I decided to make this a 2 serving dish instead of 1 based on the calorie and fat count along with the huge restaurant amounts that are normally served. My only change was cutting the 8 oz chicken breast into 2-4 oz size. 			<description>This is based on a recipe that was featured in the Kenosha (WI) News.  The recipe is from the Twin Oaks Country Inn in Wilmot, WI.  I made a few changes based on my preferences and things I had available.  For example, the original recipe called for breadcrumbs, but I used crushed walnuts.  I also made changes to the sauce so that it would be dairy-free. Though I am still experimenting with this, here is my current version.  It does not make extra sauce but is somewhat dry, because I don't eat it with rice.  I lightly steam the veggies (sometimes I add chicken) in water or broth and then give them a very quick fry in a small amount of oil.  The veggies are only suggestions - use what you like. 			<description>A tasty and different way to use some of the Sunday Roast leftovers on Monday! Although I have specified lamb in this recipe, beef would also work very well, it's just that I had roast lamb leftovers when I made these. These rissoles are lightly spiced and tangy - perfect for supper when served with salad, pickles, chutneys and maybe a naan bread or pitta bread to make a sandwich. They are easily made and can be prepared ahead of time and left in the fridge, as they hold their shape better when they have been chilled and are firm. These will also freeze very well; open freeze them before frying on a tray or plate until firm and then pack them into freezer bags or a plastic container. 			<description>This is a hearty chili without tomato chunks.  If you prefer chucks of tomato in your chili use diced tomatoes instead of tomato sauce.  This is just enough for a lunch for my husband, our toddler, and myself, but if we need a bit more I'd go to the 22 oz size of tomato sauce and or beans.  Do not leave out the salt since the little bit really brings out the other flavors.  IF you making a large pot to have left overs leave out the salt since chili always gets saltier as it stores.
