Colorado Camper's Trout

I love fresh fish fried and this recipe is really yummy! I found this recipe in the Colorado Cache Cookbook back in the 80's. The book said, "This is the best way to eat trout: when it is stream fresh, it's hard to beat!" I agree! This recipe is great for cod too. Prep and cook times are approximate, depending on how long you want to fry your fish. -- posted by keen5

Walleye Chowder

The Walleye is a member of the perch family and the perch is without a doubt the sweetest tasting freshwater fish there is. This recipe is from an old fishing magazine I found years ago and is one of the best fish chowders I've ever eaten. If you love walleye you have to try it. -- posted by Chuck in Killbuck

Super Easy (speckle) Trout

My mother-in-law showed me this recipe - so easy my kids could make it! I have kept this very general as it really depends on the size of the trout you have, and your personal preference when it comes to the lemon. We catch speckle trout (all about 10 - 12 inches long); So tasty and sweet! Best with FRESH fish!! This could be served at camp too! Just bring the whole lemons and butter (ooh, even a few cloves of previously roasted garlic!) -- posted by Steph_40135

Trout Breakfast Scramble, Cali Style

I made up this California-style scramble when my husband and I brought three trout back from a camping trip. Quite a few ingredients but most of them are flavorings/spices. This is quick, easy and probably a good way to disguise trout so non-fish eaters might try it. -- posted by Napoleon Dynamite

Pat's Pan-Fried Catfish

Pretty much every young Appalachian man learns to catch, clean, and fry catfish in his youth. In fact, it was sort of a "rite of passage" for many of us. I have fried it right on the creekbank over my campfire within minutes of catching these delectable freshwater delicacies. This basic recipe has served me well for many years and I still love the great, but mild, flavor which is yielded by pan-frying catfish. Over the past 40 years, I've made a change or two in the recipe on which my elder fishing buddies of that era taught me, but the essential strength of this, or any other fried catfish recipe, is in the cornmeal coating. So, here is an Appalachian catfish recipe which I hope becomes a legacy in your own family -- good eating! -- posted by Bone Man

Pat's Southern-Fried Panfish

"Panfish" are non-saltwater fish like bass, bluegill, and/or crappies. If you like VERY MILD FISH which is crunchy on the outside and flakey-white and moist on the inside, then this recipe is for you. It's not at all greasy, as long as you don't go short on the Crisco and as long as you get your Crisco hot enough. And the idea of dusting the fillets with flour prior to the "drench" and "dredge" prevents the coating from falling off while frying. I primarily use this particular recipe for largemouth bass, smallmouth bass, and, Kentucky spotted bass; however, it's also perfect for nice-sized white bass or, even for bluegill (bream) or crappie fillets if you shorten the cooking time to account for the smaller fillets. The time listed does not account for marinating time. -- posted by Bone Man

Yankee Transplant's Cornmeal-Breaded Catfish

A little lighter than the traditional, southern catfish breading/batters yet it retains the crispness and simplicity. The Yankeeness shows in the garlic and the olive oil. I'm not really a big fan of fish, but catfish done this way is one I can actually enjoy. -- posted by 3KillerBs

Chipotle Fish Tostadas

From: The Spice is Right. Text and recipes by Kathryn Jessup| From the November 2008 Issue of Coastal Living Magazine. Chipotle Fish Tostadas call for mucho garlic in addition to chipotle chiles. Along Mexico's Gulf coast, brave cooks fry spicy dried chipotle chiles in oil. Here, we used milder canned chipotles en adobo, a chile-vinegar sauce, but they still pack a punch. This is not to be confused with my recipe #333562!:) -- posted by Manami
