oatmeal with Dates

Now that the word is out that chocolate is good for you (BUT only if not mixed with milk) why not have it for breakfast? This makes a nice change of pace from plain oatmeal. Karl did not think this was sweet enough, but when he sprinkled a little brown sugar over he was happy.
Super Healthy Spicy Oatmeal Custard All-Day Breakfast

Always looking for new ways to eat oatmeal - my staple breakfast -and still my favourite - I made this up this morning. Fueled me brilliantly for hours and was just wonderful to eat. Basically a nicely spiced porridge with added bran fibre, dried fruit and sweet seed, with a set topping of egg (white) custard and then creamy sweet yoghurt and your favourite jam/jelly or fruit to finish. Nearest similar taste I can think of would be to say that it's a bit reminiscent of 'Queen of Puddings' - which is also very nice :) It's terribly good for you, plus being low fat and low sugar you get more of it for the same amount of calories! Am having this tomorrow too :) -- posted by Ethan UK

Microwave Dutch Apple Oatmeal

Here are a few fun facts and tips about oatmeal; People buy more oatmeal during January than any other month. Oatmeal is the first product given FDA approval to carry a food-specific health claim. Oatmeal is a whole grain cereal made from oat groats. It has the bran, germ and endosperm. The difference between quick oats and old-fashioned oats? Quick oats are cut into smaller pieces, so they cook faster. -- posted by Charlotte J

Quick (Microwave) and Nutritious Steel Cut Oatmeal

This is from McCann’s website. I love that you can use the microwave and not have to worry about scorching your pot on the stovetop. Of course, you can always use a double boiler, but that can take a while. I always enjoy steel cut oats because they are more nutritious than rolled oats and have a nice, nutty texture. Note: Cooking times may have to be adjusted for your microwave oven wattage. I have 1000 watts and had to cook 5 minutes covered and 11 minutes uncovered. -- posted by CipherBabe

Of course you can sub the amount or type of fruit, those are just what I call for. So if you don't have one of the following ingredients, other dried fruit (like died dried apricots) are yummy too!
Honey or sugar can also be subbed for splenda, but you will have to decipher how much for yourself. + The banana is my little extra touch, if you don't like banana, then feel free to exempt! -- posted by Hydra

This may not be for everyone's tastes since the seeds are a bit crunchy, but I think that it adds a nice texture constrast to the creaminess of the oatmeal. -- posted by Phil the Thrill

Chocolate Peanut Butter Oatmeal

It's like having unbaked cookies for breakfast, without the butter and extra sugar. When I haven't had chocolate chips, I've used other chocolate. (Dove Promises are really good. I've also used Godiva cocoa.) I recommend using a large microwaveable dish (I use a 4-cup Pyrex); I discovered the hard way what a mess this can be in too small a bowl. And I always just eyeball the ingredients (except the oatmeal), so feel free to play with the measurements. It's not low fat, but it's soooo good. -- posted by anonymous23

I run a busy college schedule and I need a breakfast with some 'pep' to get me up and going in the mornings and can cater to my equipment limitation (Dorms only allow microwaves). I spend my extra computer time browsing through different recipes and patched together this recipe from everything I've read. I'm a major health nut, so this oatmeal is not only tasty, but very good for you. Enjoy.
The Original Lemon Curd Oatmeal

Lemon curd is a spread made of beaten egg yolks, sugar and lemon juice. There are recipes here on Zaar, and it's also available in most grocery stores in the aisle with the jams and jellies. I had some leftover and thought I'd find a quick oatmeal recipe using it here, and discovered there was none - thus, I'm calling this the original! It's a nice change from your regular morning oatmeal; the lemon flavor is subtle and even the tiny amount of eggs makes the texture more souffle-like. YUM! Fresh raspberries or blueberries and/or sliced almonds or chopped walnuts are good alternative toppings to the crumbled gingersnap. -- posted by ~Jen~

Sunny Cranberry Oatmeal

This is my favorite oatmeal - I'll eat it for breakfast or lunch! Very filling and super tasty with the dried cranberries, almonds and orange marmalade. Be sure to add the dried cranberries right away as they rehydrate while cooking which makes them very flavorful. If I'm not that hungry I'll reduce the oats to 1/4 cup and leave the other ingredients the same. Milk can be substituted for water if desired - when we ate oatmeal as little kids it was because we were out of milk for our cereal, so I always make my oatmeal with water.... personal preference is everything! *Note: 1 tablespoon of Smucker's sugar-free orange marmalade has 10 calories WW points = 3 -- posted by Brooke the Cook in WI

