Oyster Candy

No! It doesn't have oysters in it. It's smooth, creamy chocolate. I found it in another one of those church cookbooks I love.
The recipe is simple but a bit tempermental, follow the directions carefully. I don't really know how long it takes from start to finish. It depends on how long it takes the chocolate to get to the right consistency. -- posted by Joanne #6

Five Pounds Chocolate Fudge

I got this recipe out of Southern Living several years ago.The magazine credits Mrs. R.D. Walker of Garland, TX for the recipe. It is the only fudge I make, because it does make a large amount, and I find it easy to make. I am posting this for safekeeping, since I have lost it more than once. It does matter that you use good chocolate chips. Once I made it with a not-quite-so-good chips and it was pretty nasty.Cooking time is a guess, it doesn't really take too long, but I have never timed it. -- posted by JohnsCutie

Microwave Fudge

Not only is this the easiest fudge to make, it's also the best tasting...well, at least in my opinion. The problem with a lot of fudge recipes is the need for cooking on the stove and a candy thermometer. This is so easy you can have the kids help you make it. UPDATE: I reduced the amount of salt listed due to reviewer feed back and listed it as optional. -- posted by Marney

Mom's Fantasy Fudge

This is a fudge recipe my mom made every Christmas. The fudge always disappeared long before Christmas came. She gave it to all of our neighbors.
This is super quick and super easy. It also sets up super fast so have your buttered pan prepared.
Fool You Fudge

A simple never-fail fudge that is easy to make and is so rich and velvety that it'll fool you into thinking it was from a gourmet candy shoppe. I adapted this from a recipe my mom used and passed on to me several years ago. I love this recipe because you can put a variety of nuts and/or dried fruits ( i.e. finely chopped cranberries, cherries and of course, raisins) in it so you can make it for any occasion. It also works well with any kind of chips/morsels you want to use,( i.e. butterscotch, white chocolate, even special dark chocolate chips, yum....) just be sure to buy a quality chocolate to begin with like Ghirardelli chips, which are my personal favorite and found in most grocery stores. You'll also want to make sure you use a good butter and not margarine, although the recipe will work with it the fudge won't taste as rich and creamy. -- posted by Dawterofmammon

Daisy's Fudge Squares

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by my late Grandfather and my two older male cousins. I remember them cooking this one summer when Nana taught all of the cousins how to 'cook' and we made our own family cookbook. Daisy refers to Daisy Duck and I think the recipe came from a magazine. The page the recipe came from is framed on my Nana's kitchen wall. -- posted by Sarah_Jayne

Chocolate Cayenne Truffles

This is a recipe I found on the Internet in several different places. I love it, though I've found that some people find it too intense to enjoy. If you know someone who likes spicy food, this might not be a bad Valentine's Day treat. It starts off cool and sweet, but is spicy when it melts on your tongue. The ginger on the outside helps give a little bite at the start. -- posted by korvus

If you want chocolate fudge, this is it! I got this recipe from my mother-in-law. It's a Christmas staple in her house, and it's my husband's favorite fudge. This is an easy recipe that can be made anywhere from in the car on a road trip to camping or even at home in front of a good movie.
Note: this recipe may be divided into smaller portions and made in sandwich bags so that every kid has their own bag. -- posted by B.A.B

Chocolate/Espresso Pour Icing

This cake icing is perfect for a 9x13 inch cake left in the pan. It is rich with chocolate flavor and married with one of chocolate's natural partners, espresso. I added instant espresso powder to the milk called for in the recipe, but I suppose if you wanted to omit the milk, you could just add the equivalent of freshly brewed espresso with it's exquisite crema. Or even go total latte.Getting the espresso flavor in there is the key. -- posted by Citruholic

Grandma's Easy Mint Fudge

I looked forward to Grandma's fudge every Christmas, and for years I pictured her slaving over a hot stove making this from scratch. When she gave me the recipe, I was shocked at how easy it was.
Country House Fudge- Martha Dixon

My Mom makes this amazing fudge every year at Christmas. It's very smooth, creamy, gooey and rich- not all dry and hard like alot of recipes I've tried. It's unlike any recipe I've found. You'll love it. You'll blow everyone away when you serve this! It calls for 4 cups nut meats but you can substitute those for whatever goodies you like (my all-time favorite is cherries). You can also add different flavorings to make your favorite! My Mom has made this with crushed cookie crumbs, nuts, coconut, peanut butter, caramel, cherries, raspberry flavor, mint flavor, rum flavor marshmallows... there are so many I can't remember them all. The recipe comes from a cookbook called "Martha Dixon's Copper Kettle Cook Book" from 1963. Martha Dixon was quite well-known at that time and had a cooking TV show that was really popular back then. There was no Food Network back then. It was Julia Child and later the Galloping Gourmet... remember them? Anyway, her show was on TV for several years. Some of you may remember her. -- posted by Realtor by day, Chef by night

Rich Mallow and Honey Almond Fudge

I’ve adapted this recipe from one I found on the Simply Great Meals website. The original recipe uses pistachios; I’ve used honey-roasted almonds. Obviously, you could use whatever nuts you fancy or a mixture of several different nuts. Once you’ve melted your chocolate, butter and marshmallows, no more cooking is required. Great for lunchbox snacks, picnics and potlucks! For the best results, use top quality chocolate rather than cooking chocolate. I’ve suggested Lindt, and if you choose one with orange or peppermint chips, you’ll add another subtle flavour. I’ve wondered also about using a fruit juice instead of the water but haven’t tried this yet. The conversions you may need: 90g = 3oz; 250g = 8oz. -- posted by bluemoon downunder

Dark Chocolate Cranberry and Cashew Fudge

I recently made JackieOhNo!'s recipe #386677 and that showed me that it can actually be pretty easy to make fudge. So, it got my creative juices flowing and I decided to try to play around and see what I can do come up with a new fudge recipe. I love dark chocolate and so that is the direction I went and threw in the other ingredients to try to cut through the richness.
