Clean Eggs Benedict

For spinach lovers. This recipe comes from Clean Eating magazine. Uses portobello mushrooms instead of ham or bacon. Am also posting their smoked salmon recipe, feel free to sub that in for the mushrooms if you wish. -- posted by WiGal

Roast Eggplant With Walnuts

This wonderful appetizer, when served with warm pita, marinated strips of red pepper & tasty olives, can be a meal unto itself... or tucked into a pita with the aforementioned for lunch, a very nice lunch. Per the Times: "This Turkish recipe is from Paula Wolfert's upcoming book, "The Slow Mediterranean Kitchen," which will be published in October by Wiley. Wolfert notes that the slower the grilling, the smokier the flavor of the eggplant. She thanks Dr. Ayse Baysal for sharing the recipe."
Note: When large eggplants are roasted whole, you may notice black juices seeping out of the skin. If this happens, immediately slit the eggplant on one side and drain on a slanted board in the sink. -- posted by Buster's friend

Cinnamon-Swirl Pumpkin Rolls

This recipe is from King Arthur Flour and is a delicious fall twist on cinnamon buns. And, they are somewhat healthier because they contain some whole wheat flour (and a vegetable!). The dough is very easy to handle and rises up beautifully. These would also be good with a cream cheese icing.
Dough requires a total of at least 2 1/2 hour rising time (if you use liquid milk instead of dry, you may require slightly longer rising time). You can make the dough the day before. Just let them rise for about 30 minutes, wrap them up, and refrigerate overnight. In the morning, let them rise a bit more and warm up, unwrap and then bake. -- posted by blucoat

Beer Cheese Fried Potatoes

When my cousin, Claudia, visits from Arizona I HAVE to make these for her. The addition of beer in them makes them extra creamy and soft on the inside.I know it's not a lot of beer and I've been known to drink the rest of the bottle just so it doesn't go to waste-makes for a nice nap after breakfast LOL. I love these potatoes and always cook two eggs, over medium, and put right on top of the potatoes and mix it all together. YUM!! I aslo add cream cheese to my baked potatoes as well and it's just as good. Hope you enjoy these as much as we do. -- posted by msjill111

Berry Yoghurt Smoothie

I got this recipe from Sarah Owen's book "The Top 100 juices", published by Lifetime Distributers, Castle Hill, Australia.
Sarah Owen says "The super-nutrient vitamin C is needed for more than 300 diferent processes in the body, but it is easily wiped out by smoking, pollution and stress. Found in abundance in berries, vitamin C and other antioxidants help to quash the damaging free radicals that are associated with many illnesses."
The original recipe calls for natural bio yoghurt to be used, but any yoghurt will do.
This makes a large amount of smoothie, and if you're making it just for yourself, I'ld recommend halving it.
I hope you enjoy this healthy - but still tasty - smoothie :) -- posted by TALIA #3

Easy Homemade Low-Fat Yogurt

Cooking/prep time does not include cooling or setting time. Don't use non-fat or flavored yogurt as the starter. I use Dannon plain and it works great. Save some to use as your starter next time.

I've made this several times now and love it. Easy, nutritious and has no ingredients that I can't spell. You can flavor it by adding a spoonful of jam, apple butter, or honey. The gelatin is useful if you like your yogurt more firm. That's useful if you add runnier sweetening like apple butter. -- posted by CheyenneAnn

Hummus and Vegetable Focaccia Sandwich

The convenience store in my dorm has sandwiches similar to this one every once in a while, and on my life they are the best vegetarian sandwiches I've ever had! Even the meat-lovers I know live and die for these things. They're very easy to make, and are great served at any temperature -- so you can easily stick one in the fridge for devouring later. -- posted by Alexander Mar

Zucchini Pizza Crust

Just ran across this solution to the gf pizza crust dilemma and am SO excited to try this! Not exactly "traditional" in terms of flavor, but if you're ok with that and are with me- pizza's all about the toppings (esp veggies), it's worth a try :-) I've lightened it up a bit, but am sure that any gf cheese would work well.

