			<description>One of the most popular dishes of the Philippines!!! I'm half Filipino...this is the method both my parents used to cook this yummy meal. I like to add potatoes to the Pork style only.  
Also note: This is as close to the measurements that I could guesstimate. When I was taught to cook this dish, my parents would just dump in the ingredients. I've done the same since and learned to perfect it on my own. I chose to use some of the ingredients I listed because my belief in traditional diets. Lard, coconut oil and bones (for marrow) give the dish the most authentic flavor you can find. When my grandmother would cook with bones, she'd break them to release as much marrow as possible. 			<description>I am posting this here so I don't lose it!  This is the first time I got this right - at least the way my MIL and her family makes it. (Note the measurements are still altered by taste: too sour, more soysauce; too salty, more calamansi juice).  If you don't have calamansi (a native small lemon that's sweet and sour at the same time), you can try using meyer lemons.  Typically my inlaws use london broil, but you can use any cut.  One of the methods used to tenderize the tough cut (yet cheap) cut of meat is to pound it. 			<description>I tried this coconut-flavored treat when I needed something to take to a pot luck for my Filipino-American Experience class. It comes from Phillipine Recipes Made Easy (which seems to have a lot of authentic Filipino dishes). It seems to be just like the Hawaiian Haupia to me, except some Haupias have fruit mixed in. To dilute coconut milk, use 1/2-3/4 cup water to every 1 cup of milk. Make sure you use coconut MILK and NOT coconut CREAM or JUICE. When DH was in grad school one of his professors invited the entire class and their families to enjoy a Filipino meal prepared by his wife, Priscilla.  She fed about 50 of us seated on the floor in front of long rolls of paper!  20 years later, that professor is no longer at this school but my husband and his son-in-law now teach here.  Rachel, Priscilla's daughter, shared her Mom's recipe with me.  She has added slow cooker instructions to fit her busy lifestyle but it is still the same great flavor that her mom prepared for us over 20 years ago.  Thanks Priscilla and Rachel!! This desert can be made with two layers of filling or three depending on the size of your baking pan.  I usually use a smaller glass pan with more layers, because I like the layers, it fits in the refrigerator better, and with the glass you can see the pretty layers. :)  Cooking time doesn't include the time to chill in the refrigerator or freezer.  Serving size can vary by the size dish you use.  You can use a large dish with only 1 or 2 layers and take it to a potluck to feed many or a small dish for the family. Note: In response to a question about the recipe; Filipino food does tend to be on the heavier side, but in an attempt to lighten this dish, you can omit the sugar, or use a sugar substitute, but the banana ketchup is necessary to sweeten the sauce. 			<description>This recipe was given to me by a dear friend, Rashida, but, being a picky eater, I revised the recipe a little. The original called for the chicken to be served in whole pieces with the sauce over rice. I have to admit that it's appearance didn't appeal to me, even though the taste was wonderful. I like to take the chicken, shred it, strain the sauce and thicken it, then add back together and serve over rice. It's really versatile, you can use a whole chicken, cut up, or all thighs if you choose. I wish I could call him for the recipe, but we haven't talked in months so I have been searching for the recipe online. I think I finally found it, although I'm not sure it's the same thing since I haven't made it yet. I am posting it here for safekeeping. Prep time and cook time are estimates. I know he used to fry the meat in a wok or frying pan so I'll try making it like that when I finally make it. Good luck if you choose to make it! I have no idea how it will turn out, because I could not find any ratings for the recipe. 			<description>This recipe was born out of homesickness during my first year in Germany.  We were lucky enough to have an Asian store close by for the lemon grass.  Its best to use the regular/young chicken.  I tried using hen, but turned out rubbery and it didn't smell too good either.  Sea salt really brings out the flavor while the lemon grass adds to the &amp;quot;kick&amp;quot; factor of the dish.  If you have a coal-burning oven, then you will have a more flavorful effect.

			<description>Polvoron is a shortbread cookie/candy and a delicacy in the Philippines. Unlike normal cookies, it's not baked. It's typically made up of toasted flour, sugar, and powdered milk and then pressed into a Polvoron press/molder. If you don't have a molder (like me) you can use a mini cupcake pan. I typically make mine with toasted cashews.  Polvoron is typically individually wrapped like candies and given as gifts. I usually don't wrap mine since I make them for myself. I just store them in an airtight container.
