Cranberry Walnut Feta Cheese Salad

This salad is good on it's own or with a balsamic vinaigrette dressing. Toasting the walnuts adds some extra flavor and crunchy texture. -- posted by Chef #1156809

Cranberry Orange Holiday Relish

There are many versions of this basic recipe. This little riff adds a little extra color and crunch to an already delightful side dish that is rich in both flavor and fiber. Add different fruits, and it becomes yet another kind of salad, beautiful in its ruby-redness, especially on a bed of greens. Note: the toasted pecans are nice added the day before serving, but as time goes on, they become less crunchy - but still add a great flavor. This relish can be held in the refrig for a week or so, and can be frozen as well. -- posted by MaryRich

Cranberry Ranch Dressing

Last year my friend discovered a dressing by this name at our local discount store. I missed out on getting some. This recipe is my attempt to recreate this dressing. This dressing is lovely with cauliflowerets. The color really shows up and the taste is complimentary. It would also be a Christmasy contrast with broccoli florets. -- posted by Lorraine of AZ

Sarasota's Creamy Maple Brandy Salad Dressing

This is a wonderful easy dressing. Serve over some greens (romaine, spinach or arugula) with fall fruits, apples, pears, cranberries, nuts, caramelized onions, even blackberries or raspberries are great with this and crumble some blue cheese, gorgorzola, goat cheese, grated fontina or swiss - the combinations are endless. It is just a great dressing. My favorite salad happens to be; candied walnuts, romaine, blackberries, roasted pears, and caramelized onions. It doesn't get much better. You could add some grilled pork or grilled chicken and make a very hearty salad for dinner. -- posted by SarasotaCook

This comes from an old Saint Rocco church cook book.
Asparagus, Beans & Arugula Salad With Mustard Vinaigrette

Light and healthy. This can be a great starter, nice side salad, toss on some chicken or grilled salmon or scallops and make this a main dish. This is excellent by the way with grilled or baked salmon. This is great for a Holiday meal and is so easy. Store bought bagged greens, a can of cannelloni beans, a simple vinaigrette which is made ahead and uses fresh lightly blanched asparagus. Easy and quick and so healthy. You will spend a little extra for the micro greens, but it is well worth it. I took this on a big platter for a pot luck and topped it with my smoked salmon and the dressing. It was gone in 10 minutes. It really is a nice salad. -- posted by SarasotaCook

Grilled California Avocado Salad

Large avocados are recommended for this recipe. A large Haas avocado averages about 8 oz (here in Miami - our avocados have a tendency to be a bit larger). Adjust the the quantity accordingly. This is easy, tastes great, & has that WOW factor! It is an elegant first course that combines with baby greens, a spicy salsa and a delicious herbed goat cheese. Provided by the California Commission with a couple of tweaks. -- posted by Manami

Lobster, Shrimp Salad With Greens in Orange Cups

I call this my entertaining salad. It is just so pretty and always is a hit. Guests, family, dinner party, special night for you and your other half, or just a special one night salad. Now, I add lobster to mine, but with the combination of the shrimp and fruits, it really isn't too expensive. If you can't find fresh shrimp or lobster, frozen will work just fine. Just look for the frozen lobster tails when they put them on sale - One nice size tail is plenty for this recipe.
California Salad (Tomato, Cucumber and Onions)

Simple, refreshing and delicious! Juicy tomatoes, crisp cucumbers and crunchy onion combine with Miracle Whip to make an unbelievably delicious salad! You will be surprised and delighted...the juice from the tomatoes combines so well with the Miracle Whip, you'll never know that Miracle Whip is in it once the flavors have combined. You may be tempted to add something to it, it seems too simple to be good, but try it like this first, I guarantee you'll like it! I make it often for potlucks and BBQ's and people are always amazed at the simplicity of this recipe. Family legend is that relatives from California always made this salad and so it was dubbed 'California Salad'. Can easily be made low/non-fat, but I prefer the regular version. It is also great as a 'relish' on grilled meats, especially brats. This is also a very 'forgiving' recipe...I never measure anything, just throw it together. Just remember the veggie ratio is 1:1:1 and you'll do fine! **Unless you live in a warm climate and can grow or get locally grown tomatoes all year long, don't bother making this in the winter! Fresh, ripe juicy tomatoes are the key to making this salad** Easily doubled or tripled, but yield will vary depending on size of the vegetables. "Cooking time" is refrigerator time! -- posted by The Frugal Cheflady

