Macaroni & Cheese - Easy and Cheesy

If you are among the many who can't seem to get the hang of making a roux for a bechamel sauce, then this is the Mac & Cheese recipe for you. Couldn't be easier, and just as good as the old standby method. I have made a few alterations to the ingredients, but the method is the same. I believe it came from Southern Living, but I can never be sure :). Note: I use Old Cheddar. Sharp would work well also. -- posted by Diana #2

Spam and Macaroni Hash

This is definitely not the kind of recipe I usually post on Zaar. In fact, some people who read this recipe may think I am out of my cotton pickin' mind and wonder where I get the nerve to call my self a cook at all...lol. But, I love this stuff. First of all, you have to be a spam lover to even consider this. I have loved spam since I was younger. I don't eat it often, now that I am an adult, but there are still times that I find myself wanting it. This was one of those times. I was having a lazy day and didn't feel much like cooking and this is the recipe that resulted. I was very much in the mood for spam and for fast results. My husband even liked this and he isn't much of a spam fan most of the time! So, if you are thinking about trying this recipe, you have to love spam, ok? You can add two beaten eggs after it it all together and then put some spaghetti sauce over the top and bake it as well. I did that once but I like it better just plain when I am in a hurry!!! the cooking time of 10-12 min. is for cooking the macaroni. But if you decide to do the oven one with the beaten eggs, you will cook it 30-40 min. or until the eggs are set and well done. -- posted by OceanLuvinGranny

Macaroni Goodness

I let my husband name this dish. Of all the things I cook he says this is one of his favorites. I certainly don't mind making it because it's so good and so easy. I guess I can stop trying to be "gourmet" if this is what he really wants to eat. :-) This is good comfort food and is easy for a quick weeknight meal. The quantities listed below are approximate since I just eyeball most of the stuff. If I don't have the family size box of mac and cheese on hand I just use 2 regular boxes. I also like to use the frozen veggies that you can microwave right in the bag. -- posted by RayMakMama

Macaroni W/ Squash, Salami in Ricotta Tomato Sauce

From Food and Wine Quick from Scratch Pasta Cookbook. The ricotta with sun dried tomatoes really makes this dish special. Any meat could be subbed for the salami, i.e. chicken, bacon, etc (or skip the meat alltogether). I added the parm with the ricotta and took off the heat. Different, but really good; not a "saucy" pasta, but really nice. -- posted by Vicki in CT

Cheesy Baked Penne

This is another take on macaroni and cheese. I like to use some cheddar for a little added classic macaroni and cheese flavor. I also put in different vegetables (broccoli, cauliflower or carrots) to vary the dish. A great comfort meal for cold days.

Deliciously creamy comfort food with a twist, this is the best Macaroni and Cheese I've ever tasted, and my family demands it frequently! Recipe can be halved, and should be, if you value your arteries! :) For a very easy way to incorporate some vegetables, steam some broccoli over your pasta-cooking water, and stir it into the casserole or serve alongside - but it's more likely to get eaten if it's already IN the casserole! -- posted by Lizzymommy

Or you can make the effort and use the stove top, both work. Easy to make, and the surprise is Vegetables, so you get something healthy snuck in too.
Baked Macaroni and Cheese

I love, love, love cheese! Who doesn't? I would imagine only someone allergic! This is packed full of sharp cheddar cheese and has a rich flavor. Not your creamy style mac & cheese found in the frozen food isle or dried pasta meals. This is a baked mac & cheese that is very hearty. I usually serve with ketchup on the side (I think that is a Pennsylvania thing....I have found that is up to your own taste preference). I also serve with a vegetable on the side. Sometimes I cook up a ham steak and serve the mac & cheese as a side dish, but it is usually so popular I just serve it as a meal by itself. -- posted by HeathersArk

Pasta e Fagioli, pasta fazool, or any way you want to say it! Regardless of how you pronounce it, this is a soup made with love. And, unlike so many others, this is not a copycat from any restaurant chains. I've made this rustic Italian soup a hearty dish by adding sausage.
My Dad's Ultimate Macaroni and Tomatoes

I am originally from the Canadian east coast, and like most people from that area, I grew up with classic macaroni and tomatoes. Sound plain? Well, it can be, but not the way my Dad makes it! Even if you think this doesn't sound that exciting, give it a try- I know you will love it! Kids love this too...

*** Edit for the person who mentioned they left out the summer savory because they don't like mint flavouring in their food- it is NOT minty, it is another herb similar to sage and thyme actually. Hope that helps! However, since I know it is hard to find in some areas, it isn't necessary, it's just that I love it, hehe. -- posted by Lady Clare

This isn't the creamiest, best tasting macaroni and cheese out there. This is a yummy, super quick casserole, that my family adores. My kids love the pepperoni variation the best. It is easily adapted for your pickiest eater. I have also increased the quantity easily. I add a bit more butter, and noodles. Just be sure the milk comes up to top of noodles. I've never had to increase time. It does rise and could boil over if there isn't enough room in pan. -- posted by Ezri_B

This is quick and easy to prepare- a great meal with salad in the summer or with more substantial sides in the winter.
Buffalo Chicken Mac-N-Cheese

Buffalo chicken meets mac-n-cheese. How can you possibly go wrong? I threw this together for the end-of-the-year potluck lunch at the high school where I teach, and it went over really well.

