Twit Twooo, Hooting Halloween Owls - Halloween Cupcakes/Muffins

These are GREAT fun! Bake some chocolate fairy cakes, muffins or cupcakes, decorate them and then turn them into Hooting Halloween Owls! I made these last year for a children's Halloween party, and they all loved them. The recipe is based on our British fairy cake or angel cake recipe, where the top of the baked cake or muffin is cut off to create the "wings". I have stated some sweets (candy) that are British - please use your own local sweets to decorate the owls. This is a wonderful recipe idea that I have changed and adapted from Tana Ramsay, the wife of the famous Gordon Ramsay.....she has some great family recipes, of which this is one. (Preparation time includes the time to decorate and ice them after they have been baked.) My Recipe #328085 would also be great Halloween companions for these hooting owls! -- posted by French Tart

Fudge Cupcake Frosting

This is the frosting recipe that goes with the Fudge Cupcake recipe I uploaded. Will frost 18 cupcakes. You can also use those to frost a cake as well. If you have the time cool the cupcakes and cover them, let them sit for several hours before frosting them...it's makes them even better. -- posted by Foxfire13

Spooky Spider Cupcakes/Muffins for a Howling Halloween!

I JUST love these little spider cakes, when I make them, their faces make me laugh - well, I am easily pleased! Furthermore, they are VERY tasty - they have a much better flavour than NORMAL spiders I find, their legs are a little too chewy! The cake mixture is a double chocolate cake mixture - with cocoa and chocolate pieces, topped off with a chocolate butter cream. The decorations are made using Liquorice Allsorts and liquorice strings/laces or Catherine wheels as we call them in Great Britain. They are easy to make and can be frozen before you decorate them. I made these for TOTM Cooking School September 2008 - I hope you find the step-by-step photos handy when you come to bake and decorate them. An idea we had for an adult Halloween party - turn the spiders upside down so they have their legs in the air, and scatter wine corks amongst them on a plate........only joking! :-) If you fancy some wise companions for these spooky spiders, try these: Recipe #326716. -- posted by French Tart

White Chocolate Christmas Torte

I found this recipe in the bonus book from Simple and Delicious Magazine. This raspberry-filled cake is an especially lovely ending for a holiday feast. Don't be intimidated by the list of ingredients. It takes some time, but this show-stopping dessert is really quite simple, is what the add says!!! I haven't made this yet, but sounds so delish and looks so elegant. -- posted by diner524

Chocolate Roulade With Mascarpone Filling

We made this for Rosh Hashonah this year. It is a wonderful and very pretty chocolate roulade. This recipe is also wheat-free(uses potato flour), so it is suitable for coeliacs. Diana's Desserts, have had this since 2006 and I felt that, this, was the dessert for the High Holy Days.
Dark Chocolate Icing

I fumbled this together the other day while trying to ease my conscience over some oven donuts I had just made. I really wanted a rich chocolate icing for them, but just couldn't bring myself to break out the heavy cream and double boiler. This is simple, but so dark and decadent tasting that I sat and ate a fair amount with a spoon.
Cocoa Fudge Frosting

this is a frosting i came up with,,, I dont like SWEET icings and most i've tried are just that. it you like sweeter you can always use semi sweet chocolate instead of dark, and or add more sugar. you get between 4-6 cups of frosting, ive never measured.
as a side note I take the left over frosting and fold some whipped topping into,, makes a good mousse. -- posted by jamiej

My mother has used this recipe for years. It makes a "hard" icing; the icing gets firm quite quickly, so you have to work fast. The original recipe came from "Winning Seasons", a cookbook from the Junior League of Tuscaloosa, Al, in 1979. You can substitute 4 tablespoons cocoa for the unsweetened chocolate, if necessary. I usually use it on a sheet cake, rather than layers. -- posted by Librarybaker

Chocolate Peanut Butter and Banana Cake

From "Cake Mix Magic." Uses a devil's food cake mix (a nice change from the yellow cake mix seen in other recipes for similar cakes). Basically, a chocolate banana cake with chocolate peanut butter glaze. Yum. The author notes that chunky peanut butter can be used for the glaze if desired but will not produce a smooth satiny glaze. Prep time is an estimate. -- posted by the_cookie_lady

Twelve-Layer Mocha Cake

From Gourmet magazine: "What better way to celebrate the holidays than with something fabulous? In this elegant European-style cake, thin layers of different flavors come together in each bite. Fine-textured spongecake, soaked in espresso syrup, plays off of crisp hazelnut meringue, while the coffee and mocha buttercreams intensify the richness of a collapsed chocolate soufflé. The faint, bitter edge of dark coffee essentially saves this dessert from itself." -- posted by Sweet Jezebel

This is one of those rare, fail-proof layer cakes that tastes as good as it looks. It is tender, moist, and light.
Chocolate Sticky Date Pudding With Whiskey Butterscotch Sauce

