Perfect Bread and Dinner Rolls

This is a recipe that I've been perfecting for the last couple of years. My wife and I don't buy store bought bread any more thanks to this recipe. It is also much healthier than any other bread recipe I've found but doesn't taste "healthy". I included ingredients that make this bread good for diabetics also. This recipe works best in a stand mixer but it would be fairly easy to halve the recipe and make it in a bread machine. I wouldn't recommend mixing it by hand (unless you have Popeye arms...). It's a fairly sticky dough. Prep time includes all 3 rises. -- posted by price403

Easy French Onion Biscuits

Another quick and easy recipe. This was in a small Bisquick Recipe book I got years ago. I added the cheese, but can't take all the credit, but they are still really good. Just mix and bake. Five (5) minutes to make, 15 minutes to bake and on the table. The best part is that these are just as great for company as they are for every night. I like to serve with a herb butter. -- posted by SarasotaCook

Russian Potato Bread

I got this recipe from a library book called "The Cook's Encyclopedia of Bread". It was made for dinner, but almost all of it got eaten the instant it got out of the oven. It's good plain, with butter, or with American cheese. The book says the potatoes give it a longer shelf life, but ours got eaten too soon to see if that was accurate. The number of servings is approximate, our bread-loving family of 5 ate it in two sittings, but it might last longer for other people. -- posted by Dixie Vader

Jalapeno-Cheddar Cornbread

A Southern corn bread that even this Yankee can love.
I'm originally from New England and wasn't raised on corn bread, and I generally found it dry and tasteless. But now that I'm living in Texas, I tried numerous variations on traditional recipes and developed this one that I like a lot, and that even Southern die-hard corn bread fans rave about. -- posted by Booted Bear

Heavenly Sweet Cappuccino Chip Muffins With a Cream Cheese Sprea

The best muffins I have ever tasted and the only way I enjoying consuming coffee. Even the cream cheese spread made with them is incredible just by itself. These are super easy to make and you can add your own fun twists to them easily ("frosting" them with the spread and decorating them or filling the muffins with the spread works well!). Make sure you keep the spread refrigerated as the cream cheese in it can spoil easy. Don't plan on piping the spread with a frosting tip unless you thin it out and leave the chocolate chips out as it will be too thick. Enjoy! :] -- posted by Jessa M

Banging Banana Bread

I LOVE banana bread. So, I have made it for many years. I am always looking to get the flavor just perfect! I use "old" bananas. The upscale produce shop won't sell them, so I usually call and see if they have any. That way I can use them right away AND they sell them to me super cheap! I usually bake around 150 mini loaves to include in my Christmas Goodies Bags. I like my recipes to have measurements for items, sizes for pans, and baking directions. So you will find all of that in this recipe that I have finally decided I have "tweeked" it right down to d-e-l-i-c-i-o-u-s. -- posted by Tantric1

Simple Whole Wheat Bread

Skillet Soda Bread (America's Test Kitchen)

This is your basic soda bread, with no frills. It is exceptional fresh from the oven and makes excellent toast for days after, slathered with butter and strawberry jam. I eat it for every meal until it's gone.
You can bake this on a greased or parchment-lined baking sheet if you don't have a cast iron skillet, but the crust won't be as crunchy.

Banana Apple Bread (From the Sweet Melissa Bakery)

This is an excellent, moist banana bread by itself but the addition of caramelized brown sugar apples make this truly outstanding. You can add nuts or currants. Be sure to use super-ripe bananas (the blacker the better). The banana bread keeps well wrapped in plastic wrap at room temperature for up to 3 days. For longer storage, freeze well wrapped in plastic wrap and then aluminum foil for up to 3 weeks. Defrost (still wrapped) at room temperature. ALSO, CONSUME AT YOUR OWN RISK - HIGHLY ADDICTIVE! LOL. The next time I make it I will try to measure and edit accordingly.
Blueberry Muffins à La Alton Brown (Good Eats on Food Net

We tried this recipe because I was craving having blueberry streusel scones (# 244646) again. However, I am trying to cut down on my saturated fat and cholesterol, so we looked for something to fill that baked goods craving without blowing my daily saturated fat limit, and Alton Brown is often a decent place to start. We used whole wheat pastry flour with some flax meal thrown in for good measure, frozen blueberries allowed to thaw slightly, and a silicon muffin tin. They were somehow dense and light at the same time, and had an interesting buttermilk note (we assume from the yogurt). Also, Alton says muffins are really more like pancakes than cupcakes! -- posted by Michelle from Central Time

Big Sur Bakery Hide Bread Recipe

I lived in Big Sur off and on for about 10 years and my heart is still there. I adapted this recipe from 101 Cookbooks. Heidi Swanson says,
"The Big Sur Bakery sits back off California's famous Highway 1 a bit, nestled next to a gas station. It's owners, three of them, abandoned the Los Angeles restaurant scene years ago, determined to turn a property with a lackluster track record into something special. They set their sights on a house-turned-abandoned-restaurant, eventually wrangling it into what is now the beloved Big Sur Bakery.
This is a recipe from Terry "Hide" Prince, one of the bakery's earliest friends. If you can imagine a dense, seed and grain-packed English muffin, you're in the ballpark. Rather than using salt, Terry gathers kelp from the coast and uses it to season the bread.
The key to enjoying these delicious little breads (and I can't emphasize this enough), is splitting them open, toasting them until they are deeply golden, then slathering them generously with butter (or drizzling with olive oil or honey). Then sprinkle with a bit more salt. Blissful buttery crunchiness."
Terry Hyde, the creator of the recipe says, "There's no need to be intimidated by making my bread. It was born out of a sea voyage, from Hawaii to New Zealand, because it was easier than yeast bread. I used my friend, Jay's, Irish soda bread recipe, only I added my own super foods. Amaranth, millet, and quinoa all have the 8 essential amino acids for building muscle, flax seeds for digestion, and kelp or seaweed for vitamins and minerals. I keep a 5 gallon pickle bucket with my dry bread mix, adding whatever sounds healthy. You can substitute water for milk or beer, and spelt for a gluton free bread." There have been mixed reviews on this, so please realize this is a dense bread and please do toast it! -- posted by Sharon123

