Cherry Sorbet

Created by accident, it is one of the most requested deserts that I make. A mixture of Rainer and Bing cherries seem to give it an extra special something. Use a non-oak white wine for this recipe. Also, if you are ever in Northern California, near the town of Placerville, stop by Latcham Vineyards and pick up a bottle of their Muscat Canelli & Gold Rush White wines. They are the original wines used in this recipe and easily the tastiest I've used to make it. If you're not into wine, substitute the amount for your choice of pure fruit juice. -- posted by blueyedwineaux

Pineapple Cloud Pie

A co-worker brought this in for myself and my wife to try. I was apprehensive at first (I don't usually like pies) but was completely won over on my first bite! I came home from work and started searching RZ for the recipe. To my surprise, no one had sent it in. I ended up finding similar ones on the site, but none that used the Rice Krispies as the crust. Personally, I think this made the pie better (and was why I loved it). I finally found the recipe on RiceKrispies.com and knew I had to submit it first thing! I have left the directions alone but substituted the brand names of the products my co-workers used (since I KNOW how AMAZING this is). I hope you enjoy this as much as I do!
Mango Ice Cream

A tweaked version of a recipe from About.com. If you're lazy (or just want to eat this sooner!) like me , you can skip the overnight marinating step and just start with simmering the mango with the sugar. Also, if you like a stronger mango flavor, try reducing the amount of half and half (I used 3-1/4 cups)... -- posted by jimnyo

Cherry Ice

This simple ice makes the most of summers ripe cherries. For great color, use Black Cherries. The 4 hrs cook time is freezing time without an ice cream maker. Don't expect a hard freeze for this ice, it will remain in a semi-hard frozen state.
Mango and Ginger Sorbet

I love Sorbet. It's great for getting rid of any old fruit that needs eating. So you can think of this recipe as a mold. What you need is a base syrup- the water and the sugar, a flavour- blended up fruit, lemon/lime juice, whatever. If you want you can also add a contrasting flavour, in this case, the ginger. You can use your imagination with this one, but as a base, you can't go wrong with mango and ginger- yum! -- posted by Lieutenant Ducky

For kid-sized servings, use 5-oz cups and fill them with 1/2 c. of the fruit mixture (yield 24 1/2-cup servings). For a larger serving, freeze in 9-oz cups (yield 12 1-cup servings). If using the larger cup, you need to remove them about 15 minutes before serving. FYI, in my freezer I timed the 9-oz cup and it took 1 hour for it to be slushy and 2 hours to be completely frozen. Dont worry if you taste it before freezing and the mixture is a little bit tart, the flavors mellow after freezing. Great for once-a-month cooking. Enjoy! -- posted by Munchkin Mama

Mary's 'famous' Peppermint Ice Cream Dessert

This is made by our friend Mary for New Years annually, and I started making it when we would not be at Mary's house because it's DH's favorite. I made some of my own changes, but still think of it as Mary's recipe (I note where Mary's directions differ from mine in the ingredients list.). I also have never timed myself making this, but will the next time I make it and then update the time estimate. Peppermint ice cream is easier to find (IMO) in December. -- posted by El Bee

Mango Coleslaw - for Freezing

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Faye Jones. She didn't specify serving yield so I am guessing. I am actually fairly surprised to see fresh mango on the menu in 1980's Muir. -- posted by Sarah_Jayne

How to Make an Ice Ring

This is a GREAT way to make an ice ring for you punch, to keep it cold and tasty! By using punch instead of water your punch won't get diluted as it melts. If you want to make ice cubes use ice cube trays or styrofoam egg cartons. The preparation time is time to make each layer, and does not include the time to freeze each layer. -- posted by Linda's Busy Kitchen

The Perfect Passion Fuit Cheesecake (Non Baked)

Has earned me compliment after compliment - and a while it took to figure out this recipe too! After a trip to Starbucks I tried their passionfruit cheescake and thought it was so creamy and tarty I'd try making it. I didn't realise what a great result I'd get. A recipe made in callaboration with my mum.
Notes:

-You will need a blender or food processor. The evaporated milk must have been previously frozen and be in the process of defrosting - smooth and creamy. For this leave to defrost 3 hours.

-Make sure you carefully follow the instructions from the powder gelatin box. If you don't, your dessert may never gelatinise and you might end with a soup over vanilla cookies -- not good. -- posted by Caterina L.

Limoncello Lavender and Vanilla Cream Liqueur

I came up with this variation of this limoncello which is lusciously creamy with the essence of vanilla and lavender. After making Kim's Recipe #296066. This is to be sipped icy cold on a hot summers day with your eye closed. Relax Ahhhhh!
Making it a comforting excellent aperitif. Served chilled from the freezer in a frosted liqueur glass. Keep refrigerated with in 1 month of freezer 6 months.
Try to use 100-proof vodka, which has less flavor than a lower proof one. Also the high alcohol level will ensure that the limoncello will not turn to ice in the freezer. -- posted by ~Rita~

Pop Rocks No Bake Strawberry Lime Cheesecake

I love Anthony Bourdain's No Reservations. I was watching the Northwest episode and the Gypsy dining group came up with a fabulous dessert that engulfed all of the senses. Seeing as how I am in no way going to do this dessert justice, I just wanted to quote what Gypsy described it as:

"The second dessert was a lime cheesecake mousse set over the top of an “aural” crust. Strawberry pop rocks were implanted into the graham cracker crust for a surprising aural firework display with every bite. The dish was accompanied by strawberry sorbet over a salad of black pepper and strawberries, a strawberry sauce, and a fresh grating of lime zest."

I have researched the lime mousse techniques and i have just run out of patience on how to keep the rocks from popping before the cake is consumed. So it's basically, no bake, low heat, keep it cool.

I cannot come close to coming up with the black pepper and strawberries concoction so i am going to make my cop out, easy version. It might not be completely gourmet, but it is still poppin'.
**I plan on revisiting this to make a diet friendly version. -- posted by College Girl

Frozen Pineapple Pie

This was posted on the back of a store brand can of sweetened condensed milk. It sounds so good. The prep time is a guess and does not include freeze time. I have not tried this, but I hope you like it! -- posted by Burned Toast

Chocolate Wafer Cookie Ice Cream Cake

This is a great birthday cake, that's simple dimple to make, from televisions cooking show host of Ciao Italia, Mary Ann Esposito! She is the longest running cooking show host in history. She is a wonderful person, and I had the great privilege of meeting her many years ago, as she lives next to the town I used to live in, and she was guest speaker at a womens luncheon that I attended. Her husband, Guy Esposite is a well known doctor in Dover NH. NOTE: Cooking time is freezing time, and I would freeze it for at least 2 hours. NOTE: Please see my recipe for

Banana Coconut Ice Cream (No Eggs)

We received an ice cream maker attachment for our KitchenAid mixer last Christmas. We also had a spare can of coconut milk left over from a curry recipe. After a few ice cream batches, I began wondering how to use the coconut milk in an ice cream recipe. This is the result. My favorite thing about homemade ice cream is the delicious taste from only a handful of ingredients, so this one is a simple, Philadelphia-style ice cream (no eggs).

It has a rich coconut flavor that isn't over-powering. The banana and (optional) rum complement the tropical theme. -- posted by calamari

A delicious and nutritious ice cream sandwich? I would have thought the concept was something you'd get when you had alien invaders or something similar. I found the above recipe on the Care2 website @ http://www.care2.com/greenliving/nutritious-ice-cream-sandwich.html Hope you enjoy this! -- posted by SassiFras
