			<title>Pineapple Oatmeal Pancakes (Gluten-Free)</title>

			<description>Oh my gosh these are AWESOME!  This can of pineapple on the counter was calling to me, and my husband can't eat wheat, so if I make pancakes they're gonna have oats in them.  Plus, the Tahitian Pancakes came up on Heroes in the past week or so, so that's on my mind.
I combined two different recipes that I found online, one for pineapple pancakes and one for oatmeal pancakes.  Neither one is like this new version though.  SO AWESOME!  
One last thing, I used coconut milk instead of cow milk, since my husband is also on this non-dairy kick.

			<description>So good I ate a whole jar in a matter of days!   A great way to use sour cooking apples if you have an apple tree in your garden.  Its quite simple to make so don't be put off by the long list of ingredients.  Granny smith apples work well but don't try and use other common eating varieties of apple as it just won't work.  Date syrup is available in larger supermarkets and middle eastern or asian stores, you could use brown sugar but date syrup adds a deeper note that I think makes it special. Mole poblano is the sauce most commonly known outside of Mexico as mole sauce, although there are many different types. Courtesy of the Whole Chile Pepper Book, this classic Mexican sauce is excellent with poultry; serve it over a turkey or chicken breast. Add a spoonful to curries or mix with cold shredded chicken, curry powder and mayonnaise for a lovely baked potato or sandwich filling. I made this cranberry cake several times in one week because we just can't get enough of it. It's sweet with a golden crumb, soft and moist, and dense without being heavy, with juicy explosions of tart cranberries. 


This is also really easy; it comes together in about 10 minutes. Sometimes, I will cover it in whipped cream, but lately I have been baking it instead with a topping of pecans caramelized in butter and brown sugar.