Kolobok (kuh-luh-bOck) is a dough ball from a Russian fairy tale. These fried gems are fun for kids, tasty calcium for adults.
Lemon Soup--Almost an Aperitif

Now that summer is past, I have found this most refreshing welcoming drink for next year (or even now). It is served in a champagne glass when you arrive at the Levy-East Home (a bed and breakfast in Natchitoshes, Louisiana on the Cane River). Don't let the name fool you...it reminds me of a liquified lemon icebox pie. It can even be used as an opening course. It is very refreshing and good. -- posted by Bayou Andy

Easy Baked Ziti

This must be easy, since I make it almost every week. I replace regular pasta, with whole grain, such as Tinkiyada Brown Rice pasta, or Barilla plus.
Quinoa - Risotto Style 1

This is my own recipe. I like it, as it's a fast way to eat well and feel great... Quinoa, poblano peppers and parmesan ! Don't use kraft powder. Buy some real parmesan or, even better, Belgioioso 'American Grana' if you're in the USA -- by far one of the best "parmesan" style cheeses you can find in the states. The fact that they admit it's American, gets you over a psychological barrier, and it's just a great product. You'll become addicted...eat it with fruit : figs, mango, guava... -- posted by Asd;MRS-NYC

Sensational Rice Custard Pudding

This is a very old recipe that was my husband's grandmother's own creation. She was well known for her cooking and baking. I have been making this for over 40 years and always get raving reviews. Once, a cousin gifted me with a very large glass bowl that had 8 smaller serving dishes. She included a note that this was to become 'the family dinners rice custard pudding bowl' as everyone requested that I make it for all our gatherings! For a creamier custard pudding, use Aborio rice or a medium grain rice; I prefer the short Aborio rice. Never use instant rice.

You may wish to use less sugar as this is a very sweet custard pudding, due to the condensed milk. I hope this becomes a favorite of your family too! -- posted by Debaylady

Strawberry Pudding

***Updated to fix all the kinks, tastes much better now*** I expanded on a simple blancmange recipe and adapted it to make it a special strawberry creation...since I now have a ton of strawberry Nesquik and want to be creative with it. And it turned out very yummy. :D It looks like it took a lot of effort but it didn't. This would probably make an awesome kid pleaser as well.
NOTE: Cooking time does not include cooling/setting time. Vegans and the lactose-intolerant-- if you use soymilk, rice milk, almond milk, etc. this will not set. You may want to try a tofu-and-blender approach instead. -- posted by the80srule

Pancakes for One or Two

This is another recipe I found in the 1998 Taste of Home Annual Recipes. It was sent in to them by Ann Schenk of Winnett, Montana. She added two teapoons of wheat germ when the dry ingredients were mixed together, but I left it out. And they seemed to come out just fine. This recipe make enough for one, but if you make them just a bit smaller you could get enough for two. And serve eggs and sausage on the side for a much heartier breakfast or even dinner.Serve with margarine and syrup, if desired.
Grilled Pineapple, Creamy Nut Date Cheese on Cinnamon Crackers

This is quick and easy, and a make ahead wonder appetizer. Simple store bought crackers - now I like "Cinnamon Wheat Thins," but there are many other brands. Last time I went to the store, there were 4 different brands, and Whole Foods and other specialty stores carry even more. A creamy cream cheese and nut date filling and topped with sweet grilled pineapple.
Mango Milk Crush

A really refreshing and different way to eat mango. I was served this drink on the beach in Rio one time and turned my nose up at it (I'd asked for mango juice and don't really like milk drinks) but I was pleasantly surprised to find how well the sweet creamy milk went down with the loose crushed slippery mango. Don't think of this as a drink though do serve it in a glass. This is more like eating peaches and cream.
Easy Pizza Pancakes (Thick Crepe Style)

