Johnny Jalapeno's 'jumpin Wagon Wheels!' Macaroni and Cheese

This is a firey dish chock full of goodies. Legend tells that Yankee Doodle went to town in a wagon pulled by his young horse. On his way, one of the wheels to the wagon hit a large rock in the road. Well, the wheel went a flyin! He brought it back to the wagon and there he was, stuck on the side of the road and no way to fix his wagon. Just then, the McDaniel gang rode up, and in their traditional 'Robin Hood' ways, set out to fix the wheel, while Johnny fixed up a down-home campfire lunch. After this delicious meal, Yankee Doodle was so elated by Johnny's wonderful dish, he gave Johnny the wagon so he could travel with his recipes and cookware in a more formidable fashion. The only gift Johnny could reciprocate with was a beautiful injun feather he had found along his many trails. Well, Yankee doodle got up on his pony, stuck the feather in his hat and said "Thanks for the macaroni!" For an all-out exlusive dish, spoon some of Recipe #395692 over top! -- posted by 2Bleu

Total comfort food! This yummy dish is made by my grandmother at every family get together. You can use mild or spicy sausage, but I find that even though I love spicy foods, mild sausage works best in this recipe.
Macaroni With Creamy Sun-Dried Tomato and Pancetta Sauce

This is the weeknight version of my Recipe#368572- same great flavour but quicker and easier to make. If you use another type of pasta, you may need 2 cups as macaroni is small and dense. Also feel free to substitute bacon for the pancetta- it works just as well. -- posted by Shuzbud

Mexican Noodle Bake (Meatless)

I got this recipe from a cooking group on freezer meals. It comes from the book Frozen Assets Lite & Easy by Deborah Taylor Hough. My family loves this, and bonus, if you make it ahead and freeze it, it is a very fast meal on a night you don't feel like cooking! This recipe makes a lot, so I usually freeze half and bake half when I make it. We had this again last night for dinner and I wanted to post it so everyone else could enjoy it too! This is good served with sour cream and salad. -- posted by Quiltingqueen

“ World's Best” Macaroni & Cheese

We tasted this in Seattle at the Pike Place Market in the Beecher’s store. It is the best! I had to get their recipe and I found it on the internet; I’m so happy to post it here in Zaar. It is a very rich creamy comfort food. I do not have Beecher’s cheese so I improvised with what is available and it came out as tasty as the original. Serve this with a crisp salad.
Double-Dutch Mac & Cheese With Chard

This is a rich and delicious macaroni & cheese from Bon Appétit Magazine (May 2009). You can use any combination of good melting cheeses such as Gruyere, Emmentaler, Fontina, or cheddar. It works with kale, chard, or spinach. If you omit the greens, this also makes a great traditional mac & cheese. If you want a creamier macaroni & cheese, just add a little more milk until you get the desired consistency. -- posted by blucoat

Beef and Noodle Bake

Very easy and yummy dinner that you can customize in your own way or just do it like the recipe shows! I've used more meat and/or noodles if I wanted it to be thicker, I would put about 1.5 lbs of meat and 2+ cups of macaroni.
I've added a small can of sliced mushrooms and a handful or 2 of chopped onions to change it up a bit and that tasted great as well! You can also try different kinds of spaghetti sauces! You can also use ground turkey for this! -- posted by Chef #1353947

Mimi's American Chop Suey

When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now.
Marilyn's Mac and Cheese With Tomatoes

This is different from most mac and cheese with tomatoes recipes, as it does not use flour or milk. It's good for potluck suppers. My boyfriend made this with no low-fat adjustments, and it was pretty darn good. I personally would have used low-fat cheese and yogurt instead of sour cream. This was from the October 2009 edition of Country Living magazine. It's really easy to make too. -- posted by Kumquat the Cat's friend

Dairy Free Chicken Pasta Primavera (Gluten Free)

