Homemade Salsa...

I got this from my friend Staci whose grandmother is Hispanic. Staci made it for us one day and I've been hooked on it since. Just a tip... Unless you can eat about a half gallon of salsa, I suggest you grab a few extra containers to share with your friends and family.PLEASE NOTE that because this is homemade salsa (no added preservatives), it only keeps in the refrigerator for 2 weeks tops! -- posted by Ali-Cat Roberts

Pumpkin Patch Mini-Muffins (Or Cupcakes)

These addictive, freezer-friendly muffins are full of goodness: Pumpkins are chock full of vitamins (especially A, C, K, and E), minerals (like magnesium, potassium, and iron), fiber and antioxidants. The muffins, which easily double as cupcakes, are made with relatively little sugar, flax seed for an omega 3 boost and unsweetened applesauce for even more natural goodness - a truly wholesome treat.

Pumpkin Crisp Plus Lower Fat Variations

This is my husband's favorite dessert. We got the recipe from his uncle Larry. I have made it for may family and it has been requested that I bring it to Thanksgiving again this year. I also made it for a BBQ this summer, and a friend who came to the BBQ asked for the recipe so she could make it for Thanksgiving. It's great anytime, but its a must in my house for Thanksgiving. -- posted by Jennifer Bennifer

Big Batch Holiday Cranberry Sauce

We make this every year before Thanksgiving and put it in the freezer in three or four containers so we have some to take to every holiday meal. You can adjust the sugar to taste, and I often don't add as much as is called for, and sometimes even leave the jello out completely, especially if I'm making a half batch that I'm not going to freeze. Cook time is chilling time. Not sure about the yield, but I guess it's about 24 cups. -- posted by Chrisbee

Lunch Wraps for the Freezer

I originally got this recipe from Allrecipes.com, but have modified it over the years. These wraps are really tasty, but admittedly, are a bit dry and should be served with some sort of sauce on top (hot sauce, enchilada sauce, fresh salsa, or sour cream...etc.). These are cheap, filling, nutritious, and great to have hand in the freezer. I keep some in the freezer at work, and a bottle of Tapatio in my desk (or sometimes I even freeze individual-sized [appx 1/4 cup] homemade red chile sauce in snack-sized ziplocs). I usually use 2 tablespoons of my own taco seasoning mix, but specified one package below, for convenience. I often add additional veggies such as shredded carrots, diced bell pepper and onion, etc. -- posted by Robyn's Cookin'

Thin Sandwich Buns

These are like those sandwich thins in the store without sucralose or chemicals. One sandwich bun is 1 Weight Watcher point.

TIPS: You'll need a 4" biscuit or cookie cutter for these to be consistent, but you don't have to have it. The vital wheat gluten improves the texture and rise, but you don't have to use it. Just add 2 more tablespoons of flour if you omit it. And white flour will work just fine if you don't want whole wheat. Just add more flour in place of the extra bran called for in the recipe. Of course, the nutritional info will be different.

Down South Sweet Potato Pie

Whether from the North or the South, East Coast or West Coast, homemade sweet potato pie brings out the Southern drawl in all of us. The sweet potatoes provide this indulgent dessert a healthful boost of nutrients, especially beta carotene (forms vitamin A). This pie can be enjoyed not just during the holiday season, but all year long!

Peanut Butter Cookies

This recipe makes enough for a family reunion (I halved the recipe and still had 4 dozen cookies). I've posted the recipe as originally written. I really like the seasonings--cinnamon, ginger, and cloves. It makes a nice twist on a classic treat. Next time I'll skip the shortening and use real butter (just a personal preference). I'd also dip my fork in white sugar and press them in a criss cross pattern after they come out of the oven instead of before.
Chocolate Carmellitas

Many years ago, I came across a recipe for Chocolate Carmelitas. But I did not copy it. When I asked if anyone knew about them, the answer I got was there is chocolate in the regular carmelita recipe (the chips). But the recipe I saw was more chocolatey than that. Now at last I have come across a very chocolatey carmelita and it's an easy one, too. This may not be the same recipe, but it is a very good one. It starts with a box of brownie mix and with a few ingredients becomes a streusel-layered cookie that you can enjoy with a glass of cold milk. Cheers! The recipe comes from the book Brownie Mix Bliss by Camilla V. Saulsbury. -- posted by Lorraine of AZ

Grandma Linda's Thanksgiving Dressing

My mother has made this dressing for our family since I was a little girl. It is the only Thanksgiving dressing my family will eat. I would weigh 500 pounds if I made this dressing as often as I craved it! Although I know most people prefer holiday recipes that have been passed down in their own families, I hope you will enjoy this Thanksgiving dressing recipe that the McWell's have enjoyed for many, many years! My mother used Jiffy corn bread mix in the old days, then later switched to Marie Calender's corn bread mix. In this recipe, I am using the "sweet corn muffins" recipe on a box of Albers Yellow Corn Meal. Because I am using Albers brand corn meal, all ingredients up to "12 Tbs butter" are for this particular brand cornmeal. If using any other cornbread mix, follow directions on the box, then add ingredients beginning with "1 Lb bacon." This recipe is for Thanksgiving so it makes quite a large amount. Thanks Mom! -- posted by Mrs Cook