Addendum: Like the first two reviewers, I also used Ken's. Worked great! However, I have to disagree with one reviewer about the celery. I've made this with and without the celery, and its inclusion really makes a world of difference in terms of texture. -- posted by Cluich

Johnny Jalapeno's 'jumpin Wagon Wheels!' Macaroni and Cheese

This is a firey dish chock full of goodies. Legend tells that Yankee Doodle went to town in a wagon pulled by his young horse. On his way, one of the wheels to the wagon hit a large rock in the road. Well, the wheel went a flyin! He brought it back to the wagon and there he was, stuck on the side of the road and no way to fix his wagon. Just then, the McDaniel gang rode up, and in their traditional 'Robin Hood' ways, set out to fix the wheel, while Johnny fixed up a down-home campfire lunch. After this delicious meal, Yankee Doodle was so elated by Johnny's wonderful dish, he gave Johnny the wagon so he could travel with his recipes and cookware in a more formidable fashion. The only gift Johnny could reciprocate with was a beautiful injun feather he had found along his many trails. Well, Yankee doodle got up on his pony, stuck the feather in his hat and said "Thanks for the macaroni!" For an all-out exlusive dish, spoon some of Recipe #395692 over top! -- posted by 2Bleu

This is a rich and delicious macaroni & cheese from Bon Appétit Magazine (May 2009). You can use any combination of good melting cheeses such as Gruyere, Emmentaler, Fontina, or cheddar. It works with kale, chard, or spinach. If you omit the greens, this also makes a great traditional mac & cheese. If you want a creamier macaroni & cheese, just add a little more milk until you get the desired consistency. -- posted by blucoat

American Goulash

Growing up in Boston, I never knew that this 50's "once-a-week-at-home dinner" and "once-a-week-at-school lunch" was a regional dish! I still make this probably once every 2 weeks. Easy, cheap and comfort food all rolled into one huge pot!
Vegan Spaghetti Casserole

This is a nice change from the typical burger or parmesan topped spaghetti sauce. Easy, tasty and the kids like it! I also like that it is a one dish meal. You can use any small pasta in place of the wheat. I use home canned tomato puree but you can replace that with two 28 ounce cans of tomato sauce and 2 cups of water. Serve on top or on the side with frozen corn that is steamed. -- posted by RussianMama

When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now.

This is different from most mac and cheese with tomatoes recipes, as it does not use flour or milk. It's good for potluck suppers. My boyfriend made this with no low-fat adjustments, and it was pretty darn good. I personally would have used low-fat cheese and yogurt instead of sour cream.
Dairy Free Chicken Pasta Primavera (Gluten Free)

I created this and it is delicious and dairy free! Pasta primavera is an Italian-American dish that consists of pasta and vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. The dish may contain almost any kind of vegetable, but cooks tend to stick to firm, crisp vegetables, such as broccoli, carrots, peas, onions and green bell peppers, with tomatoes. Pasta primavera is usually highlighted by light flavors, aromatic herbs and bright colors ('primavera' meaning the season of spring). Classic pasta primavera is based on a soffritto of garlic, olive oil, and Parmesan cheese, but versions based on a heavier cream or Alfredo sauce are also common. Though recipes for cold pasta primavera may be found, they are best classified as antipasti, or appetizers.
Pastas served with this dish are typically smaller shapes, such as penne, farfalle, rigatoni and fusilli. If using longer types of pasta, such as spaghetti or fettuccine, the vegetables are normally sliced in thin strips to match the shape of the noodles. -- posted by UmmBinat

I ran out of ideas one night and got tired of hearing "I don't know" when I asked my family what they wanted for dinner. So when I told them I was making this, I got funny looks. Let's just say there was very little left for leftovers that night. :) The only suggestion I got was my son wanted to try this with broccoli next time. Sure helps stretch the budget.
Garbanzo/Chickpea Pumpkin Macaroni Casserole

Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking. Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond "cheese", skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! I make it when I know I have a busy week ahead and can easily get about 4 meals out of it for just me. -- posted by the80srule

Gourmet Butternut Squash Macaroni & Cheese

My sister clipped this from the Bucks County Courier Times because this foodie loves squash and mac n cheese, so the two of them together = heaven. I'm posting the recipe here for safekeeping although I'm probably going to tweak it according to size and budget (do you know what Locatelli cheese is...? I'll probably just use cheddar. And I'm too lazy to cut a piece of squash, I'm using that frozen pureed squash!) And I'll probably skip the panko topping or at least do it un-buttered to save on calories. -- posted by the80srule

Snobahr's Baked Mac 'n Cheese

My family adores this, and it reheats quite nicely. This is *NOT* a low-fat recipe. I use cream when I have it on-hand, or a combination of cream and milk. I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. I also use whatever small pasta I have onhand - macaroni, rotini, shells, etc. -- posted by SnoBahr

Gourmet Mac & Cheese W/ Lots of Variations

Tweak the spices to your liking. I like it also without the paprika, but garnished with a sprig of fresh rosemary.

Also try making it cheesier or adding or substituting cheeses. I've made an excellent one with brie. I've also used canned tuna instead of chicken for a quicker version.

I have also experimented with different seasonings and rubs for the chicken or tuna, including celery salt, cayenne, rosemary, cumin, etc.

Changing the pasta also greatly changes the flavor as well, in my opinion.

Can be made with dried spices but I recommend fresh!

To go above and beyond, you can also bake the finished casserole with a breadcrumb or other topping. -- posted by GoldsmithLissa

Beef Pronto

An easy, economical and tasty meal. My mother would make this for our family of 12 quite often and we always looked forward to it. I always add more tarragon. In place of the cheddar cheese, I melt Velveeta on top. Quick, easy and delicious. Enjoy! -- posted by Penelope P

This classic comfort food dish goes upscale with the tasty addition of shrimp, crab, cream and fresh basil. For a change, I have added half a bag of steamed baby spinach to the mixture -- posted by Abby Girl
