Baked Oatmeal

My Mum only recently began making this. It's very good, although we found that it was necessary to add cinnamon, as it was somewhat bland to begin with. I'll leave it up to you to decide! The options for add-ins are endless. We use a combination of a few ... mainly blueberries, raspberries, raisins, dried apricots, and an extra random or two. Can be eaten as is, or warmed with milk, or yogurt. I guessed at the prep time. -- posted by KT_Z

Skiers Swiss Cereal (Rainy Day Breakfast)

I found this in a Diane Mott Davidson mystery book. It is SO easy and flavorful, put it together the night before then cook it on the stove top in the morning. Never a big fan of porridge or oatmeal, this one changed my mind. I use all sorts of different fruit depending on mood and what is at hand. Apples, blueberries, or banana along with the mentioned dried cherries work perfectly. As do raisins and nuts.

The sitting overnight lets the fruit flavor permeate the oats and milk and you end up with ambrosia. hmm coconut would be good to try it with as well. lemon or lime zest? the combinations to taste are endless. *runs for my pantry* -- posted by MarraMamba

Breakfast Granola

My family loves this granola! We usually mix about 1/4-1/3 cup of it in a smoothie for breakfast every morning because it tastes so great with the smoothie and it lasts us a couple of weeks this way. Tastes great on its own or mixed with your favorite cereal also. You can also add some raisins after its finished baking. -- posted by Enjolinfam

The Nation's Favourite - Podgy Porridge!

This recipe is one that I have been making for ages at home, however, this particular recipe, is the one that was published in The Nation's Favourite Food cookbook, a poll run by the BBC to "capture" the Nation's best loved and top 100 recipes - the Nation being the Great Britain. Jo Pratt is the author of this recipe, but, I have tweaked a bit here and there, to my own personal tastes! Enjoy a bowl of Podgy Porridge on a cold and wet winter's morning! I have added a Non-Podgy version at the end of the recipe as well! -- posted by French Tart

Creamy Rice Cereal (Vegan)

Easy and healthy breakfast recipe. In Asia it's expensive to buy imported cerals from the states and my family has become used to finding other types of "cereal" to eat! This is a great way to make cereal out of leftover rice for us! I'm surprised we found this in a cookbook and hadn't figured it out on our own yet. This is from the Brackett's 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes. Preparation time doesn't include cooking the rice. -- posted by Enjolinfam

Mom's Hearty and Not-Overwhelming Granola

I don't think I have tried one store bought granola that wasn't too sweet. I always make my own because it's a quick process and makes enough to last for weeks (or just one week if you have a significant other who scarfs it down each morning for breakfast like I do). -- posted by Big Tastebuds, Tiny Kitchen

Sunday Morning Oatmeal--Barefoot Contessa Ina Garten

This recipe came from the Barefoot Contessa and I have made it several times. It's very creamy and satisfying. If you are going to make it with the fresh banana slices, you must eat it the same day. I always use 1% milk, because I never have whole milk on hand. The stir-ins, fruits, nuts, are flexible, whatever you like, and whatever you have on hand. -- posted by Hootenanny

I changed this to use vanilla extract because otherwise you would have to make your own vanilla brown sugar.
Bionic Fruit Salad

Multi fruit salad perfect for breakfast or lunch. It can also be presented in seperate bowls for parties... sorta like a build-a-salad or even a fruit dip.
Nestle' has a brand called La Lechera - their sweetened condensed milk comes in different flavors and there is a low fat option as well.
There no limits to what fruits you can use... I hate papaya so i substituted for grapes instead.

No-Cook Overnight Oatmeal

Here's a super easy way to make overnight oatmeal. This kind is to be eaten cold, and all it takes is a stir and refrigeration.

This recipe is great for people like me who don't like milk. The milk really seeps into the oats overnight, so you can't taste it much.

