You can serve this as described or instead of the pitas you can serve with balls of soft cheese, sliced tomatoes, or cucumbers. Keeps well also unrefridgerated. -- posted by tinala

Lobio Mtsvanilit (Herbed Kidney Beans)

During college I took a Russian history class where, for a grade, we were to bring in an ethnic Russian (or former USSR) dish. This one is from Georgia that I found off of the "www.ruscuisine.com" website. The one I've posted here is a slightly modified version to make it easier (no soaking/cooking of beans).

Now I make it whenever I want something flavorful and refreshing. -- posted by blueyedwineaux

Khachapuri (Georgian Cheese Bread)

This Georgian national dish comes in many variants. This recipe normally is made with matsoni yogurt (Bulgarian or Turkish yogurt is ok) and sulguni cheese. Khachapuri can be found at numerous snack kiosks and from street traders at markets or subway stations. In times of crisis, it is also sold from a hand extended from the window of a ground-floor apartment. It should never be missing from the everyday table or the buffet table at parties. -- posted by Celticevergreen

Egg Salad in Walnut Sauce (Kwerstkhi Nigozee Satsabelly)

Georgian cuisine frequently uses walnuts, as in this unique egg salad. A small amount of hot pepper flakes are included in the recipe, but the amount can be increased according to tolerance (make sure not to overpower the flavor of the sauce!). Recipe adapted from "Sephardic Cooking" by Copeland Marks.

NOTE: I haven't tested this recipe yet, but you may want to try blending in the egg yolks along with the walnut sauce, and serve it like devilled eggs. -- posted by Sephardi Kitchen

West Georgian Bazhe Sauce With Chicken

Entered for safe-keeping for ZWT. From Besiki Sisauri's website on Georgian Cuisine. This is a very quick sauce to serve over hot cooked chicken. Reserve chicken broth (and chill it) to thin sauce slightly. A food processor or grinder can be used on the walnuts and garlic. -- posted by KateL

Vegetarian Kharcho (Spicy Georgian Soup)

This is a spicy, hearty Georgian soup. It is traditionally made with meat, but I adapted a vegetarian version from a Georgian cookbook. It calls for the khmeli-suneli spice mix, of which there are as many varieties as there are cooks who make it themselves. The khmeli-suneli spice mix is available from Russian food stores, or can be mixed to your own taste. One recipe of this mix is Khmeli-suneli spice mix from Georgia. -- posted by Anya