Moist Banana Bread

The secret ingredient here is pudding! Either banana flavoured or vanilla pudding works great. It makes the banana bread moist. Another tip is use bananas that are so overripe that they are all completely brown. This will add better flavour to the loaf. This recipe is all about the techniques which will help keep the loaf moist. Covering the loaf with foil while baking is necessary, and will ensure a moist top that isn't crusty. I've added some cake flour to the mix because Canadian wheat has alot of gluten and I wanted to make the bread dense but will bake evenly. Feel free to experiment with adding different types of nuts or sweeteners to make this receipe your own. So far I've baked this loaf in flimsy aluminum pans and glass pans, and the disposable aluminum works better than the glass pan. I've also made mini acorn-shaped bread in Williams-Sonoma decorative pan as well as the W-S bundt pan and had impressive results with pretty designs. If anyone tries it in a silicone pan, I'd love to hear how it turns out. Enjoy! -- posted by Full Tummy

Apricot Bread, a Beautiful Loaf, Abm

Looks good, tastes great! Wonderful for special occasions. Looks sooo nice when sliced. Great for ham sandwiches. I found this online, don't know where. This was very slow rising in the abm but rose well after being shaped. I cut the dough in two, added dried fruit to half and twisted them together, used a large bread pan. It would be appealing if baked in a tube pan. Used both diced apricots and cranberries for a second loaf. Don't soak fruit, it gets too soft and wet to look pretty. Prep time includes time in ABM. -- posted by Jezski

Blizzard Bread

We have a lot of snow days in N.E. Pennsylvania. So, we sprinkle a little snow on our French Toast too. Well, not real snow, but confectionery sugar is a great substitute. When snow is in the forecast, you have a hard time finding bread, eggs, and milk on grocery shelves. Get them early! Why? Because along with snowy days...comes comfort food - French Toast for breakfast. It's also a favorite for sleepovers. The kids always request Blizzard Bread for breakfast, even if it's 100 degrees outside. -- posted by ChaCha3

A bread machine takes the guesswork out of making bread. But it is hard to find a delicious & nutritious 100% White Whole Wheat Bread recipe for a bread machine. This recipe works great on the popular Panasonic SD-YD250 Bread Bakery. This recipe is for 1-1/2 lb loaf (size M).
Buttermilk and Sour Cherry Scones for Afternoon Tea and Picnics

A delightful and EASY scone recipe that is perfect for a proper afternoon tea or to take on a picnic. Dried sour cherries are sensational and give a deep essence of cherry flavour to these scones, whilst the buttermilk makes them light and airy. This is a casual eating scone, easy to rustle up, and is perfect when eaten fresh from the oven with butter and maybe some cherry jam and cream too! If taking on a picnic, wrap the scone in a clean tea towel to keep it warm and pack the butter and jam separately. Makes one large scone, which is marked to split into wedges when served. -- posted by French Tart

Wheat Sandwich Bread from Amish Starter

I had an abundance of Amish friendship bread starter and wanted to try something different than the sickly-sweet quick bread recipes out there. I saw JanuaryBride's Sourdough French Bread - ABM (Amish Bread starter) at http://www.recipezaar.com/sourdough-french-bread-abm-amish-bread-starter-375789 and decided to adapt it a bit.

I have a Cuisinart SM-70 stand mixer, so my directions reflect this. Refer to your mixer's manual for the speed and duration to use for bread dough.

You can also use a bread machine on the French Bread setting. Follow your machine's instructions.

Keep in mind that the bulk of that prep time is idle time when your dough is rising and you can do other things. :)

NOTE: The starter ingredients at the beginning are here for nutritional info only. The system doesn't know the nutritional info for starter, so I gave approximate measurements of the starter's ingredients). -- posted by Gardenwife

Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener

Brother Juniper's Cajun Pepper Bread

Delicious bread from Brother Juniper's Bread Book. Excellent when paired with savory foods or just by itself (with butter, of course). I often use half the amount of Tabasco for those with a little milder mouths, because the full amount is SPICY! As noted, I use the Trader Joe's frozen pepper medley, but you can also use fresh, cans/jars or even pimientos.
Mrs. Schneider's Date Nut Bread

I'm putting it here for safe keeping as I have worn out several recipe cards for this one. While the ingredients may be the same as other breads, the preparation method is totally different. It will make 2 - 3 standard sized loaves and sometimes it may take a bit longer than the stated bake time. Prep time includes cooling time before baking. Cooking time includes the boiling and cooling time during prep. -- posted by Aubergine910

Only thing I would say is keep an eye on it when in oven as it didn't take as long as recipe said. -- posted by Jamie Oliver wannabe
