Chocolate Oat Bran

There are lots of recipes for chocolate oatmeal, but very few for any type of oat bran... so I decided to create one just to see what happened, and it didn't turn out so bad!! I did use a half-cup measuring cup, but it wasn't completely full so it may have been more like 1/3 cup. -- posted by brokenburner

Oat and Nut Granola With Sunflower Seeds-The Lodge at Red River

This granola makes a great breakfast served with milk, or a good snack eaten plain. I add raisins, dried cranberries or dried cherries. I also use pecans in place of the walnuts. You could add coconut or other dried fruits. Sometimes I add a little cinnamon. The milk powder and flour help to create nice 1"-1.5" chunks of granola. It can be made up to two weeks ahead. -- posted by swissms

Cheddar Cheese Grits

Overnight Apple Cinnamon Oatmeal

This is a slow cooker recipe for oatmeal that I found in a magazine in the dentist office. I tried it and it was very good but what I liked best about it was the barley which is very high in fiber. I cut the recipe in half which is plenty for one or two people. The recipe mentioned to add honey and milk to your taste. It also said to line the slow cooker but I didn't and it did stick to the sides but otherwise it came out fine. I used a small crock pot. -- posted by Betty Lovestoeat

Khabeesa (Omani Breakfast Item)

I found this on the Desitwist website, and I wanted it to complete my A to Z collection of recipes (my Around the World Cookbook). Also known as Farina, Sameed, Cream of Wheat. Serving size is a guess. I definitely recommend a nonstick saucepan. This worked fine with fat free milk and "quick" farina. If you are not used to cardamon, you might want to reduce the amount. -- posted by windhorse23

This is from the Jenny Craig cookbook, "Healthy Living For Life". It is an excellent source of Vitamin C and calcium. If you can prefer, you can substitute finely chopped dried apricots for the currants, and chopped pistachios for the almonds. -- posted by Sara 76

Poached Cherry Risotto

I really like risotto. The trouble is that I am the only one in the house that likes it, until now. Everything is better when it is sweet. also, you cannot live near Door County without having a few cherry recipes on here. I used Recipe #229437 #229437 by the lovely and talented Chef #58104 for the cherries called for in this recipe. Yes, I still add the vanilla because my DH loves vanilla. You can skip this step if you use Rita's cherry, since it already is flavored. -- posted by Jess4Freedom

Sort of Oatmeal

This delicious oatmeal combines flax seed, rolled oats, steel cut oats, barley, wheat bran, cracked wheat and oat bran. It is easily mixed dry ahead of time, then can be scooped out in single serving sizes for a microwave healthy breakfast in the morning. This is the recipe that I use for one person and makes about 9 servings. If you have others that will be eating it with you, by all means double or triple it. -- posted by Chef #1116962

Hot Rice Breakfast Cereal

Whenever we make rice for dinner we make a HUGE pot and use the rest for breakfast... this is one of the ways we use it! This recipe comes from hillbillyhousewife.com and I am posting it for the January TOTM. I am posting it in normal proportions but we make 8-10 times this amount to feed our brood! Prep/cooking time does not include cooking of the rice. -- posted by mumof9

Bedtime Oatmeal

This isn't really a recipe, it's more an idea which worked really well. I find it hard to get to sleep, but don't like having a hot drink before I go to bed because I end up waking up a couple of hours later then can't get back to sleep. I love the taste of Horlicks (malted milk) though, and find it really relaxing, and oats are meant to help you sleep so I tried adding it to a bowl of oatmeal and it tasted really yummy! It's a lot cheaper than buying flavoured oatmeal too, and you can add any type of malted milk/hot chocolate powders to it, or even flavoured milkshake (my brother likes banana Nesquik with cinnamon). Have fun trying it out! -- posted by Rainbow*Bubbles

