Our Favorite Lasagna

This recipe comes from the Good Housekeeping Illustrated Cookbook and it is the best lasagna recipe we have tried. I don't have any trouble finding the page in my cookbook because it has a few stains and looks worn compared to the other pages. The recipe doubles very easily, I use a 9x13x2-inch glass cake pan and it is always filled to the top. Definitely have to have some good crusty bread to sop up the bit of sauce that is left in the pan! -- posted by Lauralie41

Spinach Lasagne

This recipe is simple but requires a bit of preparation. However, it goes pretty quickly if you cook the pasta and prepare the filling while the tomato sauce simmers. I’ve made it for years but never measured anything until my non-cooking son asked for the recipe. I measured as I went along and gave him this, which turned out very well even in his hands. The dish goes nicely with steamed, crisp asparagus or tomato wedges drizzled with high quality olive oil and sprinkled with balsamic. -- posted by Chef #568984

Simply Perfect American-Style Lasagne

I got the basis for this recipe (proportions) off a Barilla box years ago. I've tweaked it, adding elements of other lasagne I've liked, until my husband told me it was perfect. Then I started taking it to pitch-ins, and was told by many that it was the best they'd ever had, too!

I think it melds elements of good, American-style lasagne: spicy meat, good cheeses, a rich blend of spices, and spinach.

The key is the sauces and cheese blend. Get as many different Italian cheese in this as you can! I've used a mozzarella/sun-dried tomato/basil blend for the mozzarella, and that was excellent, too. -- posted by Tracey Rollison

Quick Cheese Lasagna

I haven't made this yet, wanted to post it so I won't lose this recipe, it was developed by Cook's Illustrated: Using no–boil lasagna noodles and a quick homemade tomato sauce—or even a good store–bought sauce—makes lasagna an easy weeknight meal. If you prefer a jarred sauce, we recommend Patsy's Marinara, Bertolli's Tomato and Basil Pasta Sauce, or Barilla Marinara. You'll need about two 24– to 26–ounce jars. -- posted by Pi-E

Jesse's Signature Lasagna

For years, my grandmother has made her special lasagna for occasions. Since she doesn't get to do this as much anymore, I figured I should invent my own signature lasagna to fill in the void. I experimented with this recipe all fall; I think this is a treat to be reckoned with! The different steps all take time and planning, but can be done over the course of a few days. This is totally worth the wait. -- posted by JAKunlimited

Lasagne

Good classic meat lasagne. Best and easiest when made over a 2 day period. Make meat sauce and refrigerate overnight so flavors can meld. It doesn't seem like such a chore to make it when you do it in 2 days. Mixing the eggs in the cheese mixture helps hold the cheese together nicely. Good to make a double recipe and freeze one for later before baking. Make sure sauce is simmered long enough to make it thick, not watery, and that way when you slice it, it will stay together. I love this for dinner parties, and taking to new mothers. -- posted by chickpea

Easy, Healthy Vegetarian Lasagna

Simple to make and very tasty. It freezes amazingly well (largely because of how juicy it is...see Note below). One thing to note about this recipe is that the primary flavor is of fresh, delicious vegetables. I highly recommend not skimping on: salt, pepper, or garlic unless you are going to doctor it with your own spices. I sometimes throw in some dried oregano or some red pepper flakes.

Salmon and Broccoli Lasagna

Both salmon and broccoli are such healthy foods and this sounds like a wonderful spin on a lasagna that uses both of them. Also, the use of fat free milk and lower fat cheese can help reduce the fat found in traditionally Italian lasagna.
Man Friendly Lasagna

This Lasagna is nearly fat free. It is also cholesterol free, and by using whole wheat noodles it is extremely healthy and satisfying. Everyone absolutely loves it. I don't tell them it is a vegan lasagna until they are headed for their 3rd helping. To see photos and get more of my vegan recipes see my blog at http://worldwidevegan.blogspot.com

TVP is textured vegetable protein. It is highly nutritious, has twice the protein of beef, and it has no fat or cholesterol. It absorbs the flavors of the other ingredients in the recipe while offering the texture and appeal of ground meat. Packaged TVP granules are available in health food stores, grocery stores and online.

Tofu comes in many varieties but for this recipe use firm, water packed tofu. -- posted by Wildjoy

Lentil & Sausage Lasagne

Adapted substantially from a recipe in a recent issue of the Australian magazine ‘New Idea’. Instructions have been included for freezing this dish in a 10-cup capacity ovenproof and freezer-proof dish. If you are choosing to freeze all or some of this dish, you may find it more convenient to use several smaller dishes. If you are doing this, remember to adjust the cooking times: obviously, smaller portions will cook more quickly. -- posted by bluemoon downunder

Chicken & Spinach Fettuccine Bake

This fettucine dish is baked with garlic bread on top. For quicker preparation, use a packet of garlic bread. But if you've a little more time, then you'll probably want to make your own, which gives you so much more choice of what bread you use, how much garlic you add to it and if you want to add other herbs as well. The recipe also has instructions for heating and re-serving. I've included the instructions for a single 10-cup capacity dish, but if you are wanting to freeze smaller quantities in several smaller dishes, remember to adjust the cooking times appropriately. I've adapted this recipe substantially from one I found in a recent issue of the Australian magazine 'New Idea'. I've also recently posted recipes for a Greek Lamb & Yoghurt Pasta Bake and a Lentil & Sausage Lasagne (also a baked dish), both adapted from the same source, and with the same detailed instructions for freezing the recipe. -- posted by bluemoon downunder

