			<description>This is a simple, versatile tapenade. It is best on warm focaccia or toasted slices of baguette, spread in a very thin layer. It is also terrific on sandwiches. Spread it on the inside of the bread before you make a grilled cheese (best w/cheddar) or a fresh mozzarella and tomato sandwich. It's also a good dip for baby carrots or just about anything else. I've used leftover tapenade as a sauce on pasta, as well. It's very rich and flavorful. For bread crumbs, I used Ener-G's Fine Bread Crumbs - Other GF brands available include Miss Roben's, Gillian's Foods and El Peto. This is definitely a job for fine, dry breadcrumbs rather than fresh ones. If you can get your hands on gluten-free Italian flavored bread crumbs, then eliminate all of the herbs and spices that the recipe calls for. IF YOU CAN EAT GLUTEN: Just use regular breadcrumbs and regular flour (same measurements). After a helpful review, however, I made them again and realized I had strayed much more from the original recipe than I thought! I certainly learned my lesson! I used 1 box of Arrowhead Mills Vanilla cake Mix and added about 1/4 Cup of Cocoa Powder to the batter to make it chocolate and it tasted fine. I don't know how they would compare to homemade oatcakes in Scotland or Ireland, although in my search for a recipe, I've found that there are many varieties, including sweet or yeast-leavened.  This recipe is based on one I found in a Saturday Evening Post many years ago--which I adapted, lost, and then had to recreate from memory.  However, I am quite pleased with the final result!  Everyone seems to love them.  I think they are traditionally served with cheese, butter, jams, etc. but we just eat them plain. Obviously, you could use whatever nuts you fancy or a mixture of several different nuts.  Once youve melted your chocolate, butter and marshmallows, no more cooking is required.  Great for lunchbox snacks, picnics and potlucks!  For the best results, use top quality chocolate rather than cooking chocolate.  Ive suggested Lindt, and if you choose one with orange or peppermint chips, youll add another subtle flavour.  Ive wondered also about using a fruit juice instead of the water but havent tried this yet.
