To prepare more quickly, I boil the eggs the night before.  It's a quick 5 or 10 minute lunch with a little advance preparation.  I like this with a nice sourdough bread, but you decide. This basic idea could be varied easily-why not for older people in the nursing home with knock knock jokes or something? But use an unbreakable container instead of glass.  Or maybe tasks that you are reasonably able to do? 			<description>This is a single pie crust recipe for one 9 inch pie crust from Betty Crocker The key is rolling the crust between the wax paper so as to not dry it out by adding flour.  We use the butter-flavored shortening. That allows for the flakiness of the crust and the yummy flavor of butter.  Also, when baking the pie, I suggest covering the crust with aluminum foil until 10 minutes before the pie is done.