Hidden Delights Lasagna

I created this myself after looking at a few recipes... my attempt was to get more veggies and soy and make it lower calorie at the same time. I was happy with how this turned out... especially the cheese mixture. No one will know it is soy! The end result isn't as rich as the original version but still quite filling. If you aren't worried about calories you could double the mozzarella and use sausage with the ground beef. You will get 1-2 veggie servings per slice (depending on how much you count as a serving).
I made this in 2 8x8 pans... make one now and freeze one for later. Or half the recipe. Also this could be made vegetarian by replacing the meat with a veggie alternative and made lactose free if you omit the parmesan and replace the mozzarella with rice cheese. -- posted by Chef Tweaker

World's Best Lasagna

This was actually my mom's recipe, but to this day, I haven't had lasagna that has been able to match this one. We very rarely had leftovers when she made this. But, if you do get leftovers, it's even better the next day after reheating. This particular recipe calls for cottage cheese, but you can certainly use the same amount of ricotta cheese if you like. But, I will tell you, once you taste it, you won't even tell it's cottage cheese that you're eating. My mom just always used it because it's healthier, at least that what she says, but I like it better anyway because it doesn't have that "dry" texture ricotta has. But it's up to you. Also, if you have a little extra mozzarella cheese, you can add some of that to the top after you remove the foil and before putting it back in the oven, if you wish. I hope you enjoy it!! -- posted by chef 1009339

Lasagna Squisito (Exquisite Lasagna!)

This is the culmination of my lasagna experimentation... I didn't see another recipe here that was quite like mine, so I decided to share! I usually make my meat sauce with ground turkey, but it is good with ground beef, too, or "meatball mix," which consists of ground beef, pork and veal. You can also cut the amount of meat in the sauce by one half and supplement spinach, if you like. It's best to experiment with the seasoning levels as you cook, based upon your preferences... I add lots of garlic to mine, and if I am using beef or a beef mixture, I toss a splash of red wine in the sauce. I also make my layers very thin. Oh, and this freezes and reheats well, if you are the make-ahead type! -- posted by Foxgirl

Vegetarian Skillet Lasagna

I developed this recipe from a Pillsbury Hamburger recipe book, adapting it to make without meat. This is a fantastic recipe because it only uses one skillet so you will have minimal clean up and keep the kitchen cooler. Note: This calls for lasagna noodles, but I have made it with elbow noodles if you would prefer, but they tend to cook less evenly and take longer. -- posted by zephanie

Seafood Lasagna Alfredo

This looks like it should be horribly difficult, but it's really simple. If you are a beginner cook and REALLY want to impress people, this is the recipe for you. I use fresh garlic and garlic powder - feel free to cut back on either. We actually prefer this made with surimi (fake crab meat) rather than fresh crab, but either is fine. Make sure the crab is picked over for shells. Feel free to toss in some scallops too - just saute them for a few minutes in some butter first. Substitute 1 box of chopped broccoli, defrosted, for the spinach, if desired, or omit entirely. -- posted by MJaz

Vegetable Lasagna

Use a mandolin slicer to get all the veggies paper thin; that way they'll melt into one another, and this whole mixture will become homogenized goodness.

Don't let the bechamel intimidate you. This French Mother Sauce is an alchemy of very simple ingredients that become a tremendous sauce through the proper application of heat. Just don't blast either the flour mixture, or the milk, with heat higher than medium, and you should be good. TAKE YOUR TIME, and don't pump up the heat to speed it up. Your patience will be rewarded with a luscious velvety sauce. -- posted by Adam Hayek - Chef #1348906

Ski's Easy Cincinnati Lasagna

Delicious cheesy-buttery blend kicked up a notch with the familiar spice of Cincinnati chili reminds how great a combination pasta and chili are. Having left the Cincinnati area one of the craves I continue to run into is for the taste of Goldstar or Skyline chili.
My Standard Lasagna

This is my basic easy lasagna. I either use homemade sauce or a really good quality store bought brand. There are four types of cheese in this recipe. If you like things spicy, by all means add a bit of crushed red pepper to the sauce or use spicy sausage. If I am adding sausage, I prefer to use mild turkey sausage in this, but it tastes really good with just ground beef too. -- posted by HeatherFeather

Boxing Day Festive Roast Pumpkin and Cheese Lasagne - Lasagna

Roasted pumpkin and creamy cheese lasagne (lasagna); a Boxing Day special - although I have made this for Christmas Eve too! This is a wonderful addition to the festive vegetarian table, but is ALSO hugely popular with meat eaters. This is my adapted version of Nigella Lawson's pumpkin lasagne; I have changed a few of the methods and added (as well as omitted) a few ingredients! Boxing day is the day after Christmas day, also called St Stephen’s Day – the 26th December; it is a public holiday in the UK and most Commonwealth countries……….generally a turkey curry day, or a turkey-free day, one of the two! Serve this with a large bowl of salad and some crusty bread for mopping up the delicious sauce. -- posted by French Tart

Beef & Pork Ragu Lasagne (Lasagna) from Fine Cooking

This is a PHENOMENAL recipe from Fine Cooking. I have made it for company and everyone raves over it. It's labor intensive but SO worth it. It either makes one huge pan or two smaller ones. I have found that making the ragu the night before makes the preparation a lot easier.

Two minor substitutions I have made: (1) I use the already prepared ground chuck and ground pork from the meat section of my grocery store. (2) I have always used either regular dried lasagna noodles or no-boil noodles. -- posted by CFRP

This is the lasagna recipe my mom always made. It's a family favorite. There are instructions in this recipe if you want to make it ahead of time and keep in the fridge before baking. -- posted by andrea.e

Best Ever Red & White Sauce Lasagna

This is the absolute best tasting lasagna I have ever had. The red sauce offers sweetness and the white sauce gives it a warm creaminess. I came up with this recipe for my sister who doesn't eat pork, but have made it many times with traditional pork Italian sausage. Either way its yummy, hearty and sure to impress. -- posted by Shamrockjulie
