Finnish Beet Salad

This salad is made in Finland in two ways: either with herring (rosolli) or without (punajuurisalaatti). It's my favorite beet salad, and although I've never made it including the herring I'm sure it would be tasty that way, too! Based on a recipe from "The Finnish Cookbook" by Beatrice A. Ojakangas. First prepared in our household by my husband Mike. :) -- posted by Julesong

Marinated Beet Salad

A delicious salad for any occasion. If you are lucky enough to live where you can get fresh lettuce in December this would be fantastic on a Christmas table. Don't be squeamish about onions and raisins, they go really well together. I have seen similar receipts in Polish and Finnish cookbooks. -- posted by KookieMomster

Piparkakut - Finnish Ginger Cookies

Piparkakuts are a traditional holiday cookie in Finland. They are usually cut into round scallop shapes, but little boys and pigs are the traditional shapes during the holidays.
Christmas Ham (Joulukinkku)

Sweetened Potato Casserole (Imelletty Perunalaatikko)

The traditional way of making one of the Finnish Christmas staples. Flour is added to warm, mashed potatoes and the mixture left to stand in a warm place for several hours. The amylase in the flour begins to break down the potato starch into sugars, sweetening the dish. Now, try as I might, I can never get it to work well enough and have to resort to the modern way of adding treacle!! So, I'm listing it as an optional ingredient! -- posted by stormylee

Baked Rice Pudding (Unni Riisipuuro)

Based on a recipe from Beatrice Ojakangas' cookbook, The Finnish Cookbook. If I said that I love this recipe, it may be my taste buds, heavily influenced by the Finnish-American culture in which I grew up! To me and my visiting brother, this is divine! As an added bonus, my brother researched foods that help one with quality sleep, and this is among them! :) Will my DH eat this -- not on his life! He did taste it though, so he knows what he's missing! NOTE: In its introduction, Beatrice explains, "At Christmastime, a blanched almond is often pressed into this pudding before it is served, and it is said that the person who gets it will have good luck during the following year." -- posted by mersaydees

Finnish Rauma Cookies (Rauman Piparkakut - Finland)

This is from "Best of Finnish Cooking", a cookbook by which the author is passing on Finnish cooking heritage to her sons. I haven't tried it yet. It differs from the other piparkakut recipes in that it doesn't use corn syrup. I think the sour cream in this one takes the place of it. -- posted by Debbie R.
