			<title>Light Flax &amp;amp; Oat Baked Tilapia</title>

			<description>I came across a few breading/coating recipes online that used alternatives to flour.  I've tweaked them a bit to come up with this, to add some more flavour and improve the texture.  I'm happy with the results, a simple tasty fish with healthy ingredients and low fat.  You could add whatever herbs or spices you like to the flax &amp;amp; oat base.  I use my 'magic bullet' for this and it works really well!  (have to justify that purchase after all!)  Don't try to over coat these, it won't crisp up because there intentionally isn't much oil in this recipe.  If your diet doesn't permit eggs you could omit them.  Tilapia is quite wet anyway, the coating will still stick, of course not quite as well but I've tried it and it works. Try this out for your next Mardi Gras party, and you will surely get praise for being unique and creative.  This recipe came from Sam's Club, October, 2008, courtesy of Mulate's Restaurant.  You can also use the blackened salmon filets from Sam's Club in place of the catfish.  Edited 6-5-09:  The original recipe does call for 1/2 pound (2 sticks) of butter, but that is WAY too much IMO. 			<description>This literally takes minutes in the oven. Tilapia (an inexpensive fish, but you can add some great flavor to it), fresh grapefruit and dill make this dish absolutely wonderful.
Serve this with some oven fries or fingerling potatoes and some fresh oven roasted zucchini planks, just with olive oil and fresh herbs is perfect.  A light fresh dinner. For those who love the light tart taste of grapefruit this is for you. I think these techniques mask the real flavor of fresh water trout.
I prefer to broil the fish and deboning a cooked trout is quite easy and gives the chief a chance to show off.
To debone a cooked trout use 2 tablespoons, first using a spoon remove the head &amp;amp; tail of the fish. Then make sure all the skin is cut.  Using the spoons with the rounded side to the meat, carefully open the fish in butterfly style. Now, I chose Tilapia because for those &amp;quot;non-fish lovers,&amp;quot; this is a mild fish and very reasonable priced fish. I have made this using Cod or Halibut and even Salmon which all work equally as well.  If using Cod, Halibut or Salmon, due to the thickness of the fish you would have to adjust the cooking time.  For this recipes, I like to roast some grape tomatoes and fingerling potatoes also fresh garden flavors for side dishes.  Besides, roasting in the oven allows you to concentrate on your main dish and using a foil lined pan means ...
