Grandma Norma's Jell-O Salad (Cranberry-Apple Jell-O Salad)

This is called "Grandma Norma's Jell-o" in my family because my cousins' Grandma Norma used to make it for holiday dinners. Now that Grandma Norma hasn't been with us for many years, the tradition lives on as my Grandma Katie makes it each Thanksgiving. It's my favorite part of the Thanksgiving dinner, and I always get to take home all the leftovers. Last year Grandma Katie finally gave me the recipe, so I thought I'd share it with you all. Do it in a nice cut glass bowl for easy serving, or use a mold if desired. The walnuts are nice but not necessary, and we don't use them if small children will be dining with us. Cook time is chill time. -- posted by ketchupqueen

Grandma's Jello Salad (Strawberry)

This dessert/salad brings back such fond feelings. This is the recipe my grandmother served the kids 2-3 times a year when we were all together. After she died no one could find her recipe for this. I guess that is what the internet is for! When I surprised the family with this recipe at Christmas dinner, both my aunt AND uncle cried. I hope your family enjoys this dessert as much as mine has. -- posted by Mariah

Michelle's Most Delicious Cassava

"Cassava" is a dessert from Guam. Traditionally served at barbecues these chewy tapioca and coconut bars are sure to be a hit anytime. Cassava is what the root of the yucca plant is called and tapioca is derived from it. It is also the main ingredient in "cassava," the dessert. This is a recipe given to me by Michelle Camacho during my stay on the island. -- posted by WiTay

Cold Double-Berry Souffle

Souffles are generally for the ambitious, but they are well worth the effort. While this one is not your traditional kind (there is no rising involved and worries that it will collapse), this one can be made ahead and brought out for a show-stopping finale to your summmertime get-together. Prep time does not include 2 hours to chill. Adapted from Good Food Magazine, July 1987. -- posted by JackieOhNo!

Red, White & Blue Jello Creme

I have been making this dessert for years, and it never fails to draw praise. While some people look down their noses at Jello desserts as being too kitsch, I believe taste comes first. This is light, refreshing, and it makes a beautiful, patriotic presentation. Preparation time does not include chilling time, which is at least 3 hours, so plan accordingly.
Summer Fruits Terrine or Bodacious Berries in Wine Jelly!

This is one of my favourite recipes, when the soft fruit season arrives, I try to make this at least once......and it is STUNNING if served as the finale to a dinner party. This is an unashamed copy of a recipe by Delia Smith, with very few modifications of my own, as she gives such great ideas and suggestions on how to make this elegant and LOW fat dessert. The directions may seem long-winded, but they are really just useful tips on how to weight the terrine down overnight. Serve this in slices with a red berry coulis and crème fraîche or cream. Fruit juice can be used if this is being served to children or to anyone who does not drink alcohol - I suggest a red fruit juice. -- posted by French Tart

Easy Orange Salad/Dessert

I'm prefacing this recipe with I'm pregnant and have some strange cravings these days! I really like the combination of cottage cheese and sour cream. I came up with this salad as a result of looking over oodles of recipes! Any flavor of jello will work - you may want to change the fruit to compliment the jello flavor you are using.
**Cooking time is chilling time.
Updated -- I remade this and agree with reviewer, the jello does need to be dissolved or it will be gritty. This is not a sweet salad, so if you want it sweeter, you would need to use whipped cream or add sugar. -- posted by kittycatmom

Tropical Fruity Jello

To make jello a little more interesting, I added my favourite tropical fruits and it worked beautifully! This is so refreshing on a hot day and the low sugar version is great for waistline-watchers. I use sugar free jello but feel free to use a small packet of regular peach jello. I have been told that fresh pineapple prevents gelatin from setting so only use canned for this recipe.
Sugar-Free Strawberry "shortcake" Dessert

This is sooooo easy and light - and YUMMY!! For the 4th, I added the layers of blueberries and blue Jello, but I usually just use strawberries.
When I got this recipe, it called for regular cakes and Jello, but because there are some diabetics in my family, I tried using the sugar-free angel food cakes (Walmart) and Jello - no one can tell the difference. Everyone loves it and because it is so easy to do, it is one of my all-time favorites!
Old-Fashioned English Summer Berry Jelly and Ice Cream!

Little wibbly-wobbly ruby red jellies with mixed summer berries, so cooling and great with ice cream. There is nothing I love more than taking a basket to the end of my garden to pick an assortment of ripe summer berries when they are in season! The sense of satisfaction at picking your own fruit is wonderful. Although I have called these little jellies “English” summer berry jellies, I DO make these in France of course - it's just that the berries remind me of my grandparent's gardens and picking the fruit when I was little…………...plus, the combination of berries is the same as a traditional English Summer Pudding recipe! I make these in little vintage metal moulds, they look so pretty served this way; you can of course make this recipe in a large mould, but DO allow extra time for the jelly to set. -- posted by French Tart
