			<description>I came up with this when I was in the mood for spicy potatoes, and immediately thought of my favorite side dish at the Jackson Diner buffet. This is a great sidedish but I also like it as a main meal too, with some rice or naan. Green peas would work in this recipe too, either as a third main ingredient or to replace the chickpeas, but I love the richness of the chickpeas and couldn't get over not only how close it was to Indian restaurant quality, but also how simple and quick it was to make! By accident better yet! You'll find it hard to believe it's homemade and from canned food better yet. The taste is very hot and spicy, and what I love the most is the way the kick sneaks up on you after a minute! :) Important note-- I created this dish by accident so I just ballparked the spices before tweaking measurements. This yields about 4 cups (I'd have about a 2-cup serving with one more leftover for the next day), so if you're planning on a potluck, larger amount to cook for your family, OAWC/OAMC, etc. you might want to use the multiplier on here to figure out the correct proportions for the ingredients. -- posted by &lt;a href="http://www.recipezaar.com/member/1375473"&gt;the80srule&lt;/a&gt;</description>

The beets make it a little bit sweet and earthy and the feta adds a nice salty touch.

			<description>A winner on another foodie site where I am a member, food52. Apartmentcooker's recipe looked too amazing to lose, so I saved it here with the review from the webmasters. There were comments that you could double the recipe for a larger casserole dish, rather than do individual servings.... 

Sweet potatoes are often made even more sweet using ingredients like maple syrup, brown sugar, molasses, and even marshmallows. We like that apartmentcooker goes definitively in the other direction by adding bacon, parmesan, onion, garlic and a cr&amp;egrave;me fra&amp;icirc;che bechamel, while still paying homage to more traditional recipes (she adds a tablespoon of brown sugar to the bechamel, with delightful results). Thinly sliced sweet potatoes are layered in the baking dish (we used one dish big enough for two rather than individual ones) with bechamel, crisped bacon, and raw onions and garlic, which infuse the gratin with their fragrance. A sprinkling of parmesan on top helps with browning, but if you want a little more color, pop the gratin under the broiler for a few minutes at the end. This is what I came up with.  
Often I make tonnes of roasted garlic and red pepper and freeze it for later ease of use.   (fresh roasted red pepper is really nicest)

I had leftover potato &amp;quot;meat&amp;quot; from making potato skins so I made home fries with them, from 8 small potatoes without skins so that probably equals about 4 regular potatoes and 6 small ones. If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes. 			<description>This is my basic rice recipe.  I like it because I can throw whatever's in the cupboard in or just make it with onion.
You can add about a 1/4 cup of any kind of veggie you like to the onions when you saut&amp;eacute; them to add flavor.  Ive added mushrooms, carrots, broccoli, bell peppers et cetera to the onions.   It can be made with cheese or without.  I like to use Parmesan but have used cheddar, provolone, or mozzarella in a pinch.  I find its creamy even without any cheese.   Careful not to over salt, youll ruin it. When I don't have cherry tomatoes on hand, I sub two or three sliced roma tomatoes (with a bit of shredded mozzarella sprinkled on top instead of the chopped cheese stick).  This makes a lot of &amp;quot;juice&amp;quot; if let sit for 30 mins or longer, so sometimes I'll serve this over a bed of romaine (it's my boyfriend's favorite &amp;quot;salad dressing&amp;quot;).  I use dried herbs, but I'm sure fresh would be amazing! 			<title>Dehydrator Creamed Corn</title>

			<description>To rehydrate and cook dried corn:  In a saucepan, combine 1/4 cup dried corn with 1 cup hot water.  If the corn has been blanched, it will rehydrate in 5 to 10 minutes, unblanched corn will take about 30 minutes or longer.  Bring the rehydrated corn to a boil and cook for 3 to 5 minutes, cover and let sit for 5 minutes.  Drain.  This will yield 3/4 cup cooked corn.
