Macaroni & Torgo

I am Torgo. Not long ago, The Master asked for some macaroni & cheese and I made the boxed stuff. "By Manos," he said, "I'll have your hand for this!" Big mistake. I quelled his anger by whipping this up on the fly. This makes a nice-sized bowl for one, or two servings with other edibles. -- posted by Torgo, Esq.

Baked Macaroni and Cheese With Tomatoes

The use of lowfat milk in this recipe makes it a lot healthier than the standard variety. The recipe only uses about half the box of macaroni, but you can make the whole box if anyone in your family prefers plain pasta. Serve it with a carrot and apple salad with pecans. -- posted by lawmama

Earon's Hawaiian Plate Lunch Salad

Named in honor of my brother-in-law Earon, a native Hawaiian, who LOVES macaroni salad. He turned me on to it a few years back, and now I'm addicted too! This is my version, tweaked with some ranch dressing mix to pop the flavor just a bit. I like it simple, but feel free to add peas or celery or whatever else you like! -- posted by puppitypup

The very best homemade baked macaroni and cheese recipe ever! My picky son loves mac and cheese and this recipe is his favorite!!
Baked Macaroni With Three Cheeses

This macaroni and cheese features a creamy sauce and crisp topping. A great macaroni and cheese requires perfect melding of the pasta and the cheese sauce. To get that, you'll need to ignore conventional wisdom about cooking pasta until just tender (al dente). To help the cheese sauce stick to the pasta, the macaroni is cooked until just beyond al dente, which makes it more absorbent and starchier. This recipe calls for a 3-quart casserole dish, but multiple smaller baking dishes could be used. I clipped this recipe from a newspaper. -- posted by Lainey6605

Better Macaroni and Cheese from a Box!

A little tweak on the cooking preparation makes a cheap boxed macaroni and cheese taste better and creamier and also healthier for you since there's more milk and cheese and less margarine/butter. And to top it all off, it's almost as fast as the regular way, it's just more of a technique than an actual recipe change. No more runny cheesy orange watery sauce!
I made this up myself when I got sick of spending more money for the "better" macaroni and cheese for the kids, you know the kind with the "gooey" packet of cheese sauce. -- posted by Sandy 0225

Macaroni Salad

Excellent creamy pasta side dish with crunch from celery and apple chunks. Make this dish the night before to accompany a picnic lunch.

When packing for a picnic lunch I find it easy to store the salad in a large Ziploc bag, it leaves more room in the cooler for other goodies this way.

I left out salt on this and let ea. person add their own salt and extra pepper at the table. Also, I freshly grate my nutmeg and use NY State Cheddar. This is a starting point for mac and cheese. Some embellish it with tomato, other cheeses, onion, green or sweet red peppers, buttered bread crumbs or cracker topping etc. I adapted it from "Now....Your'e Cooking" website. -- posted by Hootenanny

Reata's Best Damn Macaroni and Cheese Ever

This is the recipe that caused me to buy the Reata's cookbook. Boy, was it worth it! I've loved homemade mac and cheese since forever, but finding one that my family would enjoy hadn't worked until now. I've tried recipes from all sorts of cookbooks: Martha Stewart's, Better Home and Gardens, and too many others to list. I'd given up hope until I found this one. This is a keeper! My daughter and I did have trouble finding asiago cheese in our small West Texas town, so she drove to San Antonio and bought some for me. That is trust and love. -- posted by LoriLee in TX

Macaroni 'n' Cheese for Two

From The Best of Country Cooking Cookbook, c. 2003. I love mac 'n cheese, but with just the hubby and I, there is always way too much. I love that this recipe is just for two - though I'm sure it could be doubled or tripled to feed more.
Corn and Black Bean Macaroni Salad - Tex Mex

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

To me, this recipe ALWAYS represents summer. My mom would make this salad for our family only in the summer months. Everyone who tasted it wanted the recipe. NOTE: Prep time, does not include overnight chilling. The flavors are best when you allow them to chill overnight, but it is not absolutely necessary. -- posted by Omegachowz

Raw Macaroni and Cheese

This isn't the creamiest, best tasting macaroni and cheese out there. This is a yummy, super quick casserole, that my family adores. My kids love the pepperoni variation the best. It is easily adapted for your pickiest eater. I have also increased the quantity easily. I add a bit more butter, and noodles. Just be sure the milk comes up to top of noodles. I've never had to increase time. It does rise and could boil over if there isn't enough room in pan. -- posted by Ezri_B

Baked Macaroni & Cheese

Here's a classic mac & cheese recipe given to me by my (would-have-been) mother-in-law many years ago. It has become a family favorite, and I get asked to make it nearly every Thanksgiving and Christmas. It makes enough to feed a small army!

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

Leftovers can be easily cut into squares, wrapped with wax paper and frozen. Then just take one out and nuke it for a great side to go with a sandwich. -- posted by Chef #1299589

Three Cheese Macaroni

This was a happy accident based on the cheeses I had in fridge today. You can save yourself a pan to wash by boiling the macaroni in the same saucier you build the sauce in (I would recommend 3 qt. for the amounts I used, it worked perfectly!). This made 6 good side dish servings, probably 4 main dish servings. Topping this with slices of a good tomato would be excellent as well. -- posted by CraftScout

This is a nice change from the typical burger or parmesan topped spaghetti sauce. Easy, tasty and the kids like it! I also like that it is a one dish meal. You can use any small pasta in place of the wheat. I use home canned tomato puree but you can replace that with two 28 ounce cans of tomato sauce and 2 cups of water.
