Healthy Chicken Salad

I adapted this recipe from bestliferecipes.com. I wanted to increase the fiber a bit and added pears.. I think the taste is great and it's a recipe for one. I cook up the chicken breasts on the weekend and divide them into 4 oz portions. It can be thrown together in no time! -- posted by BayLeigh Ann

Morgan's Simple Cucumber Tomato Salad

I make this salad all the time for my kids, and my youngest (Morgan) absolutely loves it. If she eats nothing else on her plate, this salad is always gone. I usually use regular old vine tomatoes, but it's equally good with a pile of halved cherry or grape tomatoes.
Roast Beef (Or Chicken or Pork or Duck) Salad

This recipe was originally made with leftover roast beef but is equally delicious with leftover rotisserie chicken, pork or duck. "These rich flavors are typical of Michelle Bernstein’s excellent and categorization-defying Cuisine à Latina, from which the recipe has been gently adapted."

Asian-Style Shrimp Caesar Salad

A friend from New Zealand served this to me about 20 years ago. Over the past 10 years I have self-published 8 cookbooks on various subjects and this is absolutely the most-commented on, highest praised recipe of all - for its awesome taste and simplicity. Be sure to use ONLY the Marukan brand Seasoned (orange label) rice vinegar or it just won't taste the same. For a good diet dressing substitute half the oil for water and toss with a green salad. -- posted by Ronalynne

Felfel B'tomatish - Algerian Pepper & Tomato Salad

This is a classic Algerian 'salad' dish. You can either grill the tomatoes & peppers over an open flame, deep fry them or roast them. My family loves this recipe & we always mop it up with fresh bread! You can also serve this as part of a mezze selection. The vinegar is of course optional but it acts as a flavour enhancer so I do recommend at least trying a little of the salad with a few drops of vinegar on! -- posted by Um Safia

Sesame-Soy Dressing for One

I had some soy ginger dressing but I had forgotten that I'd used it up and my chicken garden salad really cried out for it. I whipped this up and really like it. No ginger though.

Note: I made this low calorie but one may find this dressing does not stick to the salad well. If calories aren't a problem for you, replace the water with a mild oil such as canola and add water if needed after tasting. -- posted by Chef Tweaker

Basil-Arugula Salad With Chicken & Prosciutto

This is a salad-ified version of a chicken pasta dish I had once at Cheesecake Factory. It is both hearty and light, and rich with complex flavors. The basil adds a pesto-like element to the ensemble, and the dijon in the dressing (modified from Mille® ™'s Dijon Paremsan Dressing, recipe #21008) brings out the peppery taste of the arugula. Because prosciutto is rather salty, be stingy with salt on this. The prosciutto should offer just the right amount. -- posted by SJBG

Tuna-Tomato Salad

This was something I made up while living on a student budget in Paris, France. This is another example of how the greatest things that come out of the kitchen are not a result of planning. I just looked around at what I had in the cupboard, put them together and it worked! It is a great starter or side dish. One rule though...you MUST add the blue cheese! It is what brings everything together. I kind of think of this as the French version of a caprese salad. -- posted by dk683

Ripley Tomato Salad

From Folk's Folly Steakhouse in Memphis, TN. This will fill you up if you eat it by yourself. This plus one slice of french bread is a divine dinner! Ripley tomatoes are from Ripley, TN and I have no clue if you can get them outside of TN & MS. If you can't get one, just get the biggest firmest one you can find! Ripley tomatoes are so red they almost look fake when they are ripe. Use low fat cheese and dressing to save calories. I use fresh ground black pepper and fresh ground sea salt. I use a TON of basil b/c I LOVE it -- use it to taste. PS This is the ONLY way I eat tomatoes -- period. Cook time is assembly time and serving size depdends on if you serve it alone or as a side. -- posted by SarahBeth131

Tortellini Salad

I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like!
Gomae - Japanese Style Spinach Salad

Beautiful Tomato and Mint Salad

Good enough to serve on its own, with plenty of good bread and decent white wine. Perfection satisfaction and simplicity all rolled into one. You'll never want to use basil again! The only specification is that you use the best fresh tomatoes you can find, preferably on the vine and deep deep red in colour. I prefer to chill the tomatoes to make for easier slicing, then allow the finished dish to come to room temp.
Grilled California Avocado Salad

Large avocados are recommended for this recipe. A large Haas avocado averages about 8 oz (here in Miami - our avocados have a tendency to be a bit larger). Adjust the the quantity accordingly. This is easy, tastes great, & has that WOW factor! It is an elegant first course that combines with baby greens, a spicy salsa and a delicious herbed goat cheese.
This is a favorite at a local restaurant I used to work at named Elijah's here in Wilmington. All of the topping measurements are approximate, put as many or as few as you want!
Avocado Clementine Breakfast Salad

I'm not an ordinary breakfast eater (by North American standards). I like savory dishes and soups and all kinds of interesting things for breakfast, but rarely enjoy sweet cereals or toast. My family thinks I'm insane, but I don't care. In any case, this particular salad appealed to me one morning so I threw it together and it turned out delicious. Prep time includes time to boil egg. While egg is boiling, cut all the rest of the ingredients and it comes together in a jiffy. This works well using Catalina/French style dressing as well. -- posted by Cookworm
