Raspberry Icebox Dessert

Found this recipe in "Taste of Home's" 2004 Holiday Recipe Card Collection. Served for my church womens group mtg. and they loved it. A little fussy, but well worth the compliments. Do need to be aware of folks who may have a problem with seeds. Set a note by dish or inform your group. A refreshing, creative way to present the wonderful taste of raspberries. -- posted by Suzanna Marie

Easy Orange Salad/Dessert

I'm prefacing this recipe with I'm pregnant and have some strange cravings these days! I really like the combination of cottage cheese and sour cream. I came up with this salad as a result of looking over oodles of recipes! Any flavor of jello will work - you may want to change the fruit to compliment the jello flavor you are using.
**Cooking time is chilling time.
Updated -- I remade this and agree with reviewer, the jello does need to be dissolved or it will be gritty. This is not a sweet salad, so if you want it sweeter, you would need to use whipped cream or add sugar. -- posted by kittycatmom

Orange Buttermilk Jello Salad

This is a favorite from my childhood. I always use orange jello, cause it's the way mom made it. But you could easily substitute other flavors. Very low fat if you use fat free coolwhip. Keeps well for days, and is great to bring for potlucks. Can be made in a pretty jello mold or just in a bowl and scooped with a spoon. -- posted by Megan's Mommy

Blueberry Gelatin Salad

This is a delicious salad or dessert that requires little effort but looks and tastes heavenly. I used raspberry gelatin in place of cherry because it's what I had. I also threw in some raspberries with the blueberries. Don't make your cream cheese mixture too soon or you'll sample a little too much before the jello is ready...cooks beware! I used frozen fruit, but I'd love to try it when fresh fruit is in season. I found the recipe in Taste of Home Parties, Potlucks, and Barbecues from Mildred Livingston in Phoenix, Arizona. Cook time excludes chilling time. -- posted by AmyZoe

Velma's Strawberry Cream Cheese Salad Mold

Sugar-Free Strawberry "shortcake" Dessert

This is sooooo easy and light - and YUMMY!! For the 4th, I added the layers of blueberries and blue Jello, but I usually just use strawberries.
When I got this recipe, it called for regular cakes and Jello, but because there are some diabetics in my family, I tried using the sugar-free angel food cakes (Walmart) and Jello - no one can tell the difference.
Old-Fashioned English Summer Berry Jelly and Ice Cream!

Little wibbly-wobbly ruby red jellies with mixed summer berries, so cooling and great with ice cream. There is nothing I love more than taking a basket to the end of my garden to pick an assortment of ripe summer berries when they are in season! The sense of satisfaction at picking your own fruit is wonderful. Although I have called these little jellies “English” summer berry jellies, I DO make these in France of course - it's just that the berries remind me of my grandparent's gardens and picking the fruit when I was little…………...plus, the combination of berries is the same as a traditional English Summer Pudding recipe! I make these in little vintage metal moulds, they look so pretty served this way; you can of course make this recipe in a large mould, but DO allow extra time for the jelly to set. -- posted by French Tart

Orange Coffee Jello

I love coffee jello and I love the combination of coffee and orange, so I came up with this. For the orange flavour I used orange essence # 340691. For the sweetener I just made up the amount of 1 tablespoon, but as I used rice syrup and don't make my jello really sweet, I'd suggest that you just make your coffee as sweet as you're used to. For the gelatine I used 3/4 bag of ground gelatine (1 bag is for 2 cups of liquid) which I soaked in the orange essence and two tablespoons water and then stirred into the still hot coffee. As packages of ground gelatine don't seem to be listed, I suggest 5 sheets gelatine which you should soak and dissolve according to package directions. Prep / cook time does not include chilling time. -- posted by Mia in Germany

Strawberry Pretzel Squares

A fantastically delicious dessert that utilizes fresh berries - so tasty. If fresh berries aren't available, substitute 1 package (600g) frozen whole strawberries, sliced. Stir into jelly powder along with cold water. Refrigerate 10-15 minutes or until thickened, then spoon over cream cheese layer. Continue as directed. -- posted by Chef mariajane

From Bon Appetit, August 1998. Make the gelatin at least one day ahead so that it has time to set. For a sophisticated dessert, layer the blackberry gelatin with sweetened vanilla whipped cream and a few sweetened blackberries in parfait glasses or wine glasses. If only making gelatin, will serve four. -- posted by swissms

Nickey’s Strawberry-Applesauce Jell-O Ring

This is my favorite way to make jell-o for office parties and when entertaining. Because you have to wait between layers for the jell-o to set, I usually start it a day or two before I need it ... I do one layer before going to bed (or before leaving for work) then the second layer when I get up or whenever I have time like after work the next day.

I usually have a little extra mix left over from layer two. I just put it in a small container and enjoy it for a snack.

You will need a jell-o ring mold to make this as written but you can use anything you want to like little custard cups, etc.

Water comes to a very fast boil so it takes almost no time at all except for the refrigeration time. The time posted does not include refrigeration time. Your number of servings will depend on how big you cut your slices. -- posted by marisk
