Pea Soup With Crisp Prosciutto

A quick to prepare, low-fat and delicious soup adapted from a recipe in the July 2008 issue of the 'Australian Table' magazine. Not as green as its recipe sibling - Recipe #135165 - this is basically a pea-ified version (if I can be allowed to coin that word) of a classic potato and leek soup, which is what drew me to the recipe. Potato and leek soups have always been a favourite of mine, one of those really safe, classic, always delicious combinations, and always SO much better if a home-made stock is used. The original version of this recipe specified 5 minutes preparation time. Such times are clearly determined on the assumption that all the ingredients are magically ready to go. My guess is that it would take me 5 minutes just to wash and chop the leeks, so I've increased the preparation time to 10 minutes. That still makes this a quick to prepare recipe. For a vegetarian version use a vegetable stock, such as my Recipe #135453 which makes productive use of all your vegetable peelings, and omit the prosciutto. -- posted by bluemoon downunder

Creamy Tomato Soup

Tomato soup made from fresh tomatoes with a creamy broth base. This recipe was inspired by one of my favorite restaurants in Atlanta. When I concocted it, I had a craving for their tomato soup, and modeled it as best I could with my own shortcuts. I like this recipe because it is versatile and you can make it as long as you have the basic ingredients and some herbs of your liking. I have some different variations of my own, but this one is the quickest and gives you the most flavor. Enjoy! -- posted by Rustic Belle

Curly's Beer Cheese Soup

This recipe is from Curly's Pub located in Lambeau Field, home of the Green Bay Packers. I love beer cheese soup. This stuff is so creamy and so easy to make with easy to find ingredients. If you have an immersion blender you can blitz this right in the pan. Otherwise you can take it to your blender. Top with some unbuttered popcorn. GO PACK GO!!! :) UPDATED: I checked the recipe and it did call for 6 cans of beer, but it cannot be right. I called Curly's Pub at the stadium and got the correction from them at 2 cans of beer. The recipe they had given out was for the larger amounts made for the restaurant. 6 Cans of beer makes a bit more sense then. LOL. -- posted by Jess4Freedom

30-Minute Pea and Asparagus Soup

From the Reader's Digest 30-Minute Cookbook. I chose to try making this recipe because of the tantalizing photo in the book, and it was every bit as good as the picture promised -- but the BEST thing about it is, there's no pre-prep prep! Anything that gets chopped or measured can be done during cooking time. If you have a hand blender, this is easy-peasy stuff. Before preparing your other ingredients, it's best to start the stock heating first, so it boils as soon as possible. That's what makes this such a quick and easy recipe. -- posted by ladydae

W. Sonoma Indian Red Lentil Soup

This recipe is from the Williams Sonoma "Soup for Supper" cookbook. I think it is exceptionally good. While lentil soup is usually comfort food, this variation makes it a bit exotic, too. The fragrant Indian spices lighten and brighten the simple, homey flavor of the soup. Red lentils have a tendency to break down into a coarse puree as they cook, so if you prefer some texture, omit the blender or food processor step. -- posted by The Mad Slovak

Kevs Chili

My husbands chili recipe, created after several tries and various iterations of other recipes, we found this one to have a nice flavor and just the right amount of heat. We recommend using the Paul P. chili powders but of course you can use your own combinations of what you have on hand.
Broccoli Cheese Soup - Ww

I've been experimenting with reduced fat velveeta cheese in soup and came up with this yummy soup. The cheese is not overwhelming, but it does provide a creaminess to the soup. The flavors are very simple, not fancy in any way - but it tastes great and is very low in calories too!
Hot or Cold Carrot Soup

I love carrot soup. This one can be hot or cold. If you want it hot, you can butter up your croutons for an even heartier taste. If you want it cold, you can use whipped cream to bring out the flavor of honey and fresh ginger.
Penang Spicy Vegan Pea Soup

This soup is a spicy, fresh tasting soup entirely different from any dried pea soup. If you like Thai food, you will love this. If you are vegan, just leave out the fish sauce or use a vegan version of nam pla sauce. This recipe came from Whole Foods Market originally. It was a big soup swap hit and is easy to make and low calorie and low carb. Do NOT try to replace fresh herbs with dried. The fresh taste relies on fresh ingredients. -- posted by NHGibby

A friend gave me this recipe in an effort to introduce quinoa into our diet. Quinoa is very good for you and it's yummy in this soup. Amaranth was also new to us - we found it at Good Foods in a bin where you only take as much as you'd like. I'm so glad I made this! Leftovers are yummy too. Maybe add more milk if it gets too thick. Also, I used skim milk instead of whole, but I added some extra unsalted butter. -- posted by Lemon Drop

Arbroath Skink

A variation on the traditional Scottish classic soup, Cullen Skink. Unlike any other type of fish soup, this one is an adaptation I made, and it has a slightly stronger flavour that Cullen Skink, but equally delicious. This one is made with something called an Arbroath Smokie, which is a whole haddock smoked to a stronger flavour than the commercially available ones, and comes from the town of the same name in Scotland. The recipe does not recognise the term Arbroath Smokie, but I am sure that anyone with roots in Scotland will recognise it immediately. -- posted by Phyllis Elias