Power Oatmeal With Blueberries and Flax

The name says it all! I've been on a major oatmeal kick lately and wanted to create something that had just enough protein AND still very tasty! I use half a serving of Syntax Vanilla Bean protein powder with this recipe which has 12g of protein, as that is plenty of protein at one time for me - 1/2 a scoop measures a slightly heaping 1/8 cup. Your 'scoop' might be different sized - if you change the volume of the powder, you'll need to adjust the water accordingly. Don't skip the flaxmeal, I think its really important for the texture and flavor! I think you could use frozen blueberries, although I haven't tried it, just be sure to return your oatmeal to the microwave after adding them to warm them up. I usually don't add sugar or milk to my oatmeal and didn't include them in the recipe, but feel free to do so. -- posted by Brooke the Cook in WI

Healthy Chocolate Oatmeal/Porridge

A really simple idea I use almost every morning, it's really filling and slow-release energy as well as providing antioxidants and feel-good serotonin from the cocoa, and it curbs cravings for chocolate. I find that even if I have plain porridge in the morning, I still seem to want something sweet, whereas with this I don't and it only has a few more calories than plain. It's also really quick to make, which is a bonus because I never seem to have enough time in the morning! I do also make it as a snack when I need chocolate, or even sometimes as dessert. You can add almost anything to it- cinnamon, almond, vanilla, chilli...whatever you feel like. Give it a try and see what you think! -- posted by Rainbow*Bubbles

Apple Cinnamon Oatmeal - Ww Points 4.5

I don't recall where I got this recipe and how much I've done to it to change it for my own liking. However, I eat this almost every morning. I haven't grown tired of it and it is so good. For those who aren't fans of "traditionally" prepared oatmeal, this is quick, easy and best of all NOT GOOEY! I can't stand gooey salty oatmeal. I use individual packs of apple sauce. Mostly because after opening regular apple sauce, you have to refrigerate it. Since the apple sauce in this recipe is added after it's cooked, it can make the oatmeal slightly cold if it's from the jar in the fridge. I have tried adding the apple sauce and cooking it with the oatmeal and milk, it didn't turn out that great. Make sure to use unsweetened apple sauce to keep within point range. I am not sure how much the regular apple sauce will raise the points. This tastes great with or without added sweetener. I use unsweetened because I can control the sugar/sweetness that way.

Microwave Apple Pie Oatmeal

I came up with this recipe after eating Recipe#58447. I was out of bananas, and was really wanting a warm, comforting bowl of oatmeal that could be made quickly. I already had a can of lite no sugar added apple pie filling that had been opened, so I thought I'd give it a try. If you want it to be a sweet as pie, you might want to add some brown sugar instead of or in addition to the sweetener. Feel free to add raisins if you like them (I don't) and to add to or take away from the spices. -- posted by ColCadsMom

I love oatmeal, and my kids do too. But they get bored VERY easily, so I have to really kick it up a notch to keep them from complaining on oatmeal days. This was a spur of the moment recipe, trying to decide what to add to oatmeal. Using the maple and brown sugar packets gives a granola bar flavor to the oatmeal. You could also use regular packets, quick cooking, or old fashioned and sweeten them any way you like. Also, feel free to use graham cracker crumbs, but teddy grahams are what I had on hand.
Bedtime Oatmeal

This isn't really a recipe, it's more an idea which worked really well. I find it hard to get to sleep, but don't like having a hot drink before I go to bed because I end up waking up a couple of hours later then can't get back to sleep. I love the taste of Horlicks (malted milk) though, and find it really relaxing, and oats are meant to help you sleep so I tried adding it to a bowl of oatmeal and it tasted really yummy! It's a lot cheaper than buying flavoured oatmeal too, and you can add any type of malted milk/hot chocolate powders to it, or even flavoured milkshake (my brother likes banana Nesquik with cinnamon).
Middle Eastern Tahini Oatmeal (Vegan)

I concocted this to have a more interesting way to eat oatmeal. Usually I have it with just fruit preserves or with some spice, but I'm trying to eat healthier, so may as well make it tasty. This is open for variation, but what's posted is how I like it. -- posted by the80srule

Perfect Microwave Oatmeal for One

I used to fix myself hot oatmeal every day, even when I was working. I guess I'm lazier now, and not willing to clean that pot day after day. SO, after much trial and error, I figured out how to do it right in the ce4ereal bowl, in the microwave. Pre-loading single servings -- everything but the water -- into snack-size zip bags make this an even quicker way to have my oatmeal any day I want it. -- posted by Meredith K.
