			<title>Rootin' Tootin' Roasted Roots - Roasted Root Vegetables in Paper</title>

			<description>An easy to throw together recipe that I made to accompany several meals over the Festive period this year. The trick for these roasted roots is to cook them en papillote (in a paper parcel) for the first 30 minutes - almost oven steaming them, before opening up the paper and allowing them to brown and go crunchy and crispy around the edges! Sprinkle them with sea salt, cayenne pepper and freshly ground black pepper before serving them in the paper on a flat plate. You can also make smaller individual parcels for full dining impact!! Use whatever root vegetables you have to hand. The vegetables listed in this recipe are the ones that I used for the last few times of cooking this dish, but I can see possibilities of many more veggies, especially when they are in season. You can reduce the fat content in this recipe by adding just a teaspoon of olive oil and putting the vegetables in a zip-lock bag with the oil, then give it all a good shake, I went FULL fat throughout Christmas and the New Year period! 			<title>Drop Dead Gorgeous - Garlic Studded Roast Leg of Lamb</title>

			<description>This is the name my daughter came up with when I served this roast leg of lamb for Boxing Day this Christmas holiday! We love roast leg of lamb and this was a variation on my normal way of roasting it. I would have studded the leg with fresh rosemary as well as garlic, but I could not find it under the snow and heavy frost, another time! I am spoilt for choice with fresh lamb in France (and when I go home to the UK), but when I cannot get hold of fresh local lamb, I buy frozen New Zealand or Australian leg of lamb - which is always excellent. One tip I would like to share is ALWAYS allow the meat to rest for at least 10 minutes before carving - it allows all the juices to run back into the lamb and makes it moist, tender and easier to carve. Serve the slices of meat on hot dinner plates with lashings of piping hot gravy and you're done! Roast leg of lamb will go nicely with roast, mashed of gratin potatoes and a medley of fresh seasonal vegetables, especially green beans. Save the roasting juices to make your gravy - allowing them to cool slightly before skimming off the fat that will rise to the surface. What can be simpler and tastier, hunks of homemade or crusty farmhouse style bread topped with mature Cheddar cheese, a smidge of mustard and Worcestershire sauce for those who desire an extra kick! This is NOT really a recipe; it is a basic method for making a super tasty and nutritious fast food dish. There is even a Cheese on Toast Day celebrated in the UK - mark your calendars now, the last Thursday in April has been set aside for this comforting supper treat. I lived on cheese on toast whilst I was a student, as I am sure most students do nowadays! You can use other British cheeses, but I find the best cheese without a doubt, is a good mature farmhouse cheddar. Make sure your bread is thickly sliced and you have your plates ready and waiting to receive the molten cheesy snack - pull up a chair by the fireside in the winter and enjoy your 5-minute culinary efforts! (This is an all year around snack I hasten to add.) 			<description>This is an incredibly simple, practical, yet very stylish way to cook a whole chicken. The finished dish is juicy and tender and the sweet mushroom juices make a wonderful gravy. Marsala is an Italian fortified sweet wine, if you prefer you can use sweet sherry instead. Serve with buttery mashed potatoes and steamed seasonal veggies. Any leftovers will make delicious and freezable pot pies. Shred the meat from the bones and stir back into the mushroom and Marsala gravy. Spoon into small pie dishes or large ramekins and top with a puff pasty lid (use sheet of ready rolled) bake at 375F until puffed, golden and piping hot.

She recently passed away and printed her famous chili recipe on the back of her funeral program. (You can see a photo of that in here! Check out the photos for this recipe)  I've had chili all over Texas and the South - I even made both recipes from &amp;quot;Throwdown with Bobby Flay&amp;quot; (both were VERY good) but I will tell you - hands down - THIS WOMAN'S RECIPE IS THE BEST CHILI I HAVE EVER HAD IN MY WHOLE LIFE!  And when I say &amp;quot;THE BEST&amp;quot; I mean: &amp;quot;I am SO STUFFED I might explode - but I can't STOP eating this chili because it tastes so AMAZING&amp;quot;.  Ok?  I tried to put it in the freezer - and ended up taking it out 10 minutes later and eating it again.  Today I had it for breakfast on eggs, and lunch and dinner!  Can't wait to have more tomorrow! VERY URGENT/IMPORTANT: THE WHOLE SECRET OF THE RECIPE IS IN THE SCHWARTZ BRAND CHILI MIX!!!!!!!!!!!!!!!  Use any other brand and it will only be a 2-3 star recipe!     If you are in the USA the &amp;quot;Schwartz&amp;quot; brand chili mix in this recipe can be ordered online from  www.Distantbrits.co.uk or any other British food sites. PLEASE ONLY use &amp;quot;Schwartz&amp;quot; brand if you want this to come out a 5 STAR recipe- if you use any other brand, like &amp;quot;El Paso&amp;quot;, &amp;quot;Chichi's&amp;quot; &amp;quot;Ortega&amp;quot; or &amp;quot;McCormicks&amp;quot; it will be disappointing because those 4 brands I just named are nothing but salt and chemicals with very little spices. If you can't find the British &amp;quot;Schwartz&amp;quot; brand, send the lady at distantbrits.co.uk an email requesting it.  Tell her which kind of heat you want., &amp;quot;McCormicks&amp;quot; brand in the USA is very disappointing - even the &amp;quot;hot&amp;quot;, it's not spicy and the taste really is missing something important.  I even tried adding more cumin, and fresh Jalepeno's but McCormicks - it's just NOT AS GOOD as Schwartz, so - if using McCormick's- please know - you've been forwarned: it's not going to be a 5 star chili. If you're in the UK - you should have no problem finding this product.

