			<description>Onions and garlic are slowly pan-cooked until caramelised and then used as the base of a delicious frittata.  Adapted from a recipe on the Simply Great Recipes website.  Obviously you can use your own pesto recipe or a pesto from your favourite deli in place of the commercially available one.  I left the Leggo's pesto named in the original recipe in this recipe, as that makes for a quicker version when time is limited. 			<description>Try this for breakfast: creamy mashed potato, with tangy Sauerkraut and smoky bacon in a pattie!  Adapted from a recipe on the Simply Great Recipes website.  The original recipe is obviously an Edgell recipe and listed in the ingredients 1 cup (100g) Edgell Instant Mash.  Zaar would not accept this as an ingredient, so I have replaced it with 2 cups of mashed potato.  If you do track down - or regularly use - Edgell Instant Mash, the step now removed from the instructions is &amp;quot;In a medium bowl combine the Edgell Instant Mash and 1 1/4 cups of boiling water&amp;quot;.  To use canned instant mash would obviously be a time-saver! So that the omelet retains its lightness, I'd be disinclined to add anything else to it, but I'll certainly be making this with some mushrooms.  YUM!  OOPS!  Chocolatl observed - quite rightly - that I'd omitted the butter from the Ingredients list. It was by far the most scrumptious recipe that I made. It could also be made into a bread, but I made muffins. This is definitely my new default banana bread recipe! Imade a double batch and ended up with 39 muffins. I made half with the called for maple syrup/pecan topping and half with a cream cheese topping. To make the cream cheese topping, I whipped 6oz cream cheese with 1/4 cup brown sugar and 1/4 cup maple syrup. The extra fine grind prevents the gritty texture often found in gluten free baked goods and gives the muffins a light crumb. I've listed individual flour ingredients for bakers with a stocked gluten free pantry but you can cheat and buy this flour blend premixed from Authentic Foods as GF Classics Blend.

			<title>Vegan Spinach-Mushroom Quiche</title>

			<description>My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower. 			<title>Pineapple Oatmeal Pancakes (Gluten-Free)</title>

			<description>Oh my gosh these are AWESOME!  This can of pineapple on the counter was calling to me, and my husband can't eat wheat, so if I make pancakes they're gonna have oats in them.  Plus, the Tahitian Pancakes came up on Heroes in the past week or so, so that's on my mind.
I combined two different recipes that I found online, one for pineapple pancakes and one for oatmeal pancakes.  Neither one is like this new version though.  SO AWESOME!  
One last thing, I used coconut milk instead of cow milk, since my husband is also on this non-dairy kick.
