Zesty Chicken With Orzo (For Freezer Menus)

A recipe inspired by Betty Crocker, modified to be used by my friends and me in our once-a-month freezer meal prep. The ingredients are pre-assembled, frozen, then cooked fresh the night you want them. For the frozen vegetables, I find that a pre-made combination of broccoli, cauliflower and carrots works well, but any veggies that would cook in the same amount of time would work fine. Orzo is a fun pasta many people have never tried - it comes out very creamy in this recipe. -- posted by Troicook

Fruit Cups

These are just awesome! I love to make them up and freeze them for breakfast or a quick snack. For kid-sized servings, use 5-oz cups and fill them with 1/2 c. of the fruit mixture (yield 24 1/2-cup servings). For a larger serving, freeze in 9-oz cups (yield 12 1-cup servings). If using the larger cup, you need to remove them about 15 minutes before serving. FYI, in my freezer I timed the 9-oz cup and it took 1 hour for it to be slushy and 2 hours to be completely frozen. Dont worry if you taste it before freezing and the mixture is a little bit tart, the flavors mellow after freezing. Great for once-a-month cooking. Enjoy! -- posted by Munchkin Mama

Mango Coleslaw - for Freezing

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Faye Jones. She didn't specify serving yield so I am guessing.
Monster Cookies

I see there are a lot of Monster cookie recipes on here, but there are slight variations of it. I prefer my mom's recipe. Yes I know it calls for a lot of ingredients and in large quantities, but what I like to do is make a large batch before Halloween--hence "Monster" cookies. I put the dough into containers and freeze. This helps me get a jump start on my holidays. I just give out the dough as gifts through the holidays. My family loves it because everyone loves them, but no one wants to take the time to make them. -- posted by Erin Harris

Chicken Corn Soup

This recipe is from Marsha Adams' book, "Cooking From Quilt Country". It was given to me from a poster on another board, cheezz, who is a fantastic cook. It freezes well, so you might want to make a double batch and freeze half of it. To reheat, thaw in fridge overnight, and gently reheat it until very hot, but not boiling.
I would add some cooked rice when you add the chicken or some chopped cooked potatoes to make a really hearty meal. Serve with some hot bread and a green salad. -- posted by dawnie2u

Steak Packets OAMC

An easy, quick, family pleasing OAMC recipe. I adapted Tish's great Chicken Packet recipe (#50767) for a new flavor. My kids beg for it & dh loves it, too! For OAMC, I make quadruple batches and freeze in four 1 qt bags. I use the blender or food processor to crush a big batch of croutons into crumbs and store them in another quart bag in the freezer to be used as needed (I find a lot of other uses for these crumbs!).
Sweet Potato Balls With Orange Rind (Omac)

I grew up with my Mom's sweet potato balls for Thanksgiving but I saw this in Food Editors' Favorites submitted by Diane Wiggins of St. Louis for the St. Louis Globe. I thought it sounded different and good. I don't want to lose it. You can make this weeks in advance and freeze it, then simply place it in the oven 20 minutes before serving time.
Vi's Chicken and Biscuits

This make ahead recipe is a favorite comfort food that came from my MIL who was an exceptionally good cook and loved to be surrounded by her family. She liked to "wow" us. I think she had gotten this from a Superior, Wisconsin newspaper. It freezes well and is inexpensive, but time consuming to make. For the two of us, I freeze this in small aluminum foil bread pans and double the biscuit aspect of the recipe. Sometimes I have frozen it without the biscuit dough on top and then made it later with Recipe#279258 for biscuits and that works well, too. It does have an added bonus of chicken broth for other recipes. -- posted by WiGal

Thai Inspired Turkey Burgers (Low Fat)

This is my latest concoction in my mission to bring healthier food to my household. Over the past few weeks I have been using Fridays to try out different versions of healthier burgers. Tonight we had these Thai inspired turkey burgers. They had a fresh taste and I think it is important to use the fresh versions of the ingredients rather than dried spices to get that taste. I had mine on a bun with some crisp lettuce and some fat free mayo and ketchup. I bet they would be really nice with some sweet chili sauce in place of the ketchup and mayo though. These could easily be made up and frozen raw to have ready when short of time. Cooking time includes chilling time. -- posted by Sarah_Jayne

These cute little pies look so impresssive and are perfect to wow guests at a dinner party. The sweet lemon filling is what makes these bite sized delights disapper in seconds. But don't be put off be their apperance.. they are incredibley easy to make. You can make the lemon filling and pie cases ahead of time but the meringue topping is best done no more than a few hours before serving. -- posted by Brittney_xo

Pop Rocks No Bake Strawberry Lime Cheesecake

I love Anthony Bourdain's No Reservations. I was watching the Northwest episode and the Gypsy dining group came up with a fabulous dessert that engulfed all of the senses. Seeing as how I am in no way going to do this dessert justice, I just wanted to quote what Gypsy described it as:

"The second dessert was a lime cheesecake mousse set over the top of an “aural” crust. Strawberry pop rocks were implanted into the graham cracker crust for a surprising aural firework display with every bite. The dish was accompanied by strawberry sorbet over a salad of black pepper and strawberries, a strawberry sauce, and a fresh grating of lime zest."

I have researched the lime mousse techniques and i have just run out of patience on how to keep the rocks from popping before the cake is consumed. So it's basically, no bake, low heat, keep it cool.