ALSO - careful when ordered because the recipe calls for 4 Schwartz chili.  That means chili MIX - NOT 4 bottles of chili powder!!!!  (I say be careful because Schwartz also makes chili powder, and you don't need 4 bottles of chili POWDER for this LOL!)

I used the HOT Chili Mix, but Wendy specifed &amp;quot;Mild&amp;quot;.  Get whatever heat you are comfortable with. Be FOREWARNED: If ordering the &amp;quot;Hot&amp;quot; - just because it's from England doesn't mean it's not as hot as you think.  While it is the most delish chili mix, It is 5 ALARM  Texas hot!!!!!  And this is coming from a gal who drinks &amp;quot;Franks Red Hot&amp;quot; straight out of the bottle whenever I have a craving! The mild is &amp;quot;mild&amp;quot; and also extremely delish.

Menier's Chocolate is VERY hard to find if you live in the USA.  I could only find 1 place online that sells it (Distantbrits.co.uk) Otherwise, use a VERY DARK (Swiss is preffered). When you open the Menier - the actual chocolate says &amp;quot;Nestle&amp;quot;, so I guess you could get bittersweet or semi-sweet Nestle.  Just don't use Hershey (ugh!)

When it smells ready - eat it.  You don't HAVE to simmer for 3 hours, as directed by Wendy. (Personally, I couldn't wait that long, it smelled too good)  It even tastes amazing room temp hours later!

I promise you - if you make this recipe EXACTLY as is - with NO SUBSTITUTIONS ON THE CHILI MIX (you CAN make substitutions on the chocolate)- Your tastebuds will think you've died and gone to heaven.  I can see why Wendy would leave such a fantastic Chili recipe on the back of her funeral program - people were probably begging her for years for this recipe. 

When I make this for the next Texas chili cook-off - this WILL win 1st place - and I will give Wendy Richard all the credit since it is her recipe.

Huh!  Who'd have thunk the best recipe for Chili would come from ENGLAND!?????!!!!!!

			<description>A taste of my childhood, my grandmother made the most amazing Egg Custard, as we used to call it! In the absence of lard, or if you are vegetarian, use a white vegetable cooking fat, but NOT margarine, as the white fat gives the pastry its crispness. Serve this tart at room temperature with cream or just &amp;quot;naked&amp;quot;!  You can buy these delectable little tarts in most British bakeries, but they always taste better when they have been made at home. This old-fashioned custard tart needs a thick, wobbly filling, so I've used a round tin with sloping sides and a rim, which gives a good depth. As the island is neither part of the EU or the UK, it is a popular 'duty-free' destination.
 Jersey has a rich and varied history, with several wars and invasion attempts over many centuries.The island was part of the Duchy of Normandy in the 10th century and became part of the Anglo-Norman realm in 1066.

The island's history is reflected in the French road names and typical Jersey surnames, as well as in the many historical French artefacts and monuments that can be found around the island.
This is a traditional recipe, and no self-respecting Jersey woman would be without her earthenware bean crock, or casserole, in which to cook one of the most filling and tasty of all the island's recipes. So popular was this bean dish that every farmhouse had its bundles of drying French beans hanging from the rafters waiting to be shelled in the long winter evenings. Town folk used to hang their beans in the garage. For some Islanders this was a traditional supper dish; others had it for Sunday breakfast. Mr. Heinz is supposed to have taken the idea for his famous baked beans from the bean crock of Jersey emigrants in Canada. Prep time includes the overnight soaking for the beans. However, this recipe has not had very good press over recent years - drab tinned brands and indifferent, greasy soups served in some lower end restaurants have given it a bad culinary name! I hope to redress that with this authentic recipe from Windsor in Berkshire, England - home to the Royal Windsor Castle. Reportedly from the restaurant across from the Kew 
The Maids in Waiting (I think that is the name) in KEW right across the street from the Royal Botanical Gardens ..they also make these wonderful little cakes called Maids in Waiting!!