White Gazpacho Malaga-Style

This is based on a recipe from David Rosengarten’s book, The Dean & Deluca Cookbook. He says, “This white, silky-smooth gazpacho is a traditional variation from Malaga in southern Spain. We’ve added a little sugar to create a wonderful sweet-and-sour backdrop for the classic grape garnish.” Cook time doesn’t include the several hours refrigeration time before serving. This is truly a delicious soup, yet beware the egg remains raw since the soup is not cooked, and please don't overdo the garlic since raw garlic can swing the flavor towards the acrid.
Secret Ingredient Curried Cauliflower Soup

Crawfish Mirliton (Chayote) Soup

My Cajun mother makes a wonderful mirliton casserole for the holidays that's always a hit. I had a craving for mirliton and crawfish one day, and pieced together this soup from several recipes and a few traditional Cajun cooking methods.

Some people prefer to peel and pit mirliton before using them, but the whole fruit is edible.

Crawfish tails are usually mostly cooked before being peeled and bagged, but it's best to be on the safe side. Sauteing them first makes sure that they are fully cooked and flavors the butter for the rest of the soup. -- posted by Jennifer Cross

Ajo Blanco With Almond, Cucumber and White Anchovy Salad

This is our chef' son's recipe. He had it published in the Aus magazine Country Style. I'm posting it here so I can share it with my sister. It's delicious as a starter on a hot day. White anchovies and sherry vinegar are available from continental delicatessens and gourmet food shops, micro herbs can be ordered from fruit and veg shops. Overnight soaking of almonds hasn't been taken into account in prep time. -- posted by JustJanS

7 Samurai Vegan Soup

Seven vegetable, vegan, gluten-free, dairy-free, low-fat soup that is surprisingly tasty despite all of those adjectives working against it. I created the recipe myself for my boyfriend who loves soups. For a kid-friendly version--puree this soup after you add all of the yucky, good-for-you vegetables and then add the kid-approved veggies, like potatoes, into the soup afterwards and cook until these veggies are done. -- posted by krolek

Soup

This is a basic recipe for a clear soup--can be made with what you have already and helps use up leftovers. Doesn't it bother you when you find recipes that require you to buy cumin nostrils or some other obscure ingredient? Not this recipe. Do whatever you want to do with the ingredients beyond the basic part of the recipe.

This helps make a weeknight supper by adding a good salad and bread or a sandwich. If I add a lot optional ingredients it can make a meal on its own.

I like to make a large batch and freeze it in 2 serving batches. Remember that some veggies and dairy don't freeze well. -- posted by krolek

Tomato and Apple Soup (Dairy Free Gluten Free)

This is a really delicious soup that I got from the Gluten Free Club. It didn't give the servings, but I doubled it and it filled my standard soup pot, so I'm figuring 5 (1 cup) servings for the regular recipe. I adjusted the recipe a bit to add a little more seasoning. You could make it "cream" of tomato by adding cooked cauliflower in before pureeing. I also seeded the tomatoes after skinning (so I didn't have to sieve it). -- posted by WI Cheesehead

Roasted Beet and Potato Soup

I recently roasted five pounds of beets and have been using them for side dishes. I decided to make soup last night, and it turned out quite nice. You may get more servings, but we really like our soup and 4 servings is all I got. I am sure that canned beets would also work quite well. I like evaporated milk because it brings richness with fewer calories, but half-and-half would also be good. I don't usually have fresh celery, but 1/2 cup of chopped celery could be used instead of the flakes and 1/4 tsp fresh ground pepper instead of the peppercorns. Add an hour to the cooking time if you need to roast fresh beets. -- posted by duonyte

Veggie Green Drink

I came up with this one night after a long drive from New York to Philadelphia. All I had eaten were french fries, so I was desperate to get some greens into me fast! This drink took care of the craving right away. The stevia helps to blunt the harsh taste of the veggies. If you want to make it a soup, use less water and perhaps add some spices instead of the stevia. Also, the yogurt can easily be omitted if you are vegan or have dairy issues; just use less water, -- posted by Jainene

Spicy Pumpkin Soup

This is a recipe from a German cookbook that my husband made, it is supposed to be Asian-style. We made some changes to it to fit our tastes more. It is a lot of work, but it is really wonderful, warm and filling. It is important to chop everything before you start. For the pumpkin seeds at the end, I would suggest making your own with Mirj's recipe with salt and cayenne pepper: http://www.recipezaar.com/Roasted-Pumpkin-Seeds-13549 Prep time includes the chopping. -- posted by Tea Girl

Roasted Butternut Squash and Leek Soup

This is my adaptation of several squash recipes I've seen. This is a great recipe for a first course of dinner, lunch or snack. It can be prepared up to 2 days ahead of time (bring to work!). Reheat refrigerated soup before adding garnish.

For vegan option, use Vegetable stock rather than chicken stock, substitute olive oil for the butter and omit the cream. Make sure to use a vegan wine as well. -- posted by Austin Vegas