Peanut Butter and Pear English Muffins

I made this up when I was looking for something different for breakfast. I now eat it for a snack too. The kids love it and that's always a plus. For granola, I use Just Bunches cereal. I toast my English Muffin until it has a crispy texture. Time and measurements are estimates-use as much peanut butter and granola as you want. I just drizzle honey over the pear to help the granola stay in place, yet the honey adds to the overall taste. I eat this with the extra slices of pear.
Cream of Wheat Pudding

From The Kitchn blog at http://tinyurl.com/deaj2w Best served piping hot. Author note: "You can use the whole egg in this. However, I find that it's difficult to keep the egg white from curdling at least a little bit when added into the hot cereal, so you may find soft little nubs of egg white throughout. If this won't bother you, add the whole egg. Using just the egg yolk seems to keep it a little smoother." -- posted by DrGaellon

i love granola but i have to change most recipes to suit my nut allergy, i cant eat nuts but i can eat seeds so i replace a lot of things with more seeds, chuck i whatver you ahve got that is avaiable i say! this makes quite a lot and it is half of the nigella recipe! i store it in old washed out coffee jars apparently you should store it in the fridge so that the oils in the seeds dont go rancid. to be honest it never ahngs around that long in our house. I dont half the ginger as i like the taste, i would say to alter the spices to taste. And if i am honest really honest i dont usually measure stuff out i guess, im very naughty heheh -- posted by pornstarbarbie

Scottish Cream Crowdie With Raspberries

This is a name that isn't really known on these shores, although there may be a small group or two of people of Scottish descent who use it. It is an Anglicized version of an old Gaelic (Scottish) word for curd. A crowdie was a porridge (or pudding) and was usually eaten for breakfast. This version is one that was used on special occasions at harvest time. Although a crowdie doesn't traditionally include fruit, it, like any breakfast cereal, is certainly lifted to another level when it is included. Adapted from King Arthur flour. -- posted by Sharon123

Malt-O-Meal Cake

This is an adaptation of "Semolina cake soaked with lemon syrup" from "A Baker's Tour" cookbook. The semolina cake was originally from Greece & called "Revani". When I saw you could substitute the semolina for cream of wheat, I figured my malt-o-meal would work just as well. I had maple brown sugar malt-o-meal & we loved it so much, I don't think I will ever be able to make it any other way. If you don't have that kind of malt-o-meal, I would imagine you can incorporate those flavors in the syrup that is drizzled on top. This cake was gone in 2 hours. This healthy granola offers vitamin E, magnesium and fiber. -- posted by Buster's friend

Steel Cut Oatmeal

Steel cut oats are not flat or flaked, but look like grain. The taste is also completely different–sort of nutty, like wheat berries. They are touted as a purer choice than oatmeal. This recipe is from the Food Network. However, If you want steel cut oats plain and in a hurry: before you got to bed, put a half cup of steel cut oats in pan and cover with water. The next morning, drain the water, add milk (or cook in water) and bring to a gentle boil. Takes about 5 minutes to cook. -- posted by mapaklenk

My Pumpkin Pie Oatmeal

You know that extra can of pumpkin pie filling you buy every fall 'cause it's on sale for a great price? The one that sits in your cabinet til next Thanksgiving, when you start the whole vicious cycle again? This is a great recipe to use it up! I save the rest of the pumpkin pie filling to use in this recipe again or to make muffins. This makes two very generous servings.
Costco Clone Granola

I tried Costco's granola the other day, and is it EVER good! Now, I'm not saying this recipe is an exact clone of Costco's, but it's the best I found. Add or subtract ingredients according to your taste - you can use less sugar if you like, increase the amount of wheat germ, add flax seeds, sesame seeds, pumpkin seeds, other dried fruit or nuts - it's perfect for experimenting.

Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy

Apricot-Walnut Oatmeal

My husband and I eat this every morning M-F. The oatmeal is low sodium, low sugar, high fiber. The apricots are high Vit A (beta carotene), the walnuts are high Vit E.
