			<description>Any time I see beef on sale, I think chili.  This recipe comes together very easily and can be modified to fit your needs.  I wrote an hour cook time but as long as you do not allow the chili to thicken too much and stick to the bottom of the pot, you can simmer for as long as necessary.  If the chili does start to stick, add a cup of water at a time until it loosens.  I served with a steam in the bag portion of Spanish rice and it was delicious! When I made this I miscalculated the time, so I put in the fridge and the next day added 1 can tomatoes w/green chilies and some leftover WW cheese and cooked for 30 minutes or so. Although delicious this is a time consuming recipe -- the original recipe says 2 1/ 2 hours but I took 3 hours to make this plus the another 1/2 hour to reheat the next day --- so be prepared! 			<description>I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like. 			<description>This is a great recipe that a friend of mine has been bringing to office pot-lucks for years.  I just got the recipe from him and made it myself.  It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.

  I used whole wheat spaghetti for the pasta, and regular olive oil, you could use what you like.
  I was hoping to have some of this left over for the next day but I ate it all that night.  I put down 2-4 servings but I ate it in one.  Sorry!!

This is a combination of two recipes, one of which I altered.  The first is from this site, (#16399, Quinoa-Toasted).  The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes.  We thought it tasted a bit like sushi and loved it!  Feel free to add more heat, but this had enough for our family as we've got wee ones.
