Griswold Inn Indian Pudding

The Griswold Inn, built in 1776 in Essex, Connecticut, has promised first-class accomodations to travelers since the stagecoach-steamboat days. This traditional molasses-rich dessert isn't as popular as it used to be, but it remains a very tasty treat. Despite the title, early New England settlers did not adapt this recipe from native Americans: 'Indian' refers to the 'Indian meal' used - cornmeal, as wheat flour wasn't available. Serve warm with vanilla ice cream. -- posted by Molly53

Iranian Saffron Rice Pudding (Sholeh Zard) (Dairy Free & Glu

This beautiful traditional Persian dessert is now a favorite of ours. This version is not overly sweet. Saffron, one of the most precious and most expensive spices in the world gives this pudding it's beautiful golden colour and rewarding flavour. Recipe by Nahal Lovessert, modified from http://www.lovescool.com.
Soft & Chewy Oatmeal Raisin Cookies - Gluten Free

A recipe from www.celiac.com that I have altered slightly. If your flour mix does not include xanthan gum, add 1 T of ground flax seed (although you may add it anyway as the outcome of the recipe won't be affected). It is also very important to chill the dough before you bake them - they won't spread as much. NOTE; If you are making this recipe as a non-gluten free recipe using regular all-purpose flour, do not use quick oats as the recipe was made with regular long cooking oats. -- posted by LARavenscroft

Gluten Free Cream Puffs

As a child, I remember making cream puffs with my grandma and my dad. We took a short cut in the filling department though and just used Cool Whip instead of a Bavarian cream. I like them both ways, but the Cool Whip does lighten up the end product, not only in calories and fat content but they are not as filling. They are super easy to make so I hope you try them out and let me know what you think!
Gluten-Free Creamy Breakfast Rice Pudding

This was something I came up with this morning, because I was tired of nut/seed granola and cold milk. It turned out delicious!
For a lower sugar content, try using a packet of stevia in place of the agave nectar. You could also substitute almond milk or even water for the milk. -- posted by Jainene

Berry Yoghurt Smoothie

I got this recipe from Sarah Owen's book "The Top 100 juices", published by Lifetime Distributers, Castle Hill, Australia.
Sarah Owen says "The super-nutrient vitamin C is needed for more than 300 diferent processes in the body, but it is easily wiped out by smoking, pollution and stress. Found in abundance in berries, vitamin C and other antioxidants help to quash the damaging free radicals that are associated with many illnesses."
The original recipe calls for natural bio yoghurt to be used, but any yoghurt will do.
This makes a large amount of smoothie, and if you're making it just for yourself, I'ld recommend halving it.
I hope you enjoy this healthy - but still tasty - smoothie :) -- posted by TALIA #3

Teff Muffins With Fruit & Nuts

The grains of teff are so small, the bulk of the grain consists of the bran and germ. This makes teff nutrient dense as the bran and germ are the most nutritious parts of any grain. This grain has a very high calcium content. It is considered to have an excellent amino acid composition, with lysine levels higher than wheat or barley. Teff is high in protein, carbohydrates, and fiber. It contains no gluten so it is appropriate for those with gluten intolerance. Teff flour, brown rice flour & arrowroot flour can be purchased at whole food stores. -- posted by lwatkins

Sour Cherry and Almond Spoon Sweet

Another yummy spoon sweet recipe! This particular recipe is from figbaywine.blogspot.com***************************************************************************************"This description of what a "spoon sweet" is is from "The World Of Greece: Odyssey" Magazine - May/June 2008 issue. "Syrup-laden baklavas, karydopitta, or even the thicker, cakey ravani-style desserts are served on holidays and special occasions, but the everyday sweet is customarily a spoonful of a glyko koutaliou. To this day, spoon sweets are a traditional offering, literally a sweet welcome for visitors into the Greek home, whether they’ve come for a chat or on a more formal occasion. Spoon sweets are also served at the village kafeneion, a teaspoon-sized serving on a small dish set before the guest or visitor with a glass of iced water and a cup of strong Greek coffee. Traditionally each household put up their own spoon sweets according to the availability of fruit in season. Sweets were made in small quantities, usually to recipes handed down from one generation to the next." * * * **************************************************************************************