I created this and it is delicious and dairy free! Pasta primavera is an Italian-American dish that consists of pasta and vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. The dish may contain almost any kind of vegetable, but cooks tend to stick to firm, crisp vegetables, such as broccoli, carrots, peas, onions and green bell peppers, with tomatoes. Pasta primavera is usually highlighted by light flavors, aromatic herbs and bright colors ('primavera' meaning the season of spring). Classic pasta primavera is based on a soffritto of garlic, olive oil, and Parmesan cheese, but versions based on a heavier cream or Alfredo sauce are also common. Though recipes for cold pasta primavera may be found, they are best classified as antipasti, or appetizers.
Pastas served with this dish are typically smaller shapes, such as penne, farfalle, rigatoni and fusilli. If using longer types of pasta, such as spaghetti or fettuccine, the vegetables are normally sliced in thin strips to match the shape of the noodles. -- posted by UmmBinat

I ran out of ideas one night and got tired of hearing "I don't know" when I asked my family what they wanted for dinner. So when I told them I was making this, I got funny looks. Let's just say there was very little left for leftovers that night. :) The only suggestion I got was my son wanted to try this with broccoli next time. Sure helps stretch the budget. If you plan it right(with supermarket sales), this meal would cost you roughly $5. to make. -- posted by Chef #409295

Garbanzo/Chickpea Pumpkin Macaroni Casserole

Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking. Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond "cheese", skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! I make it when I know I have a busy week ahead and can easily get about 4 meals out of it for just me. -- posted by the80srule

My sister clipped this from the Bucks County Courier Times because this foodie loves squash and mac n cheese, so the two of them together = heaven. I'm posting the recipe here for safekeeping although I'm probably going to tweak it according to size and budget (do you know what Locatelli cheese is...? I'll probably just use cheddar. And I'm too lazy to cut a piece of squash, I'm using that frozen pureed squash!) And I'll probably skip the panko topping or at least do it un-buttered to save on calories. -- posted by the80srule

Snobahr's Baked Mac 'n Cheese

My family adores this, and it reheats quite nicely. This is *NOT* a low-fat recipe. I use cream when I have it on-hand, or a combination of cream and milk. I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. I also use whatever small pasta I have onhand - macaroni, rotini, shells, etc. -- posted by SnoBahr

Gourmet Mac & Cheese W/ Lots of Variations

Tweak the spices to your liking. I like it also without the paprika, but garnished with a sprig of fresh rosemary.

Also try making it cheesier or adding or substituting cheeses. I've made an excellent one with brie. I've also used canned tuna instead of chicken for a quicker version.

I have also experimented with different seasonings and rubs for the chicken or tuna, including celery salt, cayenne, rosemary, cumin, etc.

Changing the pasta also greatly changes the flavor as well, in my opinion.

Can be made with dried spices but I recommend fresh!

To go above and beyond, you can also bake the finished casserole with a breadcrumb or other topping. -- posted by GoldsmithLissa

Jamie Oliver Mac N Cheese

Jamie: ''Mac 'n' cheese' is a classic American pasta dish - everyone loves it. Sometimes it's done so badly in the convenience area, it's almost become famous for being horrible, but when you do it properly, trust me, it's an absolute killer. Feel free to use any tubular pasta you want. I've made this dish my own by lightening it with sweet tomatoes and given it some crunch with delicious breadcrumbs. Just you wait till you try it!

This dish isn't going to win any prizes in the nutrition department, but you can, and should, balance it with a nice salad. If you only have it once in a while as a special treat it'll do you no harm."

Haven't tried it yet but it sounds so good so posted for safe keeping.. Preperation and cooking time are estimates -- posted by mamaDlicious

Best Vegan Mac and Cheese in the Entire World

Originally posted on VegWeb.com by beep_i_am_a_robot. I haven't made this myself yet, but I want to get the nutritional breakdown. I plan to tweek by reducing the salt content (using Bragg's amino rather than soy and leaving out the salt), reducing the fat and increasing the tofu (several reviewers on VegWeb have done this and liked it). This is the original recipe, including typing and grammatical mistakes. Serving size is estimated. -- posted by I hate coming up with handles :)

Hearty Mac & Cheese

This was adapted from an Ellie Krieger recipe. I made a few of my own tweaks. A friend of mine challenged me to find a mac & cheese recipe that wouldn’t leave us feeling like we ate our entire body weight in fattening dairy. I know it sounds strange to use squash as the base for the cheese sauce, but it actually worked. The dish doesn’t taste like squash. It’s nice and creamy with a crispy, browned top. If you’re looking for a light alternative to many people’s favorite comfort food, give this a try. -- posted by Diet It Up
