Anyday Holiday Coffee

I made this this morning and enjoyed it so much I just had to share. It's very simple and diabetic friendly. I have a single cup brewer that I love but you may make a big pot full and serve as many as you like. Time given is for a single cup coffee maker. -- posted by Annacia

Journey's End Vegetable Soup

There was a restaurant in Mundelein IL that had the greatest vegetable soup in the world. Sadly it closed down recently leaving no place to get this soup. Fortunately they gave their customers a copy of the recipe before they closed. This is the recipe... -- posted by -d

Moist Pumpkin Spice Bread

This may be the most delicious pumpkin bread recipe I've ever baked. I came up with this for my brother's 18th birthday and it has been devoured in just two days. I believe the applesauce in the recipe is what makes it so ooey-gooey moist. It's also low in fat as the applesauce replaces the oil that would normally be used. The recipe makes two loaves, one of which can be frozen or given to a friend. -- posted by EntirelyEmily

Strawberry Frozen Yoghurt

This recipe is a perfect with only four simple ingredients. One thing that you may want to watch out for in this recipe is the sweetness. Plain yogurt can be a bit tart so you will want to test the mixture for sweetness before freezing it. -- posted by Mazvii

'pizza' Shepherds Pie - Weight Watchers

I call this pizza shepherds pie because the first time I made it my husband said the cheese made it taste like pizza. The consistancy of the meat mixture should be thick, but not dry. 6 Weight Watchers points per serving if using the leanest minced beef available and low fat Mozerella. -- posted by angellore

Sunday's Best Rice Pudding (Traditional Style)

In memory of my dad who used to take me to Pickwick Restaurant for rice pudding every Sunday afternoon. This is the closest recipe I could find to that which was served at the restaurant: Creamy with a hint of cinnamon and nutmeg. Delicious whether served warm or cold with a sprinkle of cinnamon on top. Also, if prepared ahead, rice pudding makes a quick breakfast in case you're too much in a hurry to make oatmeal. -- posted by Rachael Potter

Bean and Smoked Sausage Chowder

A simple and easy to make hearty soup recipe I tossed together one rainy day with just a few things I happened to have on hand. It rivals many soups made from scratch in both flavor and satisfaction...yet, even a young child can combine these ingredients and follow the simple directions and perhaps amaze their Mom or Dad at mealtime. Ready in just 20 to 25 minutes...easy clean-up too! ...just one pot!
Hearty enough to be a main dish too. -- posted by Chef #408832

Veggie Nachos

These nachos are full of protein and fiber and look beautiful to boot. Take it easy on the cheese and make it low-fat. This recipe heats the chips so make use of the chips remaining in the bottom of various bags. My sister and I made this live on my podcast. It's vegetarian and easy and I was surprised there wasn't one like this on 'zaar. This version is fairly quick for two and can be made as spicy as you like by adding jalapenos or hot salsa.
No Meat Lasagna Just for Aaron

Seasoned Chicken in a Light Wine Sauce

This is a healthy way to add a little flavor to chicken without all the fat, and just a little salt. You can substitute or add any vegetable that sautes well if you don't like onions, but the mushrooms are a must. Pairs well with steamed veggies and/or rice. You could add a little cornstarch slurry while the liquid reduces to help thicken the sauce, but I like to keep it on the light side. Using a lid on the non-stick skillet is a key step to the recipe. It keeps the Chicken from drying out. -- posted by Cyril

This is one of my favorites! My family absolutely loves it.
Slow Cooker Big Beef Stew

I took this out of the Fix It and Forget it Cookbook. Although, I did make a few changes. I liked this stew because of the peppers in it. I felt this was a little different than the traditional beef stew.
You may want to add a little more salt and pepper while the stew is cooking to suit your own tastes.
I served this over buttered parsley noodles.
I hope you enjoy this as much as we did. -- posted by Bellablue

Cranberry Orange Holiday Relish

There are many versions of this basic recipe. This little riff adds a little extra color and crunch to an already delightful side dish that is rich in both flavor and fiber. Add different fruits, and it becomes yet another kind of salad, beautiful in its ruby-redness, especially on a bed of greens. Note: the toasted pecans are nice added the day before serving, but as time goes on, they become less crunchy - but still add a great flavor. This relish can be held in the refrig for a week or so, and can be frozen as well. -- posted by MaryRich

I never follow recipe's.. so this was one that after a lot of taste testing, I stuck with. Everyone loves it!! It's a great appetizer for the holidays as it is so light & not filling. But I have made these for my kids for a summer brunch or lunch also. I have never tried a lower fat version because I despise fat free mayonnaise & cream cheese but let me know if you try something & it works.

Sarasota's Creamy Maple Brandy Salad Dressing

This is a wonderful easy dressing. Serve over some greens (romaine, spinach or arugula) with fall fruits, apples, pears, cranberries, nuts, caramelized onions, even blackberries or raspberries are great with this and crumble some blue cheese, gorgorzola, goat cheese, grated fontina or swiss - the combinations are endless. It is just a great dressing. My favorite salad happens to be; candied walnuts, romaine, blackberries, roasted pears, and caramelized onions. It doesn't get much better. You could add some grilled pork or grilled chicken and make a very hearty salad for dinner. -- posted by SarasotaCook

Hot Shot Cinnamon Overload

Sometimes I just want a strong cinnamon coffee with no other flavors added this was made for just such a time. This is goodness in it’s purest form but, of course, the amount of liqueur is easily adjustable to personal taste, if you like less or more, just make it as you like it. I prefer it hot but it would be quite adaptable to being made as an iced coffee also. Please note that any cinnamon liqueur that you like will work just fine. -- posted by Annacia

Butternut Squash With Roasted Apples, Pears and Onion Soup

A fun fall soup. Roasting of the vegetables and fruits to me just really makes this the best. A drizzle of maple syrup, chopped candied walnuts, cranberries, and a dollop of creme fraiche finishes this over the top. What a wonderful Holiday soup, but also just a good comfort soup. I make this often with grilled cheese. Smoked gouda, multi grain bread and maple smoked bacon make for an amazing sandwich. I often make a bunch of these walnuts for the garnish and store them in the freezer in a baggie to use throughout the Holiday season. They are really easy and don't take any time. -- posted by SarasotaCook

Sarasota's White Cheddar Cheese Soup

A flavorful soup with simple ingredients. This can be lunch, an easy dinner, or serve this with grilled brats/onions and a side of broccoli apple slaw (my favorite). Just add store bought broccoli slaw in a bag, add some apples, pears and your own dressing and you have a nice dinner. There are also many great recipes on here for slaw of every kind. I think originally this was adapted from Cuisine at Home or Cooking Light, but I have added my touches which I enjoy. Now when I make this, it is usually for friends, so there may be 8 or more of us, so I always make a big pot. You can easily scale this down and just make half, but it is so good that I go ahead and make this and enjoy it throughout the week for a nice snack, lunch or a quick dinner. Why not have a big pot of soup in the refrigerator you can just heat up for a quick bite when. -- posted by SarasotaCook
