Chocolate Wafer Cookie Ice Cream Cake

This is a great birthday cake, that's simple dimple to make, from televisions cooking show host of Ciao Italia, Mary Ann Esposito! She is the longest running cooking show host in history. She is a wonderful person, and I had the great privilege of meeting her many years ago, as she lives next to the town I used to live in, and she was guest speaker at a womens luncheon that I attended. Her husband, Guy Esposite is a well known doctor in Dover NH. NOTE: Cooking time is freezing time, and I would freeze it for at least 2 hours. NOTE: Please see my recipe for
Recipe #329292, if you have a hard time finding the Nabisco Chocolate Wafer Cookies at your local grocery store.
Linda's Ice Cream Sandwiches

Here's a great way to make your own ice cream sandwiches!!! If you can't find the Nabisco Chocolate Wafer Cookies in your store (check near the ice cream toppings, as it seems they are sometimes in an odd place in the store), you can use my recipe for Recipe #329292, to make these yummy treats! The kids and "Big Kids" will be smiling ear to ear while having one of these! Try rolling the finished sandwiches in mini chocolate chips, sprinkles, crushed nuts, M&M's, or your favorite candy bar, then freezing. You can also use these in making an Ice Cream Sandwich Cake for a special treat or Birthday! NOTE: Preparation time does NOT include time to soften the ice cream. Add on at least 1/2 hr. for that to your preparation time. Cooking time is chilling time. Make sure once you make these you let them sit in the freezer for AT LEAST 2 hours before serving, so the ice cream has a chance to harden. -- posted by Linda's Busy Kitchen

Unknownchef86's Instant Pudding Ice Cream

This is an excellent homemade ice cream, with lots of room for variations...limited only by your imagination. I originally got the recipe with an ice cream maker that I purchased some time before I was married in 1986. The recipe and variations are designed for a one-quart yield, and may be doubled if desired. Prep time is for combining the mixture and does not include freezing time (as that will vary by machine/method). Note: Oreo cookie pudding ice cream is EXCELLENT. :D -- posted by UnknownChef86

Three of a Kind Ice Cream

This recipe is from "The Real Festivus" by Daniel O'Keefe. It is the author's grandmother's recipe. O'Keefe explained, "The tradition is to call this three of a kind, and to use three of each ingredient. But that makes a very big batch - it fills three old-type ice trays. Instead, I usually make batches of one or two of each ingredient. Freeze it in any kind of container that is freezable, probably plastic."

I have yet to try this recipe; I'm putting it here for safekeeping :) -- posted by SeaChelle

Strawberry Frozen Yogurt

Modified from a higher sugar version found in Cooking Light. The original recipe called for raspberries, but I don't like straining out the seeds, so I'm making this version for strawberry and skipping that step. You can use other types of fruit. Be careful subbing in lower or nonfat diary as the texture will not be the same. Time indicated is for freezing. -- posted by M&A's

Whole Grain Breakfast Delight

This is a lovely treat to wake up to in the morning- without guilt! The cottage cheese and pumpkin filling slightly resembles a pumpkin pie filling, and the maple syrup makes it perfect! All the flavors allow for the tortilla to adopt a sweeter, crepe like flavor. Top with whipped cream and graham crackers if you're really dying for something decedant... Cooking time is actually freezer time. This is simple, quick, and easy to make, but incredible to eat! -- posted by Chef #1111060

Pumpkin Pie-Sicles (Popsicles)

This is from Family Fun's Nov. 2008 issue. I had some butternut already cooked (see Rita's Recipe #194908 for an easier way to cook the squash!) so I halved the recipe and it made 6 popsicle molds. It really tastes like pumpkin pie! My 5 yo was begging for another one right after the first one. I used half and half instead of the cream and pancake syrup, since I didn't have maple (it's up to $20 quart here!) I bet it would work with canned or cooked pumpkin too, although I'm not sure how much to use. What a great, healthy alternative to all that sugary, artificial colored popsicle junk the kids usually get. I also used 1/2 tsp pumpkin pie spice for the halved recipe, so I would recommend using the higher amount of spice, or even 1 tsp. Prep and cook time do not include cooking the butternut. -- posted by WI Cheesehead

Rainbow Ice-Cream

I remember making this for the family, when the kids were younger.
Even though they are much older now, I think they would still enjoy it. It looks so pretty served in tall glasses. Try using a cheaper ice-cream if making for kids, it still tastes great and is a little more economical. This recipe can also be made ahead, but not more than 2 days.

Kittencal's Reese's Peanut Butter-Chocolate Ice Cream Dessert

I use my recipe#237573 you may of coarse use store bought --- vanilla ice cream may be used in place of the chocolate ice cream, frozen yogurt also will work well, a prepared chocolate crumb crust or graham crust will work well fine--- although I have left as optional to take this yet to another level mix in chopped frozen peanut butter cups, they must be frozen when mixed in or they will crush when mixing, chop them first then freeze, and don't be afraid to add in a little more than 1/2 cup peanut butter :) -- posted by KITTENCAL

No-Bake Strawberry Cheesecake

A very easy and delicious recipe for No Bake Strawberry Cheesecake. I originally found it on this site, however made a couple minor changes, and have since shared it too many times to count. Very easily made into single sevings and can be frozen for later serving. Also a good idea for "Portion Control". The first time I made this, my husband ate the whole pan. YES! THE WHOLE PAN! Enjoy!! -- posted by Chef #932139

Milk and Soy Protein Free (Mspi) Ice Cream

This recipe is a great substitute for regular ice cream and couldn't be easier to make. You can substitute any flavoring that suites your fancy. I've made chocolate from cocoa powder, strawberry, strawberry-banana, peach, and maple-walnut. The coconut flavor enhances the other flavors and isn't very noticable. There is more than enough sugar in the cream of coconut but a little honey might add a nice touch. -- posted by Chefro

Two Minute Banana-Cinnamon Caramel Crunch Ice Cream

From our local newspaper, an article about considering making a vegetarian meal for Father's Day

You'd never think that popping a few bananas in the freezer would result in an ice-cream-like indulgence. And to correspond with the patience that dad will have while he awaits his Dad's Day Dessert, it'll be done in a snap. The dates give a sweet taste akin to smooth caramel, while the pecans add an extra crunch. -- posted by VeganMom

Baileys Ice Cream

I took this recipe from a free leaflet the I picked up in Sainsburys some time ago and only got round to making it yesterday. I used a shops own brand Irish Whiskey Cream Liqueur instead of the Baileys and it was great. Would go great with hot home made mince pies in the Christmas season.
If you don't have an ice-cream maker pour the mixture into a freezer proof container, cover and place in freezer for 1 hour. Remove from the freezer and break up the mixture with a fork until it is "mousse" like to prevent ice crystals forming. Freeze again for a further hour and repeat the process, then freeze until solid. Remove from the freezer a few minutes before serving. -- posted by Lou van

Super Easy Ice Cream!

Here is a simple and delicious ice cream recipe that does not require an ice cream maker! For a different flare try substituting 1/2 cup of the heavy whipping cream with flavored coffee creamer (I would reccomend not using the low fat kind) or egg nog. You can also sub the vanilla for any other flavor extract. Freezing time (cooking time) varies on how shallow your container is. I would sugest using this up within a week for best taste. Enjoy!
