The only thing I did was cut the recipe in half, make it in a 6-inch sprinform pan and use chocolate chips instead of semi-sweet baking chocolate. I also like the shortbread crust with a twist: brown sugar!  And it's fancy enough for company and cheap and easy enough for a Monday night dinner dessert. 			<description>This I developed for my mother to satisfy her sweet tooth but not upset her diabetes.  You can make it in one large bowl or as individual serves in parfait glasses and if you want to be a little decadent you could add grande marnier (or other orange flavoured liqueur) to the ricotta cream instead of the reserved juice.  You could also try other combinations of fruit and jelly.  Have not included setting/refrigerator time.  The jelly packet I use (Australian) requires 500ml (2 cups) of liquid to make. 1&amp;gt; The water must be rolling boil hot.  Otherwise the gelatin will not dissolve quick enough.   I use a Pyrex measuring cup and the microwave.

2&amp;gt;  Unless you want &amp;quot;gummy yarn&amp;quot;, the whipped topping must be completely thawed.  I thaw it out in the fridge for a couple of days before making.  (a half frozen center can spell disaster).

3&amp;gt;  Be prepared to move fast.  This stuff sets very quickly. (IE: have your mixer ready, spatula handy, dish ready)

4&amp;gt;  This is actually diabetic friendly (although not sugar free).

Strawberry flavored gelatin may be substituted for the raspberry flavor.

1. Line a 9&amp;quot; by 13&amp;quot; pan with graham crackers (one layer).
2. Stir together the applesauce and gelatin. Mix well.
3. Spread the applesauce mixture in a very thin layer on the graham crackers. 
Cover with thin layer of whipping cream.
4. Repeat steps 1-4 three (3) times.