Seven Layer Macaroni Salad

This recipe comes from The Boston Globe Cookbook (1981). This one can be made the day before. Great for pot lucks, picnics (keep cold for as long as possible to prevent spoilage), etc. I also added 3 slices bacon, cooked and cut into bite size pieces and 2 boiled eggs, sliced, and I sprinkled paprika on the final presentation. When I boiled the macaroni I also added 1 lid full of olive oil. I always forget to time how long it takes to put it together, but I'm guessing 30 minutes. -- posted by Toni in Colorado

A very simple easy salad, healthy start to the New Year. A light simple dressing with fresh ricotta salata cheese and served on it's own or serve over a bed of fresh baby greens - I happen to like watercress for this. A rich hearty oat bread on the side.
Cauliflower, Broccoli, Olive Salad With a Parmesan Dressing

A nice salad for company or for any night of the week. Lightly blanched broccoli and cauliflower (still warm), tossed with olives, onions, a creamy Parmesan dressing and topped with crisp bacon. If you want, blanch the broccoli and cauliflower ahead of time and keep in a ziplock container or bag until you are ready to serve. If you want to serve it warm, just reheat in the microwave. I also do the bacon ahead and just keep in a small ziplock bag or container. This is a great salad that you can do ahead. Then just toss and serve. And any leftover dressing is great over vegetables, chicken or just as a standby salad dressing. -- posted by SarasotaCook

Sarasota's Lemon Pepper Vinaigrette

A great light peppery dressing. The key is good peppercorns for this. You can use a blend which I like or just black peppercorns, but a blend really enhances the flavor. Mix up the whole batch and will easily stay in the fridge for 3-4 weeks. The Weight Watchers cookbook calculates the calories to be 307. Zaars calculation is lower which would make the points value lower as well. The Owner / Chef was nice enough to share her recipe with me, and had many other recipes that looked wonderful, but this is the only one I asked for. Unfortunately, the Bed and Breakfast is no longer there and the owner can't be contacted. She was a fantastic cook. The cherries with the combination of the pecans and the creamy dressing, just make it a perfect combination. I love to serve this with a honey roasted chicken, just something light and simple.
Arugula Salad With Fennel, Oranges and Pecorino Romano

This sophisticated salad features fresh and vibrant flavors. Although it is quick and simple to make, it is elegant when plated artistically and perfectly worthy of a dinner party of a Valentine's Day dinner. Ironically, I grew up in an Italian household and we enjoyed orange slices drizzled with olive oil and a grinding of black pepper, as well as fennel dipped in oil and pepper, so these flavors seem normal and well balanced to my palate! -- posted by Cookin'Diva

Spicy Coleslaw

I am a single woman living on my own. When I come home from work the last thing I want to do is slave over a hot stove or spend hours making dinner. I need quick and easy options. I try to utilize as many "convenience" items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own. Enjoy! -- posted by Chef #188403

Kristen's Kickin' Quinoa Salad

I was recently sold on quinoa and how awesome it is! Gluten free, an almost perfect protein, easy to prepare, the list goes on! This is a combination of two recipes, one of which I altered. The first is from this site, (#16399, Quinoa-Toasted). The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes. We thought it tasted a bit like sushi and loved it! Feel free to add more heat, but this had enough for our family as we've got wee ones. A large portion of the cooking time is cooling time. -- posted by SandwichQueen

Gina Neely says this is her go to recipe when she makes bean salad. This gives a nice fresh, zippy flavor to whatever she adds it to! From Down Home with the Neely's cookbook. -- posted by Sharon123
