Finnish Beet Salad

This salad is made in Finland in two ways: either with herring (rosolli) or without (punajuurisalaatti). It's my favorite beet salad, and although I've never made it including the herring I'm sure it would be tasty that way, too! Based on a recipe from "The Finnish Cookbook" by Beatrice A. Ojakangas. First prepared in our household by my husband Mike. :) -- posted by Julesong

Finnish Blackberry Yoghurt Pie

This recipe is my version of the Moosewood "Sunday" Mustikkapiiras. I love blackberries so replaced the original blueberries with these. I tend to use a good Greek yoghurt for this also. -- posted by Missy Wombat

Elina's Raspberry Chocolate Cake

I'm afraid I don't know who Elina is, but I like her cake! I haven't actually made this myself yet, but had it at a birthday party, with dark chocolate frosting and a dollop of whipped cream. Mmm! If you like the combination of fruit and chocolate flavours, give this a try! The cake gets better with time, so bake a day or two before serving and keep refrigerated. -- posted by stormylee

My Mum's Apple Pie

The only real kind of apple pie, finnish-style I guess. This isn't what most people, especially americans, are used to but it's delicious and tastes just as good after being frozen and melted as it did freshly baked.
Norwegian Cloudberry Cream With Lavender and Vanilla

This is a twist on the traditional way of serving cloudberries in Norway, I have added lavender and vanilla to enhance the ephemeral flavour of this delicate arctic berry. A member of the rose family, cloudberry bushes produce delicious yellow/orange berries that are highly prized in Scandinavia. Smaller than blackberries and raspberries, cloudberries are picked at the end of July and the beginning of August. The cloudberry is almost exclusively sold fresh or made into jam, but it's also used in liqueurs and as a filling in sweets and chocolates. They are difficult to substitute - but I imagine raspberries or lingonberries would be a lovely idea if you cannot get cloudberries. -- posted by French Tart

Lingonberry Crumb Pie

An absolutely delicious tart-n-sweet treat! If you can't find lingonberries, use cranberries - you may want to decrease the amount of sugar in the recipe somewhat, as lingonberries are seriously tart and the amount of sugar reflects that. ;-) Serve this pie with caramel sauce for an added touch of decadence.
Frozen Festive Vodka or Tequila Bottles With Herbs and Berries

Another GREAT Jamie Oliver recipe, and one that I am preparing for New Year's Eve! Jamie says you can use any spirits or liquor, but he suggestes vodka and tequila in his recipe. These bottles look SO festive and pretty, I plan to use holly, berries, bay leaves, fruit slices, ivy and woody herbs for my bottles this year. DO check that the liquor bottle fits INSIDE the plastic water bottle first! This recipe idea for serving liquor originates from Scandinavia. (Prep time is for freezing the bottles.) -- posted by French Tart