I cannot come close to coming up with the black pepper and strawberries concoction so i am going to make my cop out, easy version. It might not be completely gourmet, but it is still poppin'.
**I plan on revisiting this to make a diet friendly version. -- posted by College Girl

Chicken With Peanut Sauce (Swimming Rama) - OAMC

Crock Pot Colt's Fan Chili

I've been at the chili game for a few years now. It's taken A LOT of tweaking, but I think that this chili hits the spot for my husband and our friends. It can be a little bit spicy, but we tend to like the heat. You can omit the tobasco and jalapeno for a much more mild version. I absolutely think that this is best topped with a dollop of sour cream and shredded sharp cheddar. Scoop it up with some Fritos scoops and you're all set for the big game! Cook up the chili meat the night before and just add it along with the other ingredients before you head out to church on Sunday morning---viola, ready for the kick-off! -- posted by Mommy2Peanuts

Three-Cheese Kielbasa Bake

I always have some type of smoked sausage in my fridge, because it lets me get supper on the table in a hurry during the week. This recipe was in a Taste of Home booklet called "No Fuss Freezer Meals", and makes two very large casseroles. We always add way more garlic than the recipe calls for, and use a spicy chipotle sausage. -- posted by Sweet Jezebel

Evelyn's Sweet and Sour Meatballs

This is my grandmother's sweet and sour meatball recipe. For those who like to use up everything, it's a great way to make use of sweet pickle juice - as the pickles are used up, I just save the juice in a jar at the back of the fridge. Easy, quick prep, can be cooked on stove top, in oven or crockpot and can cook meatballs in the sauce or pre-cook in microwave, fry pan or oven. This recipe freezes well and is easily doubled. Also kid-friendly; my 4 year old who is going through the stage of "KD and hotdogs or nothing" eats this without prompting! -- posted by morleah's mom

Italian Wedding Soup

Great Italian soup made with chicken, escarole and meatballs. It is time consuming, but worth every bit of time and love you put in to it. I tried to include step-by-step instructions throughout the recipe to help make this soup something special. You'll love it and so will anyone who eats it. It makes quite a bit, so invite the neighbors. It will take almost two days to make but worth it.
Veggie " Everything but the Kitchen Sink" Pasta Sauce

I love chunky garden vegetable pasta sauce, and after trying a few on Zaar I modified my favorite spaghetti sauce recipe recipe #22782, to have fresh tomatoes instead of canned, lots of fresh vegetables, and less fat from the meat. Easily hearty enough with vegetables to omit the sausage for vegetarians.

I find it easiest to prepare the ingredients first. Slice, dice, puree, open cans etc. For stronger garlic flavor, "crack" the garlic open about ten minutes before mincing to give the oils air exposure. Use whichever ingredients you love most. The more juicy your vegetables the less water you need as the sauce will thin as the vegetables cook. It's easier to start with thick sauce and thin in out than to try to thicken the sauce later.

My instructions may seem a little elementary for some more advanced cooks, but as I learned how to do many of these techniques while developing this sauce, I wanted to include them for more novice cooks. If you have any suggestions or corrections please let me know. -- posted by @ home in SF Bay

Great for snacks and school lunches. Freeze and reheat in microwave. Passed on from a friend who originally got it from the Canadian Living website.
I find I never can get as much filling into each pocket as the recipe says, so I just fill with an amount that makes the pizza pop easy to seal.
Caribbean Spice Islands Marinated Chicken by Clean Eating

Entered for safe-keeping for ZWT5. From Clean Eating, May/June 2009 issue. This is a more complex mixture of Caribbean spices and ingredients than "knock-your-socks-off" hot peppers and "suicide-spicy" jerk chicken.
The preparation is geared toward advance preparation and freezing of the marinade and marinated chicken (for 3-4 months), but I did not include freezing/thawing time in preparation time. For tropical fruit, use any combination of tropical fruit: pineapple, mango or papaya were suggested by Clean Eating. -- posted by KateL

Ultimate Taquitos OAMC

These taquitos are perfect for a healthy lunch, snack, appetizer, or dinner. I love that you just pop them from freezer to baking pan for a last minute meal. They are our favorite OAMC meal and they disappear very soon after I load the freezer with them! The hot-oil dipping step makes the tortillas very easy to work with and also makes it so when you take them out of the freezer, all you have to do that night is toss them in the oven to heat -- no frying mess on eating night. I have learned to have extra tortillas and extra oil on hand so I don't have to run to the store to get more in case the batch goes further than I planned! -- posted by StephanieZ

A delicious and nutritious ice cream sandwich? I would have thought the concept was something you'd get when you had alien invaders or something similar. I found the above recipe on the Care2 website @ http://www.care2.com/greenliving/nutritious-ice-cream-sandwich.html Hope you enjoy this! -- posted by SassiFras

Quick and Easy French Cognac and Crème Fraiche Ice Cream

This is a really easy ice cream to whip up and one that I make every Christmas to go with the Christmas pudding and with my annual Rumtopf or Brandied Cherries and Apricots. You can make it in an ice cream maker if you have one, but as it is a non-custard base ice cream, it works just as well without an ice cream maker. It lasts for one month in the freezer and is a great addition to the summer dining table too! -- posted by French Tart

Smoked Salmon Spirals

This is a wonderful last minute or make ahead and freeze appetizer (they can be frozen up to 1 month). The recipe comes from The Canadian Living Christmas Book.
Cooking time is time in freezer (must freeze for at least 4 hours). -- posted by Dreamer in Ontario

Amaretto Punch Slush

My signature drink. Oh, it's a make-ahead, freezer-ready recipe. To make it more manageable, divide between quart size, heavy-duty, zip-top plastic bags. Freeze time not included. -- posted by gailanng

Cranberry Muffins

This is a great breakfast and/or snack muffin! The yogurt keeps it extremely moist and the cranberries will keep you on your toes. The recipe can be halved and the finished muffins frozen. Please note that most of the prep time is slicing your cranberries! If you have a food processor, it definitely helps. -- posted by Rhapsodies
