			<description>Amazing recipe to marinate salmon prior to smoking.  We've used this recipe the last 4 years with great success.  Gives a tangy, flavorful bite to smoke fish strips.  We cut the fish into 1-inch wide strips approx. 8-10 inches long and tie two together with thin twine.  We then loop the tied strips over slats in our smokehouse for the drying time and smoking.  We smoke slowly outdoors in our smokehouse using a combination of alders and apple chips.  We use red cooking wine for our preferred flavor.  Recipe taken from www.fishsniffer.com, Cookin' Your Catch, by Mark Elkins.  This is an expensive marinade, but it will fill a five-gallon bucket and do approximately 10-12 huge fish. The original recipe calls for a huge fillet salmon on a full cedar plank, but I've done this recipe for individual salmon fillets on smaller planks.  It's a much nicer way to serve them, and easier to do for a smaller group. 			<description>Knocked this up for a dinner party last night, as a mild dish. Tasty and quick!
This will vary tremendously depending on the curry paste you are using. Taste it first. If it's super-hot, you'll need to reduce the amount unless you want a hot curry. If this is the case, you may need to add in come more flavouring. I've tried successfully with a tin of red thai curry soup if you're going for the easy approach, otherwise add grated ginger, cumin, coriander and a splash of fish sauce and rice wine vinegar.
Of course, there's plenty of more complicated recipes out there, and this one's supposed to be easy, so try to go for a curry paste that's tasty but mild.
