			<description>This is my best attempt to duplicate Scottish oatcakes, which I had previously only had from a box (brands such as Nairn).  I don't know how they would compare to homemade oatcakes in Scotland or Ireland, although in my search for a recipe, I've found that there are many varieties, including sweet or yeast-leavened.  This recipe is based on one I found in a Saturday Evening Post many years ago--which I adapted, lost, and then had to recreate from memory.  However, I am quite pleased with the final result!  Everyone seems to love them.  I think they are traditionally served with cheese, butter, jams, etc. but we just eat them plain. 			<description>I am attending a Catering course at my local TAFE and this is one of a selection of sandwiches we learned to make.  Fillings can vary, but the full fat cream cheese is necessary to make it set firm in the fridge, to facillitate slicing, and to maintain shape for serving.  Looks very clever.  The bread has to be sliced lengthwise by your baker or at home with a good breadknife. Can be made with two slices of ordinary sliced bread if rolled correctly - but may come apart at the seams if not.
Once you have made this for the first time - it becomes easier and is something which is inexpensive, can be made ahead of time, can always be frozen and kept on hand. 			<description>Corn tortillas (used in making Oaxaca-style quesadillas) are available at international and Latin grocery stores, and if you live in a large Latin-American community like I do then you can find corn tortillas in bags of 20-30 for like $2 or less at major grocery stores. Flour tortillas probably won't work as well for this and definitely won't have the corn flavor and base. Never spend money on premade again! You can also control how large or small you want to make them (and keep them seasoned or not) not to mention salt content if you're watching sodium intake. 32 chips is all I could fit on my convection oven's cookie sheet so feel free to use more tortillas; the methodology is all the same. 			<description>This recipe for vegetarian-friendly, alcoholic gelatin jigglers (think Jello Jigglers meets Jello shots) combines fruit flavored vodka, uses seaweed-derived gelatin called agar-agar (as opposed to nondescript gelatin, which is likely to be animal-derived), and reduces paper/plastic waste (no cups). The ratio of water to alcohol is 1:1, so these jigglers are quite alcoholic! For better taste/less alcohol, you might consider reducing the amount of alcohol to 1 1/2 cups and increasing the amount of boiling water to 2 1/2 cups. Of course, it's all a matter of personal taste and preference.
