			<description>This sounded like it would be a delicious cheesecake with a tart palate cleansing  piquancy that would allow it to be served after a summer meal of Chesapeake steamed crabs &amp;amp; pickled shrimp.  Mmmmm, summer is here!
The cook time includes 140 minutes of chilling time as well so it is really not cooking forever! Please note I will chill this overnight to let the custard firm up &amp;amp; better develop its flavor.

			<description>Mmmm, cheesecake!  A healthy, guilt-free version with lots of living enzymes.  If you use raw ingredients, and virgin, unrefined, coconut oil (preferably organic), this recipe is so good for you!  It looks like a lot of coconut oil, but it works out to less than 1 tbsp per slice, and that's less than the recommended daily amount to get all those wonderful fatty acids they're talking about with coconut oil these days.  So, well, hey, have a 2nd slice!  :-)  We love this cheesecake and we're rarely without one in our freezer &amp;quot;just in case&amp;quot;.  There are lots of raw cheesecake recipes floating around the 'net, and after trying many of them, this is our version, taking little bits of each and doing what we like with it. Kimmswick is a very small and special little town that has lots of shops filled with antiques and gifts. I am sure you know the type. The also have one of the older St. Louis riverboats there, the Huck Finn, I believe. Not at the restaurant! But down the street at the Mississippi river bank. I often visit Kimmswick when I go back to see my parents, who live not too far from there. 			<description>I love the combination of chocolate and orange and they unite wonderfully in this recipe. We usually make this for Christmas but it would be good anytime of the year.

If you cannot find orange and tangerine marmalade, substitute orange marmalade. I like to drizzle chocolate ganache over the marmalade glaze which creates a beautiful presentation. Make the cheesecake 1-2 days in advance to allow the flavors to bloom.

			<description>This is borrowed and adapted from a chocolate cheesecake recipe on the Food Network.  Nice and rich, easy to make.

For the cranberries, get some whole berry sauce, and stain off the syrup, or (better) simmer fresh berries in a light sugar syrup.

I have since used an acid reduced cranberry called Berry Bits, from Alpine Foods.  These are really great as they are like cooked cranberries, without all the sugar, so you an eat them straight or add them to anything as you would say blueberries.