Some of my friends from Rio will remember when the heavy rain flooded our apartment and we spent hours trying to scoop up and drain the water away. None of us had eaten so half way through, ankle deep in water (!), I devised these lovely little pizzas to give us all a break and a laugh as I'm flipping the pancakes!. I think they taste so good because the 'base' is fresh. Feel free to add extra toppings as you wish but I think they're great plain. Don't expect to be able to pick these up, you need to eat them with a knife and fork. -- posted by robd16

Sunday's Best Rice Pudding (Traditional Style)

In memory of my dad who used to take me to Pickwick Restaurant for rice pudding every Sunday afternoon. This is the closest recipe I could find to that which was served at the restaurant: Creamy with a hint of cinnamon and nutmeg.
Mrs. Peltz's Onion Flat Rolls (Pletzlach)

Found this gem in The New York Times - I plan to make them this week. Oh, my DF, a lovely woman of Polish descent who has kept her Brooklyn accent after being gone so many years, will be soooo surprised! The article noted - Like the bialy, a form of pletzel from Bialystok, her tzibele pletzel (onion pletzel) is studded with onions and poppy seeds, but it is flatter than the bialy and made from a sweet dough formed into a round, rolled out very thin and then pricked with a fork. I'm using 2 tespoons yeast for my first making & will increase to the 2 tablespoons yeast the recipe calls for. -- posted by Buster's friend

Next-Day Baked Cinnamon-Apple French Toast

We made this for Christmas morning this year (2009). My mother found the recipe in her local paper -- The Daily Breeze in Redondo Beach, CA. When I made it, I added in not just the apples, but all the liquid -- as a result the dish was more like bread pudding than french toast ... it was still great, and I'd make it that way again. But if you'd like a drier texture, don't add the apple liquid. I also swapped out the cinnamon and nutmeg for two teaspoons of Recipe #45672 . -- posted by KLHquilts

Just about everybody in our family likes cottage cheese. It's on our tables as a side dish at most meals. Mom came up with a way to "fancy it up" for Sunday dinner. It became one of Grandson Lee's favorite salads.
My Mom's Jamaican Style Carrot Juice

I've looked up several carrot juice recipes and none were quite the same as the one my mother used to make for us growing up. It's most popular in the Caribbean around the holidays and can double as an adult beverage with the addition of your favorite alcohol (namely rum or guinness). It has a milk base with spices like vanilla and nutmeg, so it's definitely not a carrot juice for those looking for health, but hey, there are carrots involved!

Obviously you may need to double, triple or quadruple your recipe to make enough for several people, but I chose to explain it in relation to the blender's capacity, since a regular blender can't hold a 5 pound bag of carrots. -- posted by PunzeePuss

Make Your Own Single-Serve Vanilla Yogurt

Although it lacks the portability of something like Yoplait, Dannon, Stoneyfield Farms, etc. it's a good alternative if you like a cup of yogurt with breakfast. Most are 6 oz instead of a full cup, so I decided to use that measurement instead. Except for when I can get them really cheap or need to carry them to school or work, I think I'll use this method to make vanilla yogurt from now on.
Crock-Pot Ricotta

Make your own ricotta cheese in your crockpot! The acid you choose will affect the final flavor. Apple cider vinegar will give a sharper tang, a distinct odor, and a subtle golden color; this is probably best for savory applications. Lemon juice will give a subtler flavor and will not curdle as abruptly. For the cleanest, purest flavor, use distilled white vinegar. If you don't like or can't find the goat's milk, you can sub another quart of low-fat cow's milk. -- posted by DrGaellon

Tomato and Fetta Salad

A Greek inspired salad of fresh tomato halves, fetta cheese, olive oil and herbs. Perfect side dish for a meal, or wrapped up in a piece of flat bread it makes a great sandwich. It is absolutely essential to have good quality tomatoes for this dish. Little mini roma tomatoes are ideal, or any vine-ripened or organic fruit. -- posted by becy