Entered for safe-keeping. From “Super Food Ideas”, September 2008 (#1 Australian food magazine). Leftover cake and sauce can be saved for up to 3 days: store cake in airtight container at room temperature. Refrigerate sauce in an airtight container. Whiskey is an optional ingredient. I have tried to give U.S. equivalents of measurements. Double cream is the name in Britain for a very rich cream — containing 48% butterfat. Whipping cream in this country, by contrast, contains between 30% and 40% butterfat. Single cream in Britain is comparable to American half and half (and may also be called pouring cream), with between 10% and 12% fat. I am guessing that spreadable mascarpone will yield a similar rich creamy taste to finish off this dessert. -- posted by KateL

Wilton's Caramel Buttercream Icing

I love this stuff! I also really love that it's quick and easy to make. You don't have to cook the caramel cause you use ice cream topping caramel for this! The recipe came directly from Wilton's website. You can make it soft and spreadable or as stiff as you need by adjusting the amount of milk you add. Just follow the directions and it'll come out perfect every time. -- posted by Realtor by day, Chef by night

A quick basic cocoa frosting that isn't overly sweet -- I like it with toasted pecans! Make it mocha by adding instant coffee granules -- or leave out the pecans, and add the coffee granules, hazelnut extract and 1/2 cup hazelnut spread to make a hazelnut coffee frosting!
Italian Meringue Buttercream

A very versatile Buttercream. This recipe produces enough buttercream to cover three 9 inch round layer cakes. This recipe can be turned into chocolate buttercream, or spiced buttercream. You will need to have a candy thermometer, an electric stand mixer with a whisk attachment, a pastry brush and a bowl of water. This is my favorite buttercream! It's sweet, but not too rich and just the right consistency to do just about anything with it. The recipe is from my pastry arts school. -- posted by pastrygirl_5280

Garth Brook's German Chocolate Cake With Coconut Frosting

Trisha Yearwood says every February, when it's Garth Brooks birthday, she makes this beautiful and delicious cake for him. She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! If you have some frosting left over, it's good spread on graham cracker or on brownies. Okay, it's also good right off the spoon! Enjoy! -- posted by Sharon123

Cookie Dough Cupcakes

Can't decide between cookies or cake? Have both!
I discovered this recipe on a blog (cupcakeproject.com) and made a few adjustments to the directions as the original was a little difficult to follow.
These cupcakes are absolutely delicious and complete with a raw cookie dough surprise on the inside! Topped with some cookie dough icing and this makes for a fantastic treat for any occasion! (This recipe looks overwhelming, I admit, but it's pretty easy and well worth the effort!)

NOTE: If you use any flour other than self-rising cake flour as the recipe calls for, it will cut the number of cupcakes in half!!) -- posted by pott3r

Dark Chocolate Cream Cheese Frosting

This is a rich chocolate frosting with a hint of cream cheese flavor. It is not overly sweet and will not overpower any cake that you have baked. If you are looking for something nice and sweet but not over the top, this is the recipe for you. I came up with this for that reason for me.
Boston Cream Pie

An ancient Good Housekeeping recipe that I religiously make every New Years day. If you've never made a scratch cake, you don't know what you're missing. Using cake flour is a must. See Lennie's recipe #87689. Be sure to properly measure your flour by lightly spooning into a measure cup until overflowing then using the backside of a knife to level off. Too little flour will produce a callapsed cake and too much will have wet spots with dense layers. Cake layers freezeable.

Here is a frosting I mostly use since ages, it is creamy, foamy, not too sweet, contains no icing sugar . There is a lot of beating involved, and once you have reached the foamy texture you have to work quickly before it gets too firm to handle . Frosting pipes perfect rosettes, truffles , frosting macaroons, fairy cakes, and if sandwiching and frosting a larger cake just double the recipe. -- posted by shirlgirl

Decadent Almost Fudge Brownies for the Church Bake Sale

Adapted from a microwave cookbook recipe that my family loved, this recipe was a "Most Requested" item for years every Sunday at my church bake sale. (It shared top honors with the Lemon Meringue Pies I made). PREP time does NOT include brownie cooking/cooling time - Frosting is made after the batch is out of the oven & cooled. -- posted by DriverMama

Chococonut Pandan Chiffon Cake

This is the easiest pandan cake I've ever made, and best tasting too! I made my husband rank his favourite cakes that I've ever made and I've never been able to outdo the Choco Banana cake until this one!.We're both watching our weight, so I've reduced alot of sugar in the recipe, so it's not too sweet at all. Enjoy! -- posted by Clabibi

Microwaveable Chocolate Ganache

No double boiler needed! Use it for icing or filling a cake, or to make truffles. Recipes vary slightly so I wanted to post my go-to ganache so I can find it every time. And you can easily double or triple this one. My basic ganache uses a 2:1 ratio of dark chocolate to heavy cream, 3:1 ratio of white chocolate to heavy cream, somewhere in between for milk chocolate. Those measurements don't translate perfectly in a measuring cup so the 2:1 ratio is below (most common) The better the chocolate the richer the ganache. I love mixing semi-sweet with bittersweet. At room temperature it's a perfect truffle consistency. It can be flavored with extracts or liquers. Hazelnut extract makes it so yummy! Grand Marnier would be good too, but is delicious plain. -- posted by Chef #1530933
