When it's thawed and the moisture has been squeezed out, the texture changes to chewy and firm, rather than slippery and mushy. 			<description>This is a twist on the traditional way of serving cloudberries in Norway, I have added lavender and vanilla to enhance the  ephemeral flavour of this delicate arctic berry. A member of the rose family, cloudberry bushes produce delicious yellow/orange berries that are highly prized in Scandinavia. Smaller than blackberries and raspberries, cloudberries are picked at the end of July and the beginning of August.  The cloudberry is almost exclusively sold fresh or made into jam, but it's also used in liqueurs and as a filling in sweets and chocolates. Update:  Finally got to make this deliciously ooey, gooey pancake.  I also added a dash of vanilla and would also recomend decreasing the butter to about 6 tbs from 8.  I also preheated the oven to 400 degrees to melt the butter and then decreased the temp to 350 when I put the batter in.  Oh so yummy! There's the traditional Finnish filling as well as an American alternative since quark is pretty hard to find in the States.

The only other recipe that uses allspice and heavy cream had cumin in it, which isn't Finnish at all.  This dish is often served with browned rutabagas and boiled potatoes.  Simmering the ragout can be done on the stovetop or inside the oven.  The great thing about round steak is that it is a cheaper piece of meat.  However, a long, slow, low-heat simmer is necessary to make it tender.
