Fatal Fudge

I got this recipe years ago from the Wayne Brady show for Fudge Fatale.
Be very careful when making this recipe. The emulsion you create can splatter and burn as it’s cooking, so use caution. This recipe is anything but foolproof . It can easily be ruined by cooking too hot or too long. You should buy enough ingredients to make it several times because it takes practice to get it right. -- posted by Amy BC

Cinnamon Fudge

This fudge would be great served at Halloween or Thanksgiving due to the flavor and color. The cinnamon flavor is actually very mild and the fudge turns out very creamy and soft. For ease in cutting and to avoid breaking it I heat my knife under hot tap water, wipe dry and then cut in long strokes without lifting the knife up and down. The cook time includes time to cool. -- posted by Luby Luby Luby

Strawberry Fudge

The strawberry flavor is a refreshing change from chocolate fudge. I chose to add the pecans, but if you don't care for them you can leave them out . Also, be sure to stir constantly because it will stick to the bottom of the saucepan if you don't. The cook time includes time for cooling. -- posted by Luby Luby Luby

Candy Cane Fudge

Every year, my best friend and I get together to do our holiday baking together. We found a new recipe last year, which we decided to try. It turned out fantastic. Both of our families really liked this fudge. So I thought I would post the recipe here, for others to enjoy. It's quick to fix (only about 15-20 minutes) and it's very easy as candy-making goes. The cooking time listed below is the minimum chilling time needed for the fudge to "set" well enough to cut into individual serving pieces. -- posted by NorthwestGal

Fire, Ice and Fudge

i found this recipe in our regional magazine "Saltscapes" and I'm going to have to give you the preface to this recipe - here goes - "Kids used to skate from the neighboring town to the Mattinsons' property on the point. You could skate right into the shore around the banks, where an old tree had lodged. "Two or three of us would grab a hold of it and break it off, dragging it down to the fire" says Donn "It was some nice to have a fire to skate around and get warmed up." "Gran and Mother would make a god-awful amount of fudge, and we'd all crowd into the house. Sometimes we'd have a bit of music and a dance or something." Now doesn't that sound like the old days?? lol Here's the recipe for Granny Mattinson's Fudge - -- posted by Chef mariajane

Microwave Fudge

So easy, yet so moreish!

To check for 'hard ball stage' - when the mixture becomes thick and caramel coloured, drop a small amount into a bowl of iced water. It should form a fairly firm ball quite quickly. If not, cook for 2 minutes more and try again.

Chocolate Peanut Butter Crispy Fudge

This sounds yummy! You could probably leave out the cereal if you wanted and just layer the chocolate and peanut butter layers, or use dried fruit or nuts. I thought spreading the chocolate mix in a pan and swirling in the peanut butter mixture sounded good too. -- posted by IAcupcake

Country House Fudge- Martha Dixon

My Mom makes this amazing fudge every year at Christmas. It's very smooth, creamy, gooey and rich- not all dry and hard like alot of recipes I've tried. It's unlike any recipe I've found. You'll love it. You'll blow everyone away when you serve this! It calls for 4 cups nut meats but you can substitute those for whatever goodies you like (my all-time favorite is cherries). You can also add different flavorings to make your favorite! My Mom has made this with crushed cookie crumbs, nuts, coconut, peanut butter, caramel, cherries, raspberry flavor, mint flavor, rum flavor marshmallows... there are so many I can't remember them all. The recipe comes from a cookbook called "Martha Dixon's Copper Kettle Cook Book" from 1963. Martha Dixon was quite well-known at that time and had a cooking TV show that was really popular back then. There was no Food Network back then. It was Julia Child and later the Galloping Gourmet... remember them? Anyway, her show was on TV for several years. Some of you may remember her. -- posted by Realtor by day, Chef by night

Smooth Golden Fudge

A soft fudge flavoured with golden syrup an vanilla. Itnstead of golden syrup you can use corn syrup or honey. Or mix in melted chocolate before leaving to set. I've been trying to make a soft fudge for ages now, and this is the first that worked! It's all in the technique of cooling. A sugar thermometer is advised, as it makes things alot easier.

The time on this recipe is guessed..i don't time myself when i make things. Alot of your time will be taken up waiting for the syrup to cool to the correct temp, so be patient, and have a book handy! -- posted by Damie-anne

Easy, No Bake Rocky Road Fudge (Also Gf)

This is a recipe I found in a Pampered Chef cookbook while looking for good things for my mom (who had been recently diagnosed with a wheat allergy) to eat. This recipe is simple, fast, and really pleases a chocolate-loving crowd.
I usually use fewer marshmallows than the recipe actually calls for b/c I don't care for them very much, but nobody has ever complained when I don't. :D -- posted by Chef #1284564

Sheila's Can't-Fail Fudge

This is the ONLY fudge recipe that I make, which everyone looks forward to around the holidays. My niece Alisa saves her empty container from the year before and brings it to me for her annual refill. She loves to help make this, and it is so easy, even a child can do it! I personally prefer walnuts in my fudge, but it's great either way. It makes a nice gift when presented in a holiday tin.
Rich Mallow and Honey Almond Fudge

I’ve adapted this recipe from one I found on the Simply Great Meals website. The original recipe uses pistachios; I’ve used honey-roasted almonds. Obviously, you could use whatever nuts you fancy or a mixture of several different nuts. Once you’ve melted your chocolate, butter and marshmallows, no more cooking is required. Great for lunchbox snacks, picnics and potlucks! For the best results, use top quality chocolate rather than cooking chocolate. I’ve suggested Lindt, and if you choose one with orange or peppermint chips, you’ll add another subtle flavour. I’ve wondered also about using a fruit juice instead of the water but haven’t tried this yet. The conversions you may need: 90g = 3oz; 250g = 8oz. -- posted by bluemoon downunder

Dark Chocolate Cranberry and Cashew Fudge

I recently made JackieOhNo!'s recipe #386677 and that showed me that it can actually be pretty easy to make fudge. So, it got my creative juices flowing and I decided to try to play around and see what I can do come up with a new fudge recipe. I love dark chocolate and so that is the direction I went and threw in the other ingredients to try to cut through the richness. I included a couple hours chilling time in the cooking time but really the longer you leave it the better it gets. -- posted by Sarah_Jayne

St. John's Honey Fudge from the Isle of Man

This recipe was posted for the British Isles Culinary Cruise 2009. It comes from the Isle of man Community Website: www.iofm.net. It is traditionally made and sold at the Tynwald Fair, which is the oldest surviving fair on the Isle of Man. It is still held at the village of St. John's every 5th July. The chocolate probably came into the recipe because smugglers along the coast introduced exotic foods and spices. This fudge has a smooth, chocolatey flavor with a hint of honey. -- posted by bakedapple42

Cobweb Fudge

The walnuts can be omitted if preferred. Note this is formed in a ROUND pan. It makes one big web and is served by cutting into small wedges, rather than the usual squares. Use superfine sugar (not to be confused with confectioners' sugar), rather than granulated into order to avoid a grainy texture. If the melted chocolate begins to harden in the bag, microwave it in short bursts for a few seconds at a time. -- posted by Cecily Parsley