Simple Flourless Chocolate and Chestnut Truffle Cake With Fresh

This is absolutely DIVINE! The texture is smooth and somewhere between a chocolate cake a chocolate truffle. If you love chocolate, you'll love this as its just out of this world. A good substitute for those who don't like Christmas pudding, though I bet everyone will go off Christmas pudding once they taste this! Double or Triple the quantities for a larger party, a small slice is usually enough as its very rich. The brandy is optional and comes through more as a subtle flavour than anything else but feel free to add more to the cream if you prefer a stronger flavour (I do). If I make this during the summer I would leave out the brandy. Also this cake needs to be made at least a day in advance and it freezes well too. -- posted by robd16

Gluten Free Chocolate Chip, Raisin, Walnut Cookies

These relatively healthy absolutely delicious chocolate chip cookies are a gluten-free adaptation of my favorite chocolate chip cookie. The raisins keep the cookies moist but they are hardly noticeable. It is easiest if you use a pre-made brown rice flour mix (Food Philosopher®) but here is the breakdown of those ingredients*:
1 1/2 cups brown rice flour
1/3 cup potato starch
8 teaspoons tapioca flour
1/2 teaspoon tapioca flour.
I have had success with other gluten-free flour mixes but this one works the best for me. -- posted by Yankiwi

Pumpkin Pie (No Sugar)

This came from my recipe #401813, in a desire to make pumpkin pie with no sugar. Here in England, we don't really have access to tinned pumpkin, and I don't buy things in tins, so I make this with fresh pumpkin or squash. It's a tasty pie, or could be baked as a custard. I bake it with a grain-free crust, mixing ground almonds, egg yolk and a bit of honey. Preparation time does not include preparing a pie crust. -- posted by Aimee88

Gluten Free Pumpkin Chocolate Chip Muffins

I have tricked several wheat eaters with this recipe. Very tasty and not gritty like typical gluten free recipes. Our normal grocery store carries soy flour and shouldn't be too hard to find. Definitely worth using! Adds protein and fiber and I think it helps with texture. You could probably get away with omitting the teaspoon of guar gum, but I have it on hand and use it.
I've used both milk, lactaid and soy milk for this recipe without any problems. I have also used pure pumpkin and pumpkin pie mix (this will make the batter more watery, so bake a little longer). You don't have to use the chocolate chips, they'll still be quite tasty! -- posted by Zizek

Incredible Gluten Free Butter Cookies

These cookies are so delectable it's hard to believe they are gluten free ;-)
Shortbread-like and not overly sweet, they keep very well and make a perfect holiday gift! The recipe is a result of experimenting with all kinds of cookie recipes, combining things I liked and then patiently changing the resulting recipe slightly, time after time until it met my expectations. I hope it will meet yours as well :-) The dough is easy to roll out for cutting and also suitable for using a cookie press. I often freeze them raw in large amounts to bake later, but even without freezing these cookies hardly spread.
If you need to avoid lactose, you can replace the butter with 4/5 dairy free margarine and 1/5 Ghee so as to have the buttery taste without the lactose. -- posted by Suzy mom to 2

These crisp cookies are naturally gluten and dairy free. Preparation takes only 10 minutes and is very easy.
Creamy Coconut and Rum Baked Pineapple

I came up with this as a solution to leftover coconut milk and a fresh pineapple. And even on Weight Watchers, it was worth saving points for this dessert. The whole recipe has a total of 8 points. The rum for this dessert should be golden- a light rum will not produce the same depth of flavour. Number of servings will depend on the size of pineapple used- increase the sauce if using a large pineapple. -- posted by Shuzbud

The Easiest Flourless Chocolate Cake

I found this recipe on the food network's website, and it is the easiest flourless cake I have come across. Especially since you don't have to separate the eggs. The key is in whipping them for a long enough time to make them increase in volume. -- posted by Chef #497345

I got several recipes from a Korean friend at the university. This is one of the few sweets recipes - a no bake gluten free candylike cookie which looks quite pretty.

Valentine's Day is approaching, which means lots of bad candy and useless merchandise will be sold in the next week or so. Over here, we're having fun making our own (healthier) candy --especially these Chocolate Raspberry Bonbons.
