This has buttermilk, flour, cornmeal, rice flour, beer, some spices and is fried in peanut oil. Can use 8 (4 oz. each) fillets or 4 (8 oz. each) fillets. You need 2 hours of marinating and then 3o minutes chilling so prepare accordingly. I modified it to use ingredients which were more readily available to me.  Fresh turmeric is available at indian groceries stores and Whole Foods (where I found it).  Frozen stuff works well too and you can freeze the fresh stuff if you find it.  The original recipe mentions the possibility of using 3 tsp. of powdered turmeric and add an extra 1/2 tsp. of sugar.  I have not tried this and they mention that it won't be as good. Try this out for your next Mardi Gras party, and you will surely get praise for being unique and creative.  This recipe came from Sam's Club, October, 2008, courtesy of Mulate's Restaurant.  You can also use the blackened salmon filets from Sam's Club in place of the catfish.  Edited 6-5-09:  The original recipe does call for 1/2 pound (2 sticks) of butter, but that is WAY too much IMO.