Barbecued Bourbon Shrimp With Cheddar Cheese Grits

F&W Magazine From: Pairing Kendall-Jackson Wines with Kentucky Cooking, Pairing of the Day: 04/2008 edition By happy accident, Amber Huffman combined leftovers of two low-country staples—barbecue and cheddar cheese grits—for a quick Southern fusion meal. It became a Jesse Jackson favorite. Here, Huffman tops her grits with grilled shrimp slicked with a tangy, bourbon-based barbecue sauce. “I seriously have received three marriage proposals over a bowl of my cheese grits,” says Huffman. “I’ve accepted none so far.” Huffman’s rich cheese grits need a wine with some substance, but one that isn’t so tannic and massive that it will overwhelm the sweet shrimp—in other words, Pinot Noir. Kendall-Jackson makes a very good, black cherry–inflected, single-vineyard Pinot, the 2005 Highland Estates Seco Highlands that would be perfect; or look for Kendall-Jackson’s lighter, more peppery 2006 Vintner’s Reserve. -- posted by Manami

Chewy, Loaded, Oatmeal, Peanut Butter Bar "cookies"

I came up with these last night, and am so pleasantly surprised at the result!
I wasn't in the mood (or didn't have time) to do the cookie thing, so I decided to make a bar cookie, but had a hard time finding a recipe that had the ingredients that I had in mind, so I came up with my own. These are also good for breakfast and have wholesome ingredients, although admittedly not low in fat. You can vary this to your own personal taste by adding any kind of chopped dried fruit and/or nuts, and of course you could add chocolate pieces as well. These were easy to make, and didn't take a lot of time. ** See peanut allergy note below! -- posted by Yrhaven (aka Condiment Queen)

Spring Delight Oatmeal (Raspberry Pear)

My mom and I came up with the idea for this yummy spring time oatmeal one day while we strolling through the grocery store and spotted cartons of fresh raspberries just in for spring. You are more than welcome to try adjusting any ingredients to your preferences- this is just how I think it tastes best!

Quick tip: Make sure to soak any materials that come in contact with cooked oats. Otherwise, they dry to to the surface and are nearly impossible to clean off!

Strawberry Yogurt Crunch

Yogurt is always a favorite at breakfast, but this recipe transforms it into something special. I got this recipe out of the best loved church recipes book. And it's sooo good! For the yogurt, we couldn't find 2 cartons of thick strawberry yogurt 6 ounces each, so we got three 4 ounce cartons of the Yoplait Whips! Strawberry-Mist. Also, it doesn't HAVE to be strawberry, you can pick any flavor of the Whips! line. -- posted by Rachel Lynn

Nigellas Granola from Feast

i love granola but i have to change most recipes to suit my nut allergy, i cant eat nuts but i can eat seeds so i replace a lot of things with more seeds, chuck i whatver you ahve got that is avaiable i say! this makes quite a lot and it is half of the nigella recipe! i store it in old washed out coffee jars apparently you should store it in the fridge so that the oils in the seeds dont go rancid. to be honest it never ahngs around that long in our house. I dont half the ginger as i like the taste, i would say to alter the spices to taste. And if i am honest really honest i dont usually measure stuff out i guess, im very naughty heheh -- posted by pornstarbarbie

Scottish Cream Crowdie With Raspberries

This is a name that isn't really known on these shores, although there may be a small group or two of people of Scottish descent who use it. It is an Anglicized version of an old Gaelic (Scottish) word for curd. A crowdie was a porridge (or pudding) and was usually eaten for breakfast. This version is one that was used on special occasions at harvest time. Although a crowdie doesn't traditionally include fruit, it, like any breakfast cereal, is certainly lifted to another level when it is included. Adapted from King Arthur flour. -- posted by Sharon123

Malt-O-Meal Cake

This is an adaptation of "Semolina cake soaked with lemon syrup" from "A Baker's Tour" cookbook. The semolina cake was originally from Greece & called "Revani". When I saw you could substitute the semolina for cream of wheat, I figured my malt-o-meal would work just as well. I had maple brown sugar malt-o-meal & we loved it so much, I don't think I will ever be able to make it any other way. If you don't have that kind of malt-o-meal, I would imagine you can incorporate those flavors in the syrup that is drizzled on top. This cake was gone in 2 hours. We really liked it & I hope you will too. -- posted by Feej
