Minna Canth (1844-1897) was a Finnish playwright, novelist and essayist as well as an energetic fighter for women's rights and social justice. This recipe comes from the Canth family recipe collection and was printed in the Perinnemakuja maakunnista cookbook. I've modified it slightly - the original recipe called for 1 tbls of ground bitter orange peel, which I don't like at all, so substituted cinnamon instead. Serve this for 'Brunch', or for a main meal serve with potatoes and coleslaw, or cucumbers in sour cream (try &amp;quot;Jolean's Cukes in Sour Cream Recipe #121834&amp;quot; by Stacky5LRC - it's very good).  You can make the sauce in advance, or use store bought Cranberry sauce if youre pushed for time.  The Finnish name for the carrot pancake is Porkkanapannukakku, for the Cranberry Sauce its Karpalokastike. I have not tried this recipe from Scandinavia, but after posting it, I do intend to. This is evidentaly a popular way of serving swedes in Finland and usualy is anaccompaniment to pork or ham. 			<description>This is a twist on the traditional way of serving cloudberries in Norway, I have added lavender and vanilla to enhance the  ephemeral flavour of this delicate arctic berry. A member of the rose family, cloudberry bushes produce delicious yellow/orange berries that are highly prized in Scandinavia. Smaller than blackberries and raspberries, cloudberries are picked at the end of July and the beginning of August.  The cloudberry is almost exclusively sold fresh or made into jam, but it's also used in liqueurs and as a filling in sweets and chocolates. 			<description>I discovered these pastries as an exchange student in Finland and they are my absolute favorite in the whole wide world (my boyfriend's too). I have been searching high and low for a recipe and finally I found this one on Axis of Aevil so I thought I'd share. Can't wait to try it!!

There's the traditional Finnish filling as well as an American alternative since quark is pretty hard to find in the States.
